1/2 cup granulated sugar
1/3 cup hot water
1/8 teaspoon salt
4 cups non-dairy milk
1 teaspoon vanilla extract
Dairy-free whipped topping, optional

Steps:

  • In a medium saucepan, combine the cocoa powder, sugar, water, and salt over medium heat.
  • Cook, constantly stirring until smooth and bring to a simmer.
  • Reduce heat, and stir in the milk, do not boil.
  • Remove from the heat and stir in the vanilla. Pour into mugs and serve immediately.

My favorite delicious healthy hot chocolate recipe that's both vegan and dairy free! This healthy hot chocolate recipe is made with a mix of both coconut milk + almond milk and naturally sweetened with pure maple syrup. The perfect nightcap during the chilly winter months!

1 cup light coconut milk (from the can)
1 1/2 cups unsweetened almond milk
½ teaspoon vanilla extract
2 tablespoons pure maple syrup
2 tablespoons unsweetened cocoa powder (I use Ghirardelli's 100% unsweetened cocoa powder)
Pinch of sea salt

Steps:

  • Add all ingredients to a small pot and place over medium low heat. Whisk vigorously to combine and to get rid of any lumps of cocoa. Do NOT let the hot chocolate boil or you risk burning the almond milk, which can turn the flavor into something you do not want. Simply warm in the pot until steamy, about 3-5 minutes.
  • Once hot chocolate is hot, remove from heat and pour into 2 mugs. Top with whipped cream, dairy free whipped cream, marshmallows or vegan marshmallows. Chocolate shavings or a dusting of cocoa powder on top are fun too! Enjoy!

  • Whisk the coconut milk powder, confectioners' sugar, cocoa and salt together in a large bowl until fully combined. The dry mix can be stored in an airtight container at room temperature for up to 3 months.

1/2 cup chopped dark chocolate, 70 percent or higher
2 tablespoons pure maple syrup, plus more to taste
1 tablespoon unsweetened cocoa powder
Pinch of kosher salt
1 large egg yolk

Steps:

  • In a sauce pot over medium heat, add all of the ingredients except the egg yolk and bring to a simmer while whisking constantly. When the chocolate has melted, taste for sweetness and add more maple syrup as needed.
  • Place the egg yolk in a mixing bowl and spoon in a few tablespoons of the hot chocolate. Whisk until smooth, then pour the egg mixture back into the pot while stirring constantly. Bring the hot chocolate back to a simmer, then pour into 2 mugs and serve.

4 cups milk
1 cup heavy cream
8 ounces good quality bittersweet chocolate, finely chopped
3 tablespoons sugar
4 teaspoons Austrian rum (see note) or Cognac

Steps:

  • Heat the milk in a large saucepan until almost boiling. Meanwhile, whip the cream to soft peaks. Set aside.
  • Remove milk from the heat and whisk in all but 2 teaspoons of the chocolate. Add the sugar and rum or Cognac and whisk until foamy.
  • Ladle the hot chocolate into 4 mugs, top with a large dollop of whipped cream and sprinkle with the remaining chocolate. Serve immediately.
