Steps:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, combine the cheddar cheese, honey, applesauce, and egg until incorporated.
- Add in the rice flour and mix with a rubber spatula until combined.
- Turn dough out onto a floured surface and roll out until it's 1/4-inch thick.
- Using a 3-inch cookie cutter, cut out shapes.
- Arrange on the baking sheet.
- Bake until just lightly browned on the bottom, 10-12 minutes.
- Transfer to a rack and let cool completely. Make sure they are room temperature and crisp before storing.
