Nothing beats a simple, deli turkey sandwich. Try this easy 5-minute sandwich or one of our five different variations!

2 slices whole wheat bread
2 tablespoons mayonnaise
4 ounces sliced or shaved deli turkey
4 slices Provolone cheese ((or your favorite sliced cheese))
Green leaf lettuce
2 slices fresh tomatoes
Salt and pepper to taste
additional toppings ((see options above))

Steps:

  • Lay out all ingredients. Spread mayonnaise on bread slices and layer one slice with sliced turkey, Swiss cheese, lettuce, tomato, salt and pepper, and any other additional toppings.
  • Top sandwich with remaining bread slice, cut into halves, and serve. See above for more variation ideas.

2 tablespoons butter
1/2 cup finely chopped onion
1/4 cup finely chopped celery
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup evaporated milk
4 ounces cream cheese, cubed
1 cup frozen peas
2 cups chopped cooked turkey (about 10 ounces)
1/2 teaspoon salt
1/4 teaspoon pepper
4 slices Texas toast or other thick-sliced bread, toasted
Chopped tomato and minced fresh parsley, optional

Steps:

  • In a large saucepan, heat butter over medium-high heat; saute onion and celery until tender, 4-6 minutes. Stir in flour until blended; cook and stir until golden brown. Gradually stir in stock and milk. Bring to a boil, stirring constantly; cook and stir until thickened, 4-6 minutes., Add cream cheese, peas, turkey, salt and pepper; cook and stir until blended and heated through. Serve over toast. If desired, top with tomato and parsley.

My attempt to duplicate a MN State Fair favorite; after attempting to contact the MN Turkey Grower's Association with no luck in obtaining the secret recipe. From what I understand, the state fair turkey is deep fried -- this version is crockpot cooked and very easy.

1 Butterball boneless breast of turkey
4 ounces chicken broth
1/4 cup butter
1 tablespoon Mrs. Dash garlic and herb seasoning
1 teaspoon onion powder
1/2 teaspoon garlic powder
bun (either bakery hamburger style or BBQ bun style)

Steps:

  • Remove string from turkey breast (thawed, if you bought a frozen one).
  • Place in crockpot.
  • Add broth, seasonings and butter.
  • Place a sheet of foil over breast meat to cover.
  • Cover with crockpot lid.
  • Cook on low 6-8 hours.
  • Remove breast meat from crockpot, reserve liquid.
  • Shred meat with forks.
  • Place back in crockpot - add enough of the reserved liquid to moisten.
  • Serve on buns.
  • You may garnish with BBQ sauce - but I personally like it just as it is.

These slow cooker Hot Turkey Sandwiches start with a can of beer and end with a stick of butter. So great for your next party! Or serve the shredded turkey for a fuss-free, delicious holiday meal any time of year.

1 (12 ounce) can light beer ((see note 1))
1 recipe homemade onion soup mix (or 1 packet store-bought (see note 2))
1 teaspoon chicken base (plus more, to taste (see note 3))
3 teaspoons dried parsley
salt and ground white pepper
10 pounds bone-in skin-on turkey breast ((see note 4))
1/2 cup butter (cubed (1 stick))
2 tablespoons cornstarch (optional (see note 5))
rolls (split, for serving (see note 6))

Steps:

  • In the bottom of a slow cooker, add beer, onion soup mix, chicken base, dried parsley, and 1 teaspoon white pepper. Add turkey breast. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  • Remove turkey breast from slow cooker and transfer to a rimmed baking sheet. Take off skin and separate meat from bones, discarding bones and skin. Shred turkey.
  • While the meat is still out of the slow cooker, stir in butter until melted. For a thicker broth, remove 1/2 cup broth and whisk with cornstarch. Add back to slow cooker.
  • Add shredded turkey back to slow cooker and heat until broth is thickened, about 10 minutes. Season to taste with salt and white pepper. Serve with rolls.
