- In a jar with tight-fitting lid, combine the first eight ingredients. Refrigerate overnight. Just before serving, toss spinach, lettuce, mushrooms and cheeses in a large salad bowl. Shake dressing and pour over salad. Sprinkle with bacon.

I tried this at a friend's house and she gave me the recipe. I have since served it to guests and have passed along the recipe also. The ingredients sound like a strange combination, but it is so good!

- In a jar with a tight fitting lid, combine vegetable oil, red onion, sugar, vinegar, poppy seed, dried minced onion, mustard and salt. Refrigerate overnight.
- Just before serving, toss spinach, lettuce, mushrooms and cheeses in a large salad bowl.
- Shake dressing and pour over salad.
