TURKEY MEATLOAF

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup

Steps:

  • Preheat oven to 325 degrees F.
  • In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
  • Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

TACO TURKEY MEAT LOAF

2 large eggs, lightly beaten
1 cup cooked brown rice
1 medium onion, grated
1/2 cup shredded Monterey Jack cheese
1/4 cup dry bread crumbs
1/4 cup grated Romano cheese
1/4 cup tomato sauce
1 envelope taco seasoning
2 garlic cloves, minced
1/2 teaspoon pepper
3 pounds ground turkey
TOPPING:
1 cup tomato sauce
1/2 cup shredded Monterey Jack cheese
1/4 cup grated Romano cheese

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 10 ingredients. Add turkey; mix lightly but thoroughly. Shape into two 7-1/2 x 4-1/2-in. loaves. Place in a greased shallow baking pan., Bake 1 hour. Mix together topping ingredients; spread over loaves. Bake until a thermometer reads 165°, 10-15 minutes longer. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without sauce. Securely wrap and freeze cooled meat loaves in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves and place in a greased shallow baking pan. Prepare topping as directed; spread over meat loaves. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Let stand 10 minutes before slicing.

This is my all time favorite recipe for meatloaf. You can substitute the ketchup for barbecue sauce.

1 pound ground beef
¾ cup cooked rice
1 tablespoon brown sugar
¾ cup chopped onion
1 tablespoon ketchup
½ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, rice, brown sugar, onion and 1 tablespoon ketchup. Mix well and place in a 5x9 inch loaf pan.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes. Spread remaining 1/2 cup ketchup over the top of the loaf. Bake for 15 more minutes.

A tender and tasty meatloaf made with ground beef, uncooked rice, vegetables, and herbs.

1 pound lean ground beef
1/2 cup uncooked instant white rice
1/4 cup finely chopped onion
1/4 cup minced red bell pepper
1 clove garlic, minced
1 teaspoon salt, or to taste
1 teaspoon freshly ground black pepper
1 tablespoon minced fresh herbs of your choice
2 teaspoons Worcestershire sauce
1 egg, beaten
1/4 cup ketchup
1/4 cup milk
1/4 cup dry bread crumbs

Steps:

  • Preheat the oven to 350 degrees F. Grease a loaf or meatloaf pan. Combine all the ingredients in a bowl and mix well. Form the meat into a loaf shape and place in the loaf pan. Place the pan in the oven and bake the meatloaf at 350 degrees F for 1 hour or until the meatloaf is done and reads 160 degrees F on a meat thermometer. Remove the meatloaf from the oven and let the meatloaf rest for 15 minutes before slicing and serving.

My hubby loves my regular meatloaf, but I don't. So I tried this for myself, and it is so yummy! The leftovers make great sanwiches. Hope you like it.

1 pound(s) ground turkey (ground chicken is also good)
1 cup(s) brown rice, cooked
1 - egg
3/4 cup(s) greek yogurt
1/2 cup(s) onion, chopped
1/2 cup(s) celery, chopped
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 teaspoon(s) basil, dried
1 teaspoon(s) oregano, dried
1/2 teaspoon(s) cayenne pepper, powdered (optional)
1/2 cup(s) ketchup (more, if you prefer)

Steps:

  • Preheat oven to 350. Spray a loaf pan with cooking spray and set aside.
  • Combine all ingredients by hand in a large bowl.
  • Shape into a football-like loaf. Place in loaf pan and bake for 30 minutes.
  • Take loaf out of oven and spread ketchup on top. (I like to sprinkle with some parmasean cheese and blend together with ketchup, but not necessary, your choice)
  • Place back in oven and cook an additional 30 minutes.
  • Let sit 10 minutes befor slicing.

  • Preheat oven to 350°. Mix first seven ingredients and 1/4 teaspoon poultry seasoning., Place turkey in a greased foil-lined 13x9-in. baking pan; rub with salt, pepper and remaining poultry seasoning. Spread with cranberry mixture. Roast until a thermometer reads 165°, 45-55 minutes, drizzling with orange juice halfway., Meanwhile, in a saucepan, combine first six rice ingredients; bring to a boil. 2 cups cooked brown rice or bulgur

2 tablespoons Progresso™ chicken broth (from 32-oz carton)
1 tablespoon grated Parmesan cheese

Steps:

  • Chop turkey. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook rice, carrot, onions and celery in oil 5 minutes, stirring frequently, until vegetables are tender and rice is toasted light brown.
