I had some leftover turkey, dressing and gravy and I didn't want the same old boring leftovers. This is what I came up with. This can be doubled very easily. You can even use chicken instead. For the dressing use your favorite. Posted August 29th 2005.

1 cup leftover cooked turkey, cubed
1 1/2 cups turkey stuffing
1 1/4 cups turkey gravy
1/4 cup breadcrumbs
oil (for frying)

Steps:

  • Mix together turkey, dressing, and enough gravy to hold mixture together. If needed add enough bread crumbs to be able to make patty shaped.
  • In a medium sized skillet, heat oil until hot but not smoking.
  • Shape turkey mixture into two patties.
  • Add to skillet, fry until golden brown, about 5 minutes on each side.
  • Remove to serving plate, add rest of warmed up gravy over patties.

This Turkey Burger Recipe will be the juiciest, most delicious burger you ever did make. One secret ingredient takes these over the top!

1 lb lean ground turkey (93/7 or 99% fat-free)
1 large egg
salt & pepper (to taste)
1 teaspoon dried parsley
1/4 teaspoon poultry seasoning
1 tablespoon cold milk
2 tablespoons cold butter
4 slices American cheese
any other burger toppings: pickles, lettuce, tomato, onion, etc (as desired)
4 soft sesame burger buns

Steps:

  • Place turkey into a large bowl with egg, salt, pepper, parsley, poultry seasoning and milk. Stir to combine. {Mixture may seem a little wet, but once it starts cooking, the egg will help hold it's shape together.}
  • Preheat indoor griddle to medium-medium high heat.
  • Divide meat into 4 even patties. Cut butter into skinny half tablespoon pats. Press butter into the center of each patty forming the meat around it.
  • Spray griddle pan with nonstick cooking spray and place each burger down onto the griddle. Cook about 4 minutes per side or until browned and completely cooked. Feel free to melt cheese on top of each burger. {Place cheese onto cooked side of the burger and cover with a large pot lid or foil for 1 minute to melt cheese.}
  • Remove burgers and place onto buns. Top with any desired toppings and condiments and serve.

For turkey
1 10-ounce jar crabapple jelly
3/4 cup plus 6 tablespoons (2 1/4 sticks) butter
1/3 cup frozen apple juice concentrate, thawed
4 tablespoons chopped fresh tarragon
12 ounces mushrooms, quartered
1 large onion, coarsely chopped
1 large carrot, coarsely chopped
1 22- to 24-pound turkey, neck cut into 4 pieces
10 cups (about) canned low-salt chicken broth
For gravy
1/4 cup all purpose flour
3 cups (about) canned low-salt chicken broth
8 bacon slices, cut into 1/2-inch pieces
2 tablespoons chopped fresh tarragon
1/4 cup applejack or other apple brandy (optional)

Steps:

  • Make turkey:
  • Stir jelly, 1/2 cup butter, apple juice concentrate and 2 tablespoons tarragon in small saucepan over medium heat until butter and jelly melt. Remove glaze from heat. (Can be made 2 days ahead. Cover and chill. Bring to room temperature and rewhisk before using.)
  • Set rack at lowest position in oven and preheat to 375°F. Place small rack in center of large roasting pan. Melt 1/4 cup butter in heavy large skillet over medium-high heat. Add mushrooms, onion and carrot; saut until dark brown, about 12 minutes. Sprinkle vegetables and turkey neck pieces around rack in pan.
  • Stir remaining 6 tablespoons butter and 2 tablespoons tarragon in heavy small saucepan until butter melts. Rinse turkey inside and out; pat dry with paper towels. Place turkey on rack in pan. Starting at neck end, slide hand between skin and breast meat to loosen skin. Brush 3 tablespoons tarragon butter over breast meat under skin. If stuffing turkey, spoon stuffing loosely into main cavity. Brush remaining tarragon butter over outside of turkey. Sprinkle turkey with salt and pepper. Tuck wing tips under turkey; tie legs together to hold shape.
  • Roast turkey 45 minutes. Reduce oven temperature to 350°F; add 1 cup broth to pan. Cover turkey loosely with foil. Roast until thermometer inserted into thickest part of thigh registers 180°F., adding 1 cup broth and basting with pan juices every 1/2 hour and brushing with 1/3 cup glaze twice during last 2 hours, about 4 1/4 hours longer if unstuffed or 4 3/4 hours longer if stuffed.
  • Transfer turkey to platter. Tent with foil; let stand 1/2 hour. Reserve pan juices.
  • Make gravy:
  • Mix 1/2 cup glaze and flour in small bowl to blend. Strain pan juices into large measuring cup, pressing on solids; spoon off fat. Add enough broth to measure 6 cups.
  • Sauté bacon in heavy large saucepan over medium heat until crisp. Pour off fat. Add broth mixture to saucepan and bring to boil. Whisk in glaze-flour mixture and tarragon, then applejack. Simmer until thickened to sauce, about 5 minutes. Season with salt and pepper.

TARRAGON TURKEY BURGERS

I came up with this healthier alternative to burgers which highlights the flavor of fresh tarragon - the bread and milk "panade" helps keep the meat moist and flavorful so you can be sure to cook the lean turkey completely. These burgers are wonderful topped with fresh leafy lettuce and served on a soft roll (we loved Recipe #135870). A spoonful of bearnaise sauce (like Recipe #269347), while not doing much for the calorie-count, makes an amazing condiment!

1 1/4 lbs ground turkey
1 slice sandwich bread, crust removed and cut into 1/2-inch cubes
2 tablespoons milk
2 teaspoons fresh tarragon, chopped
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • In mixing bowl, combine cubed bread and milk. Mash together until milk is completely incorporated.
  • Add remaining ingredients.
  • Gently mix with spoon or hands, being careful not to overmix, but be sure to completely mix in bread mixture.
  • Form into four patties.
  • Grill (or cook in frying pan), as desired, turning once, until turkey is cooked through.

3/4 pound ground turkey
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
3 teaspoons olive oil
1 small onion, chopped
1/2 pound mushrooms, sliced
1/4 teaspoon crumbled dried sage
3/4 cup chicken broth
2 teaspoons all-purpose flour
cranberry sauce as an accompaniment

Steps:

  • In a bowl stir together turkey, Worcestershire sauce, and mustard and form into two 3/4-inch-thick burgers. Season burgers with salt and pepper.
  • In a large heavy skillet heat 2 teaspoons oil over moderately high heat until hot but not smoking and sauté burgers until cooked through, about 6 minutes on each side. Transfer burgers to a plate.
  • To skillet add onion and remaining teaspoon oil and cook over moderate heat, stirring, 3 minutes. Add mushrooms and sage and cook, stirring, until liquid mushrooms give off is evaporated. In a small bowl whisk together broth and flour until flour is dissolved and stir into mushrooms. Simmer gravy, stirring, 5 minutes and spoon over burgers.
  • Serve burgers with cranberry sauce.

1/2cup finely crushed dry corn-bread stuffing mix
1 large egg
1/4teaspoon ground black pepper
5 1/2teaspoons chopped fresh tarragon
1 1/2tablespoons butter
1cup canned low-salt chicken broth
1 1/2teaspoons Dijon mustard

Steps:

  • Mix first 4 ingredients and 4 1/2 teaspoons tarragon in medium bowl. Using moistened hands, divide mixture into 4 parts. Shape each into 1/2-inch-thick oval patty.
  • Melt butter in heavy large skillet over medium-high heat. Add patties; sauté until cooked through, about 4 minutes per side. Transfer to plates. Add broth, mustard and 1 teaspoon tarragon to skillet. Boil until gravy has reduced enough to coat spoon, whisking occasionally, about 5 minutes. Spoon over patties.
