- In a large saucepan, saute onion and garlic in oil until tender. Stir in the cumin, oregano and chili powder; saute 2 minutes longer. Add the tomato sauce, beans, broth and bay leaf., Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Stir in lime juice; simmer 10-15 minutes longer. Discard bay leaf. Add pepper sauce and pepper.

Steps:
- In a soup pot, combine the onions and garlic with the oil and salt.
- Cover and cook on medium heat for 8-10 minutes, or until the onions are soft and translucent, stirring occasionally.
- Add the celery, bell peppers, chile, oregano, thyme, cumin, and black pepper and saute for 10 minutes, stirring often.
- Add the water and tomatoes, cover and simmer until the vegies are tender, 10-15 minutes.
- Add the black-eyed peas, your choice of beans, and the barbecue sauce.
- Mix well, cover and simmer for 10 minutes.
- Add salt to taste.
- Garnish with crushed tortilla chips and sour cream on top if desired.

- Saute the carrots, celery, onion and bacon.
- Drain the beans of soak water and rinse them until they are no longer scummy.
- Put the sauted veggies and bacon into the crock pot.
- Fill the pot with water within 2 inches from the top of the crock.
- *NOTE*: Do not use anything with tomato in it if you decide to use soup broth instead of water as tomato inhibits the cooking of the beans.
- Depending on the beans it should take about 6-8 hours to cook.
- Once all the ingredients are soft, add the tomato sauce, salt and pepper. Let cook for another 1/2 hours.

- Place beans in a large saucepan or Dutch over; add water to cover by 2 in. Bring to a boil; boil for 2 minutes.
