TURKEY BBQ MEATLOAF WITH ROASTED CORN SALSA
This is so not your mom's meatloaf! This one is made with ground turkey, a sweet and savory BBQ glaze and homemade corn salsa.

Steps:
- Heat oven to 375ºF.
- Combine corn, tomatoes, dressing, onions, cilantro and 2 Tbsp. barbecue sauce. Refrigerate until ready to use.
- Mix turkey, stuffing mix, water, onions, chiles, eggs and 1/3 cup of the remaining barbecue sauce just until blended; shape into loaf in shallow baking dish sprayed with cooking spray.
- Bake 1 hour. After about 45 min., mix remaining barbecue sauce with preserves, mustard and chili paste in saucepan; cook on medium heat until heated through, stirring occasionally.
- Brush meatloaf with barbecue sauce mixture; bake 20 to 25 min. or until done (165ºF). Let stand 5 min. before slicing and serving with the corn salsa.

This recipe was modified from one I found in the Quaker Oats "All-Time Any Time Recipes" book. Its so easy, it hardly classifies as cooking. Note that this works well with ground venison or ground beef, too.

Steps:
- Heat oven to 350 degrees F.
- Using your hands, combine all ingredients, except the ketchup, in a medium bowl until well mixed.
- Spray a 8 1/2 x 4 1/2 x 2 1/2 loaf pan with cooking spray.
- Pack the meatloaf mixture into the loaf pan. Drizzle ketchup over meatloaf.
- Bake (uncovered) 1 hour and 15 minutes.
- Let stand a few minutes before slicing and serving.

- Mix everything together except salsa and from into a loaf then put in the oven at 350 for 40 minutes.
- Take out of the oven and cover with salsa and bake for about 25 more minutes or until done.

This is the first meatloaf I have ever made that turned out moist and delicious! I saw several other turkey meatloaves but none quite like this.

Steps:
- Heat oil in a medium skillet. Add celery and onion and cook until tender, about 10 minutes. Add garlic and cumin and cook for a minute, then set aside to cool slightly.
- Preheat oven to 350 degrees F.
- In large bowl, combine turkey, bread crumbs, milk, salsa, egg whites, salt and pepper, and celery and onion mix.
- Spray a 13" x 9" pan with cooking spray, shape meatloaf into a 9" x 5" loaf and place in the middle of the pan.
- In small bowl, combine ketchup and mustard. Spread mixture on top of meatloaf.
- Bake at 350 degrees for about 1 hour, or until the inside is heated to 165 degrees F.
- Makes 8 main-dish servings.
