I do not think there is to many out there that would pass up a rice krispy treat. Adding caramels and pecans make these extra special. Easy for the kids to help make or just a special treat for lunch boxes.

3 tablespoon(s) butter or margarine
1 - square baker's unsweetened chocolate
1 package(s) 10 oz marshmallows
6 cup(s) cocoa sweetened rice cereal
1 1/2 cup(s) kraft caramel bits, divided
1 tablespoon(s) water
1/2 cup(s) chopped pecans, toasted

Steps:

  • Microwave butter and chocolate square in large microwaveable bowl on high 45 seconds, or until melted. Add marshmallows; toss to coat. Microwave 1 1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec.
  • Add cereal and 1 cup caramel bits; mix well. press onto bottom of a 13x9 inch pan sprayed with cooking spray.
  • Microwave water and remaining caramel bits in small microwaveable bowl 45 sec.; stir until bits are completely melted. Drizzle over cereal mixture. Sprinkle with nuts; press lightly into cereal mixture to secure. Cool completely before cutting into squares.

Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Nonstick cooking spray
4 tablespoons unsalted butter
One 10-ounce bag mini marshmallows
6 cups crispy rice cereal, such as Rice Krispies
1 teaspoon pure vanilla extract
Pinch kosher salt
Decorative toppings, optional (see Cook's Note)

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
  • Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
  • Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
  • Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

This is an easy recipe for Christmas gifts.

4 ounces pecan halves
24 individually wrapped caramels, unwrapped
1 teaspoon shortening
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Cover cookies sheet with aluminum foil, shiny side exposed. Lightly grease foil with vegetable oil spray.
  • Place 3 pecan halves in a Y shape on the foil. Place 1 caramel candy in the center of each Y. Bake just until caramel is melted, about 9 to 10 minutes.
  • Heat shortening and chocolate chips over low heat just until chocolate is melted. Spread over candies and refrigerate for 30 minutes.
