HORSERADISH-BACON TWICE-BAKED POTATOES



Horseradish-Bacon Twice-Baked Potatoes image

5 medium russet potatoes (10 to 12 ounces each)
1 stick plus 1 tablespoon unsalted butter
1 cup sour cream
1/2 cup chopped fresh chives, plus more for topping
1/4 cup chopped fresh parsley
4 to 5 tablespoons horseradish, drained
Kosher salt and freshly ground pepper
Crumbled cooked bacon, for topping

Steps:

  • Position racks in the middle and upper third of the oven; preheat to 400 degrees F. Scrub the potatoes and dry well. Bake directly on the middle oven rack until easily pierced with a knife, 45 to 50 minutes. Remove from the oven; let cool 5 minutes.
  • One at a time, hold each potato with a kitchen towel and halve lengthwise. Scoop the flesh into a large bowl, leaving a 1/4-inch-thick shell. Discard 2 of the potato skins. Mash the flesh with 6 tablespoons butter and 3/4 cup sour cream until smooth. Stir in the chives, parsley and 2 to 3 tablespoons horseradish; season with salt and pepper. Melt the remaining 3 tablespoons butter; brush the potato skins with 1 tablespoon melted butter and season the insides with salt and pepper. Set on a baking sheet.
  • Mound the filling into the potato skins. Return to the oven on the top rack and bake until the filling starts browning and the skins are crisp, 18 to 20 minutes. Remove from the oven and drizzle with the remaining 2 tablespoons melted butter.
  • Combine the remaining 1/4 cup sour cream and 2 tablespoons horseradish in a small bowl. Top the potatoes with the horseradish cream, bacon and more chives.

4 medium sweet potatoes of similar shape
4 strips bacon
3 scallions, chopped, 2 tablespoons reserved for garnish
2 tablespoons maple syrup
4 ounces smoked Cheddar, shredded (about 1 1/4 cups)
Kosher salt and freshly ground black pepper
Sour cream, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the sweet potatoes on a foil-lined baking pan. Bake until a paring knife inserted in the center pierces easily, about 1 hour. Cool slightly.
  • Meanwhile, cook the bacon in a medium skillet over medium heat until crisp and brown, about 7 minutes. Transfer to a paper-towel lined plate to drain. Reserve 1 tablespoon of the bacon fat. Crumble bacon.
  • Halve the sweet potatoes lengthwise. Carefully scoop most of the flesh out into a bowl, leaving enough flesh in the skin so that it holds its shape. Add the bacon, bacon fat, scallions, maple syrup and 1 cup of the cheese to the sweet potato flesh. Stir together and season with salt and pepper to taste. Refill the sweet potato shells and sprinkle with the remaining cheese.
  • Place the sweet potatoes back in the oven until heated through and the cheese is melted, about 15 minutes. Top with the reserved scallions and dollops of sour cream.

2 tablespoons vegetable oil
1 1/2 teaspoons kosher (coarse) salt
1/2 cup cream cheese spread
1/4 cup butter, softened
1/3 cup milk
1 cup shredded sharp Cheddar cheese (4 oz)
6 slices bacon, crisply cooked, crumbled
2 green onions, chopped
1/2 teaspoon table salt
1/2 teaspoon pepper

Steps:

  • Heat oven to 425°F. Prick potatoes with fork; place in 1-gallon resealable food-storage plastic bag. Add oil and kosher salt; seal bag and turn to coat potatoes. Place potatoes on cookie sheet. Bake 1 hour or until tender. Cool.
  • Reduce oven temperature to 350°F. Cut thin slice off top of each potato; discard. Scoop pulp into large bowl, leaving shells intact. Add cream cheese, butter and milk to pulp in bowl; mash with potato masher or electric mixer on low speed. Stir in cheese, bacon, onions, table salt and pepper. Spoon into potato shells. Return to cookie sheet.
  • Bake 30 minutes or until thoroughly heated.

2 Russet Potatoes
4 Slices Bacon
1 handful of Broccoli
2 Minced Scallion Stalks
Hunk of Grated Cheddar Cheese
2 Cloves Garlic Smashed & Minced
Glob Sour Cream
1/2 Stick Butter
Paprika & Chili Flakes (if you want)
Dash of S & P

Steps:

  • Preheat your oven to 400. Take butter out of the fridge and let rise to room temp. Scrub the potatoes and stick them straight on the bottom oven rack for 30m. Bacon & Broccoli Prep: You'll need a pan for bacon and a small pot for the broccoli. While the potatoes are warming up, set two burners to med-high (7-8 on the dial). Fry the bacon until crispy, and crunch into bits. Drop 2/3 of the bacon In a medium mixing bowl. Reserve 1/3 for garnish. Also reserve the bacon fat! In the small pot, add enough salted water to cover the broccoli (you don't need much) and bring to a boil. Add the broccoli and cook until al dente. Shock and strain in cold water. Chop up 2/3 very finely and throw in same bowl as bacon. The remaining 1/3, cut into small florets and reserve for garnish. Grate the Cheese into the bowl, reserving a bit for garnish. Back to the Spuds: When the 30 minutes are up, puncture the potatoes 4-6 times with a fork and turn over. Puncture deep. Cook another 30m and remove from the oven. Let stand 10m so you don't burn your hands when handling. While the potatoes are cooling, add sour cream, garlic, butter, S&P, (paprika/chili flakes) grated cheddar and scallions to the pot with the broccoli and bacon bits. Cut the top 1/4 length off of the potato. Carefully scoop out the potato innards and add to your bowl of goodies. Scrape as much as you can while keeping the potato skins in tact! Add the reserved bacon fat to the bowl and stir to combine all ingredients - Basically, you are making really rich mashed potatoes here. Now, scoop the mixture back into the skins and place the stuffed spuds on a baking tray (a cookie sheet will do). Stick back in the oven and bake for 20m or until the potato stuffing starts to brown. Add the reserved broccoli, bacon and grated cheese garnish and continue to bake until melted. Remove from oven, let cool slightly and shove in mouth.

3 large potatoes, peeled and quartered
2 cups heavy cream
1 clove garlic, minced
1 stick unsalted butter, cut into cubes
Salt and freshly ground black pepper
1 cup shredded Monterey Jack cheese
1/2 cup shredded fontina cheese
1 tablespoon smoked paprika
4 slices bacon, cooked crispy and chopped
1 tablespoon chopped fresh chives

Steps:

  • Place the potatoes in a pot and cover with water. Bring to a boil and cook until the potatoes are very tender, 20 to 25 minutes.
  • In a small saucepan, combine the cream and garlic and bring to a simmer over low heat. Turn off the heat and let steep.
  • When the potatoes are done, press them through a potato ricer into a large bowl. Add the butter and slowly fold in the garlic-infused cream. Taste and add salt and pepper.
  • Preheat the oven to 350 degrees F.

Steps:

  • Line a rimmed baking sheet with a silicone baking mat or parchment paper.
  • Cook bacon in a medium nonstick skillet over medium heat until most of the fat is rendered and bacon is starting to crisp. Transfer bacon to a sieve set over a small bowl; reserve drippings.
  • Return bacon, 1 tablespoon drippings, sugar, and sesame seeds to same skillet. Cook over medium heat, stirring frequently, until sugar turns the color of milk chocolate, about 5 minutes. Transfer mixture to prepared baking sheet and use a spatula to spread out evenly; let cool. Break brittle into shards. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.

1/2 cup bacon bits (real Bacon)
1/2 cup sour cream
1/3 cup Miracle Whip or 1/3 cup salad dressing
1/2 cup sweet onion (diced very fine)
1/2 cup shredded cheddar cheese
1/2 teaspoon roasted garlic (or you can use Garlic Salt)
1 tablespoon chopped chives

  • Wrap potatoes in foil and bake in a 400* oven for 45-60 minutes. When potatoes are done, unwrap and let them cool.
  • When potatoes have completely cooled, slice them in half, and with a small spoon; gently remove the center and you should have a potato boat.

These potatoes have become one of my trademark dishes. When I have friends coming into town they frequently call ahead to request it! The best part is that you really can make them the day before and just heat them up when the time is right. However, they never make it through the night in my household! We usually eat the potato as the main dish, with a big salad for a nice little meal. However, the guys sometimes like to grill steaks and corn to serve on the side.

8 baking potatoes
olive oil
salt
6 -8 slices bacon, chopped
1/4 cup red wine
1 teaspoon minced garlic
1 cup butter
1/2 cup half-and-half (works well with whole milk)
1 cup shredded cheddar cheese (I recommend Cheddar Barrel New York Aged Reserve)
1 tablespoon onion powder
2 tablespoons fresh chives (or 2 tsp dried)
2 teaspoons dried parsley
1/2 teaspoon black pepper
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees. While warming up rinse the potatoes and vent them with a fork 6-8 times.
  • Lightly brush potatoes with olive oil and sprinkle with sea salt. Bake in the oven for 45-60 minutes, until outside is getting crispy and inside feels soft.
  • Towards the end of the potatoes baking, cook up bacon on medium heat until lightly crispy. I usually cook the bacon first and chop it after it is crispy, then returning it to the pan. Add wine and garlic. Feel free to add pepper to taste. I use the garlic from a jar but fresh works just as well. Leave on very low heat.
  • After removing potatoes from the oven, use a knife to cut an oval in the top of the potato, leaving about 1/4 inch on all sides. Scoop out potato and put into large bowl. When you are done you should have 8 potato shells.
  • Combine potato and butter. Blend with a mixer on low speed until butter melts.
  • Add milk, seasoning, 3/4 cup of the cheese and the bacon mixture. Beat on high speed until smooth. Add more seasoning if necessary to taste.
  • Spoon mixture into shells. Use the remaining cheddar cheese to top each potato and sprinkle with paprika.
  • Place potatoes on a baking sheet or dish and bake at 375 degrees for about 30 minutes, or until potato is warm and cheese on top is crispy.
  • Enjoy!

3 large sweet potatoes
1/2 cup low-fat sour cream
2 tablespoons unsalted butter
1/4 teaspoon salt
1 egg, beaten
1/4 teaspoon pepper
1/2 teaspoon granulated sugar
1/4 cup bacon, cooked, crumbled (I use Hormel's Real Bacon Pieces)
1/4 teaspoon paprika (optional)

Steps:

  • Preheat the oven to 400 degrees F.
  • Wash the sweet potatoes & spray them with a nonstick vegetable spray, then place on a baking sheet & bake for 1 hour or until done.
  • Cool the potatoes a bit, then cut them in half lengthwise & scoop out the pulp, leaving enough to make a sturdy shell.
  • In a mixing bowl, combine the potato pulp, sour cream, butter, salt, egg, pepper & sugar, mashing & mixing to combine well.

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Pierce the potatoes in a few places with a fork; place on a microwave-safe plate and microwave, turning halfway through, until tender, about 16 minutes. Set aside until cool enough to handle.

  • Slice off the top 1/4 inch of the potatoes lengthwise. Scoop the flesh from 3 potatoes into a medium bowl, leaving a 1/4-inch-thick shell. Repeat with the remaining potato but discard the flesh. Add 2 tablespoons of the reserved bacon drippings and the warmed milk to the bowl and mash with a potato masher or fork until smooth.   • One at a time, crack an egg into a ramekin or teacup, then carefully pour into each potato (it's OK if some of the egg white overflows). Transfer to the oven and bake until the whites are set, 20 to 25 minutes. Season with salt and pepper and top with more scallions and the halved bacon strips.

6 sweet potatoes
2 egg
3 tablespoons butter, unsalted
4 slices bacon
2 teaspoons dark brown sugar
1/2 teaspoon cider vinegar
1/3 cup sour cream
1 tablespoon chives
1 tablespoon maple syrup

Steps:

  • Place sweet potatoes on a foil-lined baking sheet and put in room temperature oven. Set oven to 400°F and roast until tender, 50-60 minutes. Let sit until cool enough to handle. Slice potatoes in half lengthwise. Scoop out flesh from 8 halves, leaving a 1/4"-thick layer inside skins. Place potato halves on same foil-lined baking sheet. Scoop flesh from remaining 4 halves; discard skins. Mash flesh with a whisk; add eggs and butter; whisk until mixture is smooth and slightly fluffy. Spoon or pipe filling into reserved skins. DO AHEAD: Can be made 6 hours ahead. Cover and chill. Bake potatoes until the tops are lightly puffed and golden brown, 30-35 minutes (potatoes will take longer if they've been chilled). Top potatoes with Maple Sour Cream, Candied Bacon, and minced chives.
  • Candied Bacon Bits: Cook bacon over medium heat until crisp and well rendered. Using slotted spoon, remove bacon from skillet and discard fat. Return bacon to skillet and add brown sugar and vinegar. Cook over low heat, stirring constantly until bacon is evenly coated. Transfer to plate in a single layer. Let bacon cool completely. Break up any chunks before serving.
  • Maple Sour Cream: Combine ingredients in bowl. Adjust maple syrup to taste.

4 large russet potatoes
6 slice bacon
1/4 c milk, warmed
1 c shredded cheddar cheese (4 oz.)
2 scallions, thinly sliced, plus more for topping
1 Tbsp fresh chopped parsley
4 large eggs

  • 1. Pierce he potatoes with a fork and place in microwave until tender, about 16 minutes. Set aside.
