2 cups chopped celery
1 cup chopped onion
1/2 cup butter
6 cups cubed day-old cornbread
2 cups fresh bread crumbs
1 tablespoon dried sage
1 tablespoon poultry seasoning
1/2 cup egg substitute
1 cup chicken broth
1 turkey (10 to 12 pounds)
Melted butter

Steps:

  • In a skillet, saute celery and onion in butter until tender. Place in a large bowl with cornbread, crumbs, sage and poultry seasoning. Combine egg substitute and broth; add to cornbread mixture, stirring gently to mix., Just before baking, stuff the body cavity and inside the neck with dressing. Skewer or fasten openings. Tie the drumsticks together. Place on a rack in a roasting pan. Brush with melted butter. Bake at 325° for 3-1/2 to 4 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing. When turkey begins to brown, cover lightly with a tent of aluminum foil. When turkey is done, allow to stand for 20 minutes. Remove all dressing to a serving bowl.

2 tablespoons prepared horseradish
3 tablespoons lemon juice, or to taste
1 pinch ground cumin
salt and black pepper to taste
1 egg
½ cup minced celery

1 tablespoon chopped fresh thyme
1 tablespoon poultry seasoning

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Stir the cranberry sauce, horseradish, lemon juice, and cumin together in a bowl. Season to taste with salt and pepper, and set aside.
  • Mix the egg, celery, and onion in a bowl with your hand until the egg is smooth. Add the turkey, thyme, poultry seasoning, parsley, and bread crumbs; mix until evenly combined. Form the turkey mixture into 8 patties.
  • Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. 2 tablespoons butter
1 ½ large yellow onions, diced
4 large celery ribs, diced - or more to taste
1 (8 ounce) package dry bread stuffing mix with seasoning packet
1 (16 ounce) can whole berry cranberry sauce
½ cup butter, melted
½ cup chicken broth
½ teaspoon salt
1 (7 pound) bone-in turkey breast with pop-up timer
½ teaspoon salt

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Cook and stir onions and celery in the hot butter until onions are translucent, about 8 minutes; remove from heat.
  • Place a plastic slow cooker liner into a 6-quart slow cooker. Place dry bread stuffing into the liner bag and sprinkle contents of seasoning packet over the bread. Stir cooked onions and celery, cranberry sauce, 1/2 cup melted butter, chicken broth, and 1/2 teaspoon salt into the dressing mix, taking care not to pierce the bag.

1 lemon, zested and juiced

Steps:

  • Crisp the bacon in microwave according to package directions. Remove from microwave and chop. Of course, any bacon or turkey bacon which you have on hand may be substituted. These pre-rendered bacon products simply allow you to keep more heat out of the kitchen by giving you the option of a low-maintenance microwave preparation.
  • Chop romaine lettuce and arrange on large platter. Arrange a bed of pea shoots or sprouts on top of the lettuce then arrange the tomatoes and chopped red onion on top of that. Season the salad vegetables with salt and pepper, to your taste. Scatter chopped bacon onto salad.
  • Remove the rotisserie turkey from the bone with a sharp carving knife. Slice the rotisserie breast meat on an angle into strips. For thick cut turkey from the deli, julienne the meat into 1/2-inch strips. Arrange the sliced turkey down the center of the salad platter.
  • Cut all around the ripe avocados down to the pit. Twist and separate the halved fruit. Remove the pit with a spoon, then scoop the flesh with a spoon into your food processor bowl. Add the zest and juice of 1 lemon to the food processor. Chop garlic on your board and mash with 1 teaspoon salt to paste the garlic. Add garlic paste and the red wine vinegar to the food processor. Place lid on the food processor and turn it on. While the blade is spinning, stream in extra-virgin olive oil and add hot sauce. Stop processor, taste dressing and adjust seasonings. Pour dressing back and forth over the platter evenly when you are ready to serve this simple and so-cool salad meal.

  • 2. Make the stuffing by roughly chopping the lemon , apple, onion, thyme, rosemary, sage, parsley and bay leaves into 1/2-inch pieces. Mix with oil. Put stuffing into cavity and truss the bird. Do not tie too tight.
  • 3. Start the stock at least 30 minutes before roasting the turkey. Place the wingtips and neck in a saucepan; add 6 cups of water. Bring to a boil. Skim off any foam. Reduce heat to a slow simmer. Add onion, celery, carrot, bay leaves, peppercorns and parsley stems. Allow to simmer about 2 1/2 hours. Strain stock and reserve. You should have about 3 cups.
  • 4. Make a paste by kneading 6 tablespoons unsalted butter with 1/4 cup flour. Rub this vigorously and thoroughly into the skin of the bird.
  • 5. Preheat the oven to 450 degrees. Sprinkle 4 tablespoons flour evenly on the bottom of a roasting pan. Place turkey on a rack in the pan. Allow time for turkey to come to room temperature if it is still cold to the touch.
  • 6. Place turkey in oven. Leave in oven for 40 minutes or until the bird is browned all over. Combine 8 tablespoons butter with 1 teaspoon of water and bring to a boil. Turn the oven down to 350 degrees and baste the turkey generously with the butter mixture. Repeat this process twice, once every 10 minutes, until basting liquid is used up. At this point, the turkey should be in the oven about 1 hour. Now baste 2 more times at intervals of 15 minutes, using pan drippings. At this point, the turkey has been in about 1 hour 30 minutes. Cook 20 minutes more without basting, to allow the skin to crisp. Remove from oven. Allow to rest at least 30 minutes before carving. Make the gravy during this resting period.
  • 7. To make the gravy, remove turkey to a serving platter. Place roasting pan directly on top of a burner on medium heat. Cook for about 5 minutes, allowing excess liquid to evaporate. Stir constantly. Now carefully remove any excess fat that has not combined with the flour to make a roux. Add the diced leek and cook for 1 minute. Slowly add 3 cups turkey stock, allowing the gravy to thicken as it comes to a boil. At this point it may be switched to a saucepan. Make sure that every bit of the pan drippings has been incorporated into the gravy. Add the giblets and simmer for about 15 minutes. Stir in the hard-boiled egg and remove from heat. Season to taste with freshly ground pepper and salt, if necessary.
  • 8. Carve the turkey and pass the gravy. Serve with country sausage and sage dressing and cranberry relish.

This shawarma-like pulled turkey sandwich, using Thanksgiving leftovers, is a great alternative to the mayo-and-cranberry-sauce fallback. Or it can be made any time of year with roast turkey, chicken or lamb.

2 cups very thinly sliced red cabbage
1 medium carrot, peeled and grated
Salt and pepper
2 tablespoons pomegranate molasses, or 2 tablespoons lime juice plus 1 teaspoon sugar
1 teaspoon grated garlic
1 cup peeled diced cucumber
2 tablespoons chopped mint
2 tablespoons tahini
2 tablespoons lemon juice
Pinch of cayenne
1 cup plain yogurt (do not use Greek-style yogurt)
2 tablespoons olive oil
3 cups shredded cooked dark meat turkey, or a mixture of dark and white meat
1/2 teaspoon ground toasted cumin
1/2 teaspoon ground toasted coriander
Pinch of crushed red pepper flakes
4 large pita breads
A few radishes, thinly sliced (optional)

Steps:

  • Put cabbage and carrot in a bowl, season with salt and pepper, then toss with pomegranate molasses and 1/2 teaspoon garlic and set aside. Put cucumber in a separate bowl and season with salt and chopped mint.
  • Make the tahini dressing: In a small bowl, stir together tahini, lemon juice, remaining 1/2 teaspoon garlic and cayenne. Whisk in yogurt and season with salt and pepper.
  • Put olive oil in a cast-iron skillet over medium-high heat. Add turkey and let sizzle. Season with salt, pepper, cumin, coriander and red pepper flakes. Stir-fry for 1 minute and turn off heat.
  • Warm pitas briefly in a toaster oven and cut in half to make 8 pockets. Spoon some warm turkey into each pita, then a spoonful of cabbage, a bit of cucumber, some sliced radish, if using, and a large dollop of tahini dressing. Serve 2 filled pockets per person.

Have enjoy this dish for years. Don't wait for holidays; I make this recipe 3 or 4 times a year. This turkey and dressiing recipe can be served at receptions or a cassarole.

7-8 lbs lb roasted turkey- shredded
2 bags large pepperidge farm stuffing mix- blue label
1 1/2 c shredded carrots
1 1/2 c minced onion (not dried)
4 stick celery-diced very small
2 stick butter
4-12oz jar(s) turkey gravy
1 qt chicken broth

Steps:

  • 1. Bake 7 - 8 lb turkey breast ( or 12 - 14 lb turkey) sautee vegetables in 2 sticks of butter. Mix Pepperidge Farm stuffing w/ 1 qt chicken brothand juices from roasting pan as needed for moistness.salt and pepper to taste. Add sauteed vegetable w/ butter. Stir together.
  • 2. Bake 350 degrees until hot.Mix sredded turkey and dressing with gravy- You want a moist consistencey. Put on bun and enjoy !!! Can be served as a cassarole.

An excellent vegetarian style dressing for poultry. I have been making this recipe for over 35 years.

8 ounces homemade style bread
1/4 cup butter or 1/4 cup margarine
2 cups chopped small onion
1 medium sweet red pepper, seeded and diced
1 medium green pepper, seeded and diced
2 large celery ribs, chopped small include leaves, finely chopped
1 tablespoon chicken soup base
1 large egg, beaten
2 tablespoons whole milk, homogenized
1 1/2 cups sliced fresh mushrooms
1 1/2 teaspoons poultry seasoning
1/4 teaspoon ground ginger
3/4 teaspoon salt
2 tablespoons dried parsley or 4 tablespoons of finely chopped fresh parsley
2 teaspoons dried dill weed
1 teaspoon granulated garlic powder
1/2 teaspoon fresh ground black pepper
2 cups crushed soda cracker saltines

Steps:

  • Purchase an 8 ounce sliced loaf of day old bread, such as homemade, sour dough or Italian bread.
  • Cut into 1/2" cubes and place on cookie sheets to dry for at least 1 day or dry in a 250 F oven for about 30 minutes.
  • I prefer to buy bread rather than purchasing bread cubes or bread crumbs.
  • In a large frying pan, add butter or margarine, onions, green and red peppers, celery and saute' for about 10 minutes; DO NOT BROWN.
  • Add chicken soup base and stir well.
  • Saute' for 5 minutes longer on medium-high heat.
  • In a large mixing bowl, add beaten eggs and milk and mix well.
  • Add dried bread cubes and mix well to coat.
  • Add mushrooms and mix again.
  • In a small bowl, mix together poultry seasoning, ginger, salt, parsley, dill weed, granulated garlic powder, black pepper and mix well to combine.
  • Sprinkle mixture over dressing and mix well.
  • Add crushed soda crackers and mix well.
  • Dressing should be only slightly moist when squeezed and should just hold together.
  • If dressing is still too moist, add more crushed cracker crumbs until the desired texture is achieved.
  • Adjust spices to taste.
  • You may wish to add some dried sage if desired.
  • Line the cavity with cheese cloth leaving enough cloth so that it protrudes outside the cavity. Stuff dressing loosely, DO NOT PRESS TIGHTLY, as it will not cook properly.
  • You can also wrap the dressing in double aluminum foil and bake in the oven along with your turkey or separately at 400 F for about 1 1/2 hours.
  • When the turkey is cooked, pull out the cheese cloth with the dressing. Leaves the cavity clean and you do not need to dig the dressing out.
  • NOTE: I prefer to cook the dressing in double aluminum foil in the oven.
