1 1/2-2 lb lean ground beef
1 Tbsp olive oil
1 large onion, chopped
2 clove garlic, minced
1 small head of cabbage, chopped
2 can(s) diced tomatoes, 14.5 oz each
1 can(s) tomato sauce, 8 oz (more if needed)
1/2 c water
1 tsp black pepper
1 tsp sea salt

Steps:

  • 1. In a large skillet, heat olive oil over medium heat.
  • 2. Add ground beef and onion and cook, stirring until ground beef is no longer pink and onion is tender.
  • 3. Add garlic and continue cooking for 1 minute.
  • 4. Add the chopped cabbage, tomatoes, tomato sauce, water, pepper, and salt.
  • 5. Bring to a boil. Cover and simmer for 20 to 30 minutes or until the cabbage is tender.
  • 6. Enjoy!

1 head of cabbage, diced how you like it.
46 oz tomato sauce or v-8 juice or tomato juice (see note)
3 lb ground beef
2 c regular rice
2 eggs
dash(es) soy sauce (about 8 shakes or so)
black pepper to taste
onion powder to taste
garlic powder to taste
4 bay leaves, dried
1 c ketchup (more to taste)

Steps:

  • 1. Start by cutting up your cabbage. You can make chunks,slices, whatever you feel like at the moment. Place it in a large sauce pan. Take half of your tomato juice or sauce, and pour it over the cabbage. Bring to a boil and then simmer for at least 15 minutes to reduce the cabbage and give you room for the porcupine balls.
  • 2. While the cabbage simmers, mix the meat ball mixture. In a large bowl, mix the ground beef,eggs,soy sauce,pepper,onion powder, garlic powder and the rice. Mush it up with your hands and blend it all very well. Form this into meatballs by rolling a palm full in your hands.
  • 3. After the cabbage is reduced and you have room in the pot, put the balls right on top of the cabbage. Add your 4 bay leaves and the rest of your tomato sauce or V-8 or tomato juice. Bring back to a boil and reduce heat and simmer for about 50 minutes to an hour. They are done when the rice if fully cooked.
  • 4. NOTES: Mom used tomato sauce. I tried them with V-8 juice and they are good too. My Mom didnt use as much sauce/juice as I do now. I added more liquid due to the fact that the rice sucks it all up. The following day, you can add more sauce and ketchup because you will find that those thirsty meat balls sucked it all up again. Either that, or you can leave them and add more ketchup on top before reheating.

5 cups shredded cabbage
1 small onion, chopped
1 carrot, chopped
1 stalk celery, chopped
2 cups hot cooked long-grain white rice

Steps:

  • Heat 2 Tbsp. dressing in large skillet on medium heat. Add sausage; cook 5 min. or until evenly browned, stirring frequently.
  • Add vegetables; cook 10 min. or until crisp-tender, stirring frequently.

1 1/2 lb lean ground beef, chicken or pork
1 Tbsp oil
1 large onion, diced
1 clove garlic, minced
1/2 c quick cooking rice
1 small cabbage, chopped
1 can(s) diced tomatoes, 28 oz
1 can(s) plain tomato sauce, 8 oz
3/4 c water
1 tsp each salt and pepper

Steps:

  • 1. In a large skillet, heat oil over medium heat. Add the ground meat and onion and cook, stirring, until ground beef is no longer pink and onion is tender. I don't use oil if I'm using beef because even the lean beef is usually fat enough without.
  • 2. Add rice and garlic to meat and continue cooking for 1 minute.
  • 3. Add tomatoes, tomato sauce, pepper, and salt.
  • 4. Add the chopped cabbage.
  • 5. Add water and bring to a boil.
  • 6. Cover and place in a slow (300 degree) oven for 2 to 3 hours. You can also pour into a slow cooker, cover and cook on low for 6-7 hours.
  • 7. Good with crusty rolls. Serves 8.

This is a wonderful old fashioned dish that I'm sure you will enjoy. My family loves stuffed cabbage rolls, but I found that it took to much time to assemble, so I came up with this.

1 head cabbage
1 1/4 lbs lean hamburger (90% lean)
3/4 cup uncooked white rice (not instant I recommend Uncle Ben's)
1 egg
2 (6 ounce) cans tomato paste
1 (15 ounce) can tomato sauce
4 tablespoons sugar
1 small sweet onion
salt & pepper

Steps:

  • Chop cabbage into pieces, par-boil until almost tender.
  • Remove, rinse with cold water.
  • Drain well.
  • Mix all of ingredients EXCEPT tomato sauce.
  • Grease casserole dish.
  • Place 1/2 can of tomato sauce on bottom of dish.
  • Spread half of cooked cabbage over sauce, then layer all of meat mixture over cabbage, cover meat with the rest of cabbage, pour rest of tomato sauce over cabbage.
  • Bake 325°F in covered dish for 1 hour 15 minutes.
  • Let stand for 15 minutes before serving.
  • This is the basic recipe--you can add more of whatever you like.
  • My mother says she used ground turkey instead of hamburger and she liked it just fine.
  • Try this old fashioned dish and feel the love.

  • 1. Using a big skillet, heat the olive oil over medium heat. Saute the onions until tender.
