A quick and easy recipe for classic tasty breakfast sausage patties. Great with pancakes and eggs. This recipe has a mild to moderate zing. Increase cayenne and black pepper if you like more of a punch. Thyme may be substituted for sage, or use both.

2 pounds ground turkey
¾ teaspoon ground ginger
1 ½ teaspoons salt
1 teaspoon dried sage
¼ teaspoon cayenne pepper
1 ½ teaspoons ground black pepper

Steps:

  • In a large bowl, mix together the ground turkey, ginger, salt, sage, cayenne pepper, and black pepper until well blended.
  • Heat a skillet over medium-high heat, and coat with nonstick cooking spray. Form the turkey sausage into patties, and fry until browned on both sides, and no longer pink in the center. This should take about 15 minutes.

1 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon fennel seed

Dash each white pepper, cayenne pepper, ground allspice, ground cloves and ground nutmeg

Steps:

  • In a large bowl, combine all ingredients. Shape into eight 2-1/2-in. patties. Cover and refrigerate for at least 1 hour. , In a large skillet coated with cooking spray, cook patties over medium heat for 4-6 minutes on each side or until no longer pink. , Freeze option: To freeze, wrap each patty in plastic wrap; transfer to a resealable plastic freezer bag. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). 1 teaspoon fennel seed

1 medium shallot, finely chopped
1 pound ground dark meat turkey
1 1/2 teaspoons ground fennel
2 teaspoons red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • In a 12-inch nonstick skillet over moderate heat, heat 1 tablespoon oil until hot but not smoking. Cook the shallot, stirring occasionally, until soft, 3 to 4 minutes. Let cool.
  • In a medium bowl, combine the turkey, fennel and red pepper flakes. Sprinkle with salt and pepper and mix well. Using moist hands, form the turkey into 2-inch patties, making 12 total.
  • In a 12-inch nonstick skillet over moderate heat, heat 1/2 tablespoon oil until hot but not smoking. Working in 2 batches, cook 6 patties until golden brown, turning once, 6 to 8 minutes total. Repeat with the remaining patties. Serve immediately.

2 tablespoons steak seasoning (such as KC Masterpiece ® Steak Seasoning with Garlic), or to taste
¾ cup corn flake crumbs, or as needed
1 tablespoon real maple syrup, or to taste
3 tablespoons canola oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the ground turkey, steak seasoning, corn flake crumbs, and maple syrup in a bowl until the mixture is thoroughly combined. Heat the canola oil in a skillet over medium-high heat, and scoop up about 1/4 cup of the turkey mixture. Form the mixture into a patty, and place into the hot skillet. Repeat with remaining turkey mixture. Pan fry the patties until browned on both sides, 5 to 8 minutes per side. Remove patties to a cooling rack to drain. 2 pounds ground dark-meat turkey
1/4 teaspoon grated nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon cayenne
1/8 teaspoon ground cloves
2 large egg yolks

Steps:

  • Preheat oven to 250°F.
  • Cook onion in 1 tablespoon oil in a 12-inch nonstick skillet over medium heat, stirring occasionally, until golden brown, 6 to 8 minutes. Remove from heat.
  • Meanwhile, stir together bread crumbs and milk in a large bowl and let stand 5 minutes.

1/2 pound boned and skinned turkey breast, cut into 1-inch chunks
1 pound high-quality pork fatback, cut into 1-inch chunks
1/4 cup white wine
2 jalapeno chiles, stemmed, seeded, and minced
2 teaspoons ground dried chipotle chile, or 1/2 chile en adobo, rinced and finely chopped
1/2 bunch cilantro, leaves only, finely chopped
1 1/2 tablespoons sea salt
2 tablespoons freshly ground black pepper
2 teaspoons canola oil

Steps:

  • On a plastic tray covered with plastic wrap, freeze the turkey and fatback for 30 minutes to firm. In an electric standing mixer with the food grinder attachment, or in a food processor, grind the meat and fatback together in short bursts. It should be chopped rather than pulverized, and should remain somewhat chunky.
  • In a large mixing bowl, combine the ground meats with the wine, chiles, cilantro, salt, and pepper. Wash your hands thoroughly and mix together by hand until all the ingredients are well blended, but don't overmix or the meat will become warm and mushy. Refrigerate for 2 hours, covered, to allow the flavors to marry. Form the sausage mixture into flat patties, approximately 3-inches in diameter. In a large non-stick pan heat 2 teaspoons canola oil over medium-low heat (or heat a well-seasoned flat griddle pan). Saute the sausage patties until golden, turning once with a flat-ended nonstick spatula and draining the fat as necessary. Drain briefly on paper towels and serve hot.
