A fast and easy way to prepare a pretty classic nacho treat, with ground, browned turkey meat. The kids and my husband love it. Serve with sour cream, taco sauce, salsa or guacamole.

1 pound ground turkey
2 cloves garlic, chopped
freshly ground black pepper to taste
2 teaspoons crushed red pepper flakes
2 tablespoons chopped fresh chives
2 tablespoons hot sauce
1 (1 ounce) package dry taco seasoning mix
1 (14 ounce) can refried beans
1 (14.5 ounce) package tortilla chips
2 cups shredded Cheddar cheese
1 (4 ounce) can sliced black olives
1 ripe tomato, diced
1 bunch green onions, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium heat, begin to brown the ground turkey. Stir in garlic, pepper, 1 teaspoon red pepper flakes, and 1 tablespoon chives. Stir in 1 tablespoon hot sauce. When the turkey is browned, stir in taco seasoning mix according to package instructions.
  • Pour the beans into a microwave safe bowl, and heat in the microwave until softened. Stir in 1 tablespoon chives and 1 tablespoon hot sauce.
  • Spread the tortilla chips across the bottom of a baking sheet. Spoon the beans mixture over the chips. Then spread the turkey mixture across the top. Sprinkle cheese, then olives, tomatoes, green onions, and remaining 1 teaspoon of crushed red pepper flakes over the top.
  • Bake in preheated oven until cheese is melted, about 15 minutes

1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
3/4 cup salsa
1 cup cubed cooked turkey or chicken
Tortilla chips

Steps:

  • In a small saucepan, combine soup and salsa. Bring to a boil. Reduce heat; stir in turkey. Heat through. Serve warm with tortilla chips.

I got the original recipe from an old neighbor. I have changed it to be less greasey. I have also added some extra vegetables to make it a little healthier.

2 lb ground turkey
32 oz mexican velveeta
32 oz 2% velveeta
1 pkg green onion
2 tsp no salt
1 1/2 c fresh zucchini
1 jar(s) salsa (i used lime & garlic)
1 can(s) diced tomatoes (no salt added)
3 pkg taco seasoning mix
2 Tbsp mrs. dash extra spicy

Steps:

  • 1. Brown ground turkey in a large pot. Dice green onions and zucchini. Dice the Velveeta cheese loafs.
  • 2. Add zucchini, no salt, taco seasoning and Mrs. Dash seasoning to the ground turkey.
  • 3. Add both chesses and let them melt. Then add the salsa and diced tomatoes.(You may use the diced tomatoes with chilies in them). After it is all stired together add the green onions and eat with your favorite chips.

Delicious and filling turkey taco nachos that everyone will love. You can top them with your favorite taco toppings such as lettuce, pico de gallo, light sour cream, or guacamole. I use pre-chopped and pre-shredded vegetables and pico de gallo from the grocery store to save preparation time on a weeknight. I like to include chopped or shredded vegetables I have on hand to boost the nutrition.

1 ¼ pounds 99%-lean ground turkey breast
1 package taco seasoning
2 cups pico de gallo, divided
⅓ (16 ounce) package broccoli slaw
2 tablespoons chopped red bell pepper
2 tablespoons chopped yellow bell pepper
2 tablespoons chopped green bell pepper
1 (10 ounce) can diced tomatoes with green chile peppers
1 (8 ounce) can no-salt-added tomato sauce
48 corn tortilla chips, or as needed
1 cup shredded reduced-fat Cheddar cheese
cooking spray

Steps:

  • Heat oil in a large skillet over medium heat. Add ground turkey and cook until beginning to brown, 4 to 5 minutes. Sprinkle with taco seasoning. Cook and stir until turkey is no longer pink, 1 to 2 minutes.
  • Add 1 cup pico de gallo, broccoli slaw, and chopped bell peppers. Cook, stirring occasionally, until peppers begin to soften, about 2 minutes. Stir in diced tomatoes and tomato sauce; cook until simmering and heated through, about 5 minutes.
  • Divide tortilla chips evenly and layer onto 4 microwave-safe plates. Spoon turkey mixture on top, sprinkle with Cheddar cheese, and spray with cooking spray.

1 cup water
1 package (8 ounces) fat-free cream cheese, softened
