A layered green salad with green peas, celery, bell peppers, Cheddar cheese and bacon sprinkled over all. For other variations, I have substituted or added some of my own favorite ingredients, such as: carrots, eggs, mushrooms, sprouts and seeded cucumbers.

6 cups shredded iceberg lettuce
½ cup chopped celery
½ cup chopped green bell pepper
½ cup chopped onions
½ cup frozen green peas, thawed and drained
1 ½ cups mayonnaise
2 tablespoons white sugar
2 cups shredded Cheddar cheese
1 (3 ounce) can bacon bits

Steps:

  • In a large transparent bowl, layer lettuce, celery, bell peppers, onions, peas, mayonnaise, sugar and cheese. Sprinkle bacon bits evenly over the top of the salad.
  • Cover bowl, and refrigerate for 24 hours before serving.

½ head leaf lettuce, torn
½ bunch fresh spinach, torn
1 cup sliced celery
1 cup sliced fresh mushrooms
5 hard-cooked eggs, sliced
2 cups peas
½ green bell pepper, chopped
5 green onions, sliced
2 (8 ounce) cans sliced water chestnuts, drained
1 cup mayonnaise
1 cup sour cream
2 tablespoons white sugar
1 ½ cups shredded sharp Cheddar cheese
¼ cup crumbled cooked bacon

Steps:

  • Toss together the lettuce, spinach, celery, mushrooms, eggs, peas, bell pepper, green onions, and water chestnuts in a 9x13 inch dish. Mix the mayonnaise, sour cream, and sugar in a bowl, and spread evenly over the salad to the edges of the dish. Sprinkle with Cheddar cheese, and top with bacon. Cover and refrigerate 24 hours before serving.

4 egg yolks
1 1/2 to 2 lemons
1 pint whipping cream
1 pound seedless red grapes
1 pound miniature marshmallows
2 (15 1/2-ounce) cans pineapple tidbits, drained

Steps:

  • Cook egg yolks and lemon juice, over a double boiler, while whisking constantly until slightly thickened. Cool. Whip the cream and mix with egg yolk and juice mixture. Combine grapes, marshmallows and pineapple. Fold in whipped cream mixture. Place in serving bowl and refrigerate for 24 hours.

This is a fruit salad with a cooked dressing.

1 egg, beaten
1 tablespoon lemon juice
1 ½ teaspoons butter
1 tablespoon white sugar
1 (15 ounce) can pineapple chunks - drained with juice reserved
1 tablespoon poppy seeds
½ pint heavy cream, whipped
1 (11 ounce) can mandarin orange segments, drained
1 (15.25 ounce) can fruit cocktail, drained
½ (16 ounce) package miniature marshmallows
1 banana, sliced

Steps:

  • In a medium saucepan, whisk together the egg, lemon juice, butter, sugar and 1 tablespoon of the reserved pineapple juice over low heat. Cook, whisking constantly, until mixture becomes thick. Whisk in poppy seeds. Remove from heat and chill.
  • Once dressing is cold, fold in whipped cream, pineapple, orange segments, fruit cocktail and marshmallows. Cover and refrigerate 24 hours. Just before serving, mix in the banana.

TWENTY-FOUR HOUR SPINACH SALAD



Twenty-Four Hour Spinach Salad image

Number Of Ingredients 9

1 pound fresh spinach, washed, dried, torn
1 Salt and pepper to taste
4 hard-cooked eggs, sliced
1 pound bacon, cooked, crumbled
1 head (small) iceberg lettuce, shredded
2 bermuda onions, thinly sliced
1/2 cup mayonnaise
1/2 cup miracle whip
12 ounces baby Swiss cheese, shredded

Steps:

  • Place spinach into large glass salad bowl so layers may be seen. Sprinkle with salt and pepper. Add layer of eggs, crumbled bacon, lettuce, and another sprinkle of salt and pepper. Add a layer of onions and uncooked frozen peas. Repeat process until bowl is filled. Cover and refrigerate overnight. Early in the morning of the day the salad is to be used, mix mayonnaise and Miracle Whip; spoon over top of salad. This topping should penetrate through salad. Sprinkle shredded Swiss cheese over top and refrigerate until serving time.

2 tablespoons sugar
pinch salt
4 eggs yolk
1/3 cup cream
1 cup cream whipped
2 cups pineapple chunks drained
2 cups pitted dark sweet cherries Royal Ann, drained
20 marshmallows quartered or 1 1/2 cups miniature marshmallows
1 1/2 cups almonds blanched sliced, toasted (reserve 1/2 cup)

Steps:

  • Combine sugar, salt, egg yolks, and 1/3 cup cream in a medium saucepan. Cook over low heat, stirring constantly, until mixture thickens. Cool. Stir in whipped cream. Combine pineapple chunks, cherries, marshmallows, and 1 cup almonds. Fold dressing into fruit mixture. Refrigerate 18 to 24 hours. Just before serving, fold in reserved 1/2 cup almonds.

Twenty-Four Hour Chef's Salad image

1 head lettuce romaine or iceberg
1 (10-ounce) package peas partially thawed and drained
6 eggs hard-cooked, sliced
4 ounces Swiss cheese shredded (about 1 cup)
2 (7-ounce) packages turkey breast tenderloin sliced smoked or regular cooked, cut up
1/4 cup green onions sliced
1 cup mayonnaise
1 teaspoon lemon juice
3/4 teaspoon thyme dried, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika, to taste

Steps:

  • 1. Tear romaine or iceberg lettuce into bite-size pieces (you will need 6 cups). In a deep 2-quart glass bowl, layer half of the lettuce, all the peas, remaining lettuce, eggs, cheese, turkey and green onions.2. In a small bowl, blend mayonnaise, lemon juice, thyme, salt and pepper. Spoon over green onions, sealing to edge of bowl. Cover with plastic wrap and chill overnight or up to 24 hours.3. To serve, toss salad gently. Sprinkle with paprika.
