These easy shortbread cookies are just 4 ingredients! They are buttery, lemony and melt in your mouth.

1/2 cup unsalted butter (softened)
1/3 cup + 1 tbsp erythritol granular
1/2 (packed) tbsp lemon zest + 1 tsp lemon juice (from 1 lemon)
2 cups superfine blanched almond flour

Steps:

  • In a large mixing bowl, add butter and erythritol. Cream together until light and fluffy. Add in lemon zest and lemon juice and mix until incorporated. Using a spatula, scrape down the sides of the mixing bowl.
  • Add in almond flour and mix in slowly until completely incorporated and a dough forms.
  • Place dough between two sheets of parchment paper. Roll out the dough until it is 3/8 inch thick. Place dough into the fridge and let it firm up for at least 30 minutes. The dough does not need to be completely chilled, just firm enough that you will be able to cut and move the cookies.
  • While waiting for the dough to chill, preheat oven to 350°F. Line a baking sheet with parchment paper.
  • After 30 minutes, remove dough from fridge. Slice into rectangles approximately 2 inches by 1.5 inches. Carefully peel cookies from parchment paper and place onto prepared baking sheet, spacing cookies about 1 inch apart. Reroll dough scraps and repeat.
  • Bake cookies about 15 minutes or until edges turn light brown.
  • Let cookies cool completely on baking sheet to let them set. Cookies will firm up as they cool. Do not remove cookies until they are set.

1/3 cup granular sugar replacement made with erythritol
1/4 teaspoon salt
1/4 cup butter, softened
1 oz cream cheese, softened (2 tablespoons)
1/2 teaspoon almond extract

Steps:

  • In food processor, place almond flour, coconut flour, sugar replacement and salt. Pulse until combined. Add butter, cream cheese and almond extract; pulse 8 to 10 times or until dough begins to come together. Remove dough; shape into flattened disk. Wrap in plastic wrap; refrigerate about 1 1/2 hours or until firm.
  • Heat oven to 350°F.
  • Place chilled dough between two pieces of parchment paper; roll into 10x8-inch rectangle, about 1/4-inch thick. Peel top piece of parchment paper off dough.
  • Cut into 8 rows by 4 rows. Place rectangles 1 inch apart on ungreased large cookie sheets. Prick with fork, if desired.
  • Bake 8 to 10 minutes or until edges are golden brown. Cool on cookie sheet 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 15 minutes.

¾ cup almond flour
3 tablespoons granular no-calorie sucralose sweetener (such as Splenda®)
1 dash salt
2 tablespoons butter, softened
1 egg white
¼ teaspoon vanilla extract

Steps:

  • Mix almond flour, sweetener, and salt together in a small bowl with a fork. Add butter, egg white, and vanilla extract; continue mixing with a fork. Place in the freezer to help it harden for 15 minutes.
  • Meanwhile, preheat the oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper or use a silicone baking mat.

6 tbsp butter
2 cups almond flour
1/3 cup granulated sweetener (splenda, ideal, swerve, etc.)
1 tsp freshly grated lemon zest

Steps:

  • 1. Melt the butter in the microwave or a small saucepan. Add the almond flour, sweetener, and lemon zest, stirring until fully combined.
  • 2. To make the cookies:
  • 3. Form dough (it will be crumbly, this is normal) into a cylinder and wrap tightly with plastic wrap to compress.
