Greek seasoning, feta cheese and dill-cucumber sauce give this gyro an authentic taste. It was my family's introduction to how really good pita bread can be. Instead of feta cheese, we'll sprinkle on cheddar or Monterey Jack if we have it. -Donna Garvin, Glens Falls, New York

- Finely chop a third of the cucumber. For sauce, mix sour cream, onion, dill, lemon juice and chopped cucumber. Thinly slice remaining cucumber., In a nonstick skillet, heat oil over medium-high heat; saute turkey until no longer pink, 4-6 minutes. Stir in Greek seasoning. Serve turkey, lettuce, tomato and sliced cucumber on pitas; top with sauce and cheese.

GUILT-FREE GROUND TURKEY GYROS
I love Greek gyros sandwiches, but I don't like to eat lamb and it's not the healthiest food in the world. This recipe satisfies my craving. You can eat these on pita bread, but it's just as good on any other bread in place of deli meat. Serve it with tzatziki sauce, Greek yogurt, or sour cream.

- Preheat the oven to 350°F.
- Put all of the ingredients in a bowl, and spend a few minutes kneading the resulting mixture with your hands so everything is combined well.
- Pour the mixture onto a lightly oiled 9x13 pan. Smash it down with your hands a bit until it looks like a very large hamburger patty.
- Bake it for 35 minutes.
- Remove, then cut the meat into thin slices and serve. If you want a crispier, more authentic gyros texture, lay the sliced meat down on the pan and place in the broiler for 5 more minutes.

- In a large bowl, combine the bread crumbs, egg and seasonings. Crumble turkey over mixture and mix well. Shape into 16 balls., Place meatballs on a rack coated with cooking spray in a shallow baking pan. Bake, uncovered, at 400° for 15-20 minutes or until no longer pink., Meanwhile, in a small bowl, combine the yogurt, cucumber, onion and lemon juice. GRILLED LAMB OR CHICKEN/TURKEY MEATBALL GYROS WITH PESTO AND TZATZIKI.
Steps:
- 1. For the tzatziki sauce: Combine all of the tzatziki ingredients (yogurt through sugar) in a food processor. Season with a dash of salt and black pepper; pulse until smooth. Taste and adjust seasoning, if necessary. Add diced cucumber and fold with a spatula. Spoon into a bowl and refrigerate. Rinse food processor with water.⨠2. For the mint pesto: Combine ingredients (mint through lemon) in a food processor and add a dash of salt and pepper. Pulse while drizzling olive oil in through the vegetable shoot until you reach desired consistency. Taste and adjust seasonings, if necessary.⨠3. Preheat a grill to medium high heat. In a bowl, combine all the meatball ingredients (except cooking spray). Work with your hands until everything is thoroughly combined. Form meatballs using your hands and place them on a plate. Brush meatballs with canola oil or spritz with cooking spray. Place them on the grill and cook, rotating a few times, about 8-10 minutes or until cooked through.â¨4. To serve, place meatballs in toasted or grilled pita bread. Drizzle with tzatziki and mint pesto and top with cucumbers, feta and fresh cilantro leaves.
SLOW-COOKER SHREDDED TURKEY GYROS

- Spray 4-quart slow cooker with cooking spray. In small bowl, mix butter, garlic, 3/4 teaspoon of the salt, the oregano and pepper sauce. Rub mixture onto turkey thighs.
- Place onion in slow cooker; top with turkey thighs. Cover; cook on Low heat setting 7 to 9 hours or until turkey pulls apart easily with fork. Meanwhile, in medium bowl, stir together the yogurt, dill, garlic, cucumber and remaining 1/4 teaspoon salt; cover and refrigerate until serving.
- Remove turkey from slow cooker; remove from bones. Shred turkey; stir into mixture remaining in slow cooker. Using slotted spoon, divide meat and onion mixture among 6 pita folds. Top with yogurt sauce; pass additional sauce at table.

- Heat oven to 400°.
- Place pita breads on ungreased cookie sheet. Mix sour cream and mint; spread evenly over pitas. Sprinkle each pita with 1/4 cup of the mozzarella cheese. Top with turkey, cucumber, tomato and feta cheese. Sprinkle with remaining 1/2 cup mozzarella cheese.
- Bake about 10 minutes or until pizzas are hot and cheese is melted.

GYROS (TURKEY)
Steps:
- In a large bowl, combine turkey, garlic, dreied oregano, onion powder, salt & pepper. Mix lightly but thoroughly. Shape into six oval 1/2 inch thick patties. Place patties on a rack in broiler pan so surface of meat is 3-4 inches from heat. Broil 8-10 minutes each side or until no longer pink. Carve each patty into thin, diagonal slices. Place turkey, tomato, onion, lettuce in each pita. Serve with cucumber yogurt sauce topped with feta cheese. Wrap in foil to serve.
