I found this recipe in a local newspaper when we moved to Arkansas almost 20 years ago. The recipe was said to be so good that even people "burned out" on turnips would like it. I'd never heard of slaw made from turnips, but I tried it and now my husband likes it better than cabbage slaw.

1/4 cup chopped sweet red pepper
1/4 cup thinly sliced green onions
1/4 cup mayonnaise
1 tablespoon vinegar
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
4 cups shredded peeled turnips

Steps:

  • In a bowl, combine all ingredients except turnips. Pour over turnips and toss well to coat. Refrigerate several hours for flavors to blend.

8 cups mixed shredded red and green cabbage
1 12-ounce bag broccoli slaw mix
1/2 cup shredded carrots
1/2 cup thinly sliced scallions (about 4)
1 cup nonfat Greek yogurt
1/2 cup mayonnaise
2 tablespoons distilled white vinegar
1 tablespoon fresh lemon juice
1 teaspoon grated garlic
Kosher salt, freshly ground pepper
1 green apple, cored

Steps:

  • Combine red and green cabbages, broccoli slaw, carrots, and scallions in a large bowl. Toss to mix well.
  • Whisk yogurt, mayonnaise, vinegar, lemon juice, and garlic in a medium bowl until smooth. Season to taste with salt and pepper. DO AHEAD: Slaw mixture and dressing can be made 8 hours ahead. Cover separately and chill.
  • No more than 20 minutes before serving, cut core from apple and cut apple into matchstick-size pieces. Add apple to slaw mixture and toss to evenly incorporate. Add dressing (adding earlier will result in a soggy slaw) and toss to evenly coat.

This recipe lightens up average coleslaw by replacing mayonnaise with low-fat Greek yogurt.

1 medium head green cabbage, shredded (9 cups)
2 red bell peppers, seeded and thinly sliced
3 scallions (green parts only), thinly sliced
2/3 cup low-fat plain Greek yogurt
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
2 teaspoons sugar
Coarse salt and ground pepper

Steps:

  • In a large bowl, toss together cabbage, bell peppers, and scallions. In a small bowl, whisk together yogurt, vinegar, mustard, and sugar; season with salt and pepper. Pour dressing over cabbage mixture and toss to coat completely. Season to taste with salt and pepper. Refrigerate 20 minutes (or up to 2 hours). Toss slaw before serving.
