SMOKED TURKEY SANDWICH

1 1/2 cups barbecue spice rub
One 3- to 4-pound boneless turkey breast
1/2 head green cabbage
1/4 head red cabbage
1 medium carrot
3/4 cup mayonnaise
1/3 cup sugar
1/4 cup white vinegar
1/8 teaspoon salt
1/8 teaspoon ground black pepper
3 cup fresh cranberries
1 cup sugar
1/2 cup orange juice
1 tablespoon barbecue spice rub
1 1/2 habanero chiles, finely chopped
Four 6-inch deli rolls
8 slices Swiss cheese
Barbecue sauce, for serving

Steps:

  • For the smoked turkey breast: Combine 1 cup spice rub and 2 gallons water in a large container, then add turkey breast to brine. Cover and place in refrigerator overnight.
  • Preheat a smoker for cooking at 200 degrees F.
  • Remove turkey breast from brine and pat dry. Rub with remaining 1/2 cup spice rub. Place in smoker and cook until it reaches an internal temperature of 150 degrees F, about 3 1/2 hours. Remove from smoker and let rest 15 minutes, then slice thin.
  • For the cole slaw: Meanwhile, thinly cut both cabbages and put in a medium bowl. Grate the carrot and add to the bowl. Add the mayonnaise, sugar, vinegar, salt and pepper and mix well.
  • For the gorilla berry habanero sauce: Add cranberries, sugar, orange juice, spice rub and habanero to a saucepan. Cook, stirring occasionally, over medium-high heat, about 20 minutes. Break down with an immersion blender.
  • For the sandwich: Cut open the rolls. Open and toast, with two slices of cheese on the top halves. When cheese is melted, remove from heat and add about 3 tablespoons Gorilla Berry Habanero Sauce to each roll bottom. Add turkey breast, barbecue sauce and 1/2 cup cole slaw to each. Close sandwiches, then cut in half and enjoy!

3 slices applewood-smoked bacon
1/2 ounce (1 tablespoon) unsalted butter, softened, plus more for roll or bun
1 brioche roll or hamburger bun, split
1/4 ripe avocado
1 teaspoon crumbled blue cheese, such as Roquefort
2 thin slices tomato
1 medium egg
4 thin slices cooked turkey

Steps:

  • Cook bacon in a skillet over medium heat until crisp, 10 to 12 minutes. Transfer to paper towels to drain, and wipe skillet clean.
  • Butter cut sides of roll or bun. Heat skillet over medium-high heat. Place roll or bun, buttered sides down, in skillet, and cook until golden brown, 1 to 3 minutes.
  • Mash avocado and blue cheese in a small bowl. Spread mixture on bottom half of roll or bun. Top with tomato and bacon.
  • Melt butter in skillet over medium heat. Add egg, and cook until white is set, about 1 1/2 minutes. Gently flip egg, and cook until yolk is runny in center but slightly set around edge, about 30 seconds. Remove from pan. Add turkey to pan, and heat through.
  • Place turkey and egg on top of tomato. Top with remaining half of roll or bun, and serve immediately.

3 tablespoons butter, softened
3 slices rustic Italian bread
3 slices cheddar or provolone cheese
2 pieces leaf lettuce
3 slices tomato
7 thin slices deli smoked peppered turkey breast
1/2 medium ripe avocado, peeled and sliced
3 tablespoons blue cheese spread
7 thin slices deli oven-roasted chicken
7 thin slices deli ham
5 crisp cooked bacon strips
1 hard-boiled large egg, sliced

Steps:

  • Spread butter over 1 side of each bread slice. Place 1 slice cheese on each unbuttered side of bread. Toast bread slices, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 4-5 minutes., Layer 1 toast with lettuce, tomato, turkey and avocado. Top with another toast and spread with blue cheese spread. Top with chicken, ham, bacon and egg. Top with remaining toast, cheese side down. Cut sandwich in half, secure with toothpicks and serve.

One 5 1/2 to 6 pound whole turkey breast with skin and bone
1 large onion, chopped
3 carrots, chopped
2 bay leaves
1 teaspoon whole black peppercorns
1/4 cup plus 2 tablespoons distilled white vinegar
6 bacon slices
1/2 pound poached turkey breast
4 slices pain de mie or other firm white sandwich bread (about 1/4 inch thick)
2 ounces blue cheese (softened)
2 tablespoons mayonnaise
1 firm-ripe California avocado
4 small crisp lettuce leaves (romaine)

Steps:

  • In a deep kettle combine the turkey breast with enough cold water to cover it by 1 inch and remove the turkey breast. To the kettle add the onions, the carrots, the bay leaves, the peppercorns, and the vinegar, bring the mixture to a boil, and add salt to taste. Return the turkey breast to the kettle and poach it, covered, for 30 minutes, and drain it, discarding the other solids.
  • In a skillet cook bacon over moderate heat until crisp and transfer to paper towels to drain. Toast bread and spread 2 slices with blue cheese and remaining 2 slices with mayonnaise. Thinly slice turkey diagonally. Pit and peel avocado and thinly slice. Divide turkey, bacon, avocado, and lettuce between blue-cheese bread slices and top with remaining 2 slices.

4 large eggs
1 1/8 teaspoons smoked paprika
Kosher salt and freshly ground pepper
1 1/2 pounds turkey cutlets
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 pint cherry tomatoes, halved
2 romaine lettuce hearts, chopped
1/2 avocado, peeled and chopped
1/4 cup crumbled blue cheese (about 1 ounce)

Steps:

  • Put the eggs in a medium saucepan and cover with water by 2 inches; bring to a boil, then remove from the heat, cover and let stand 10 minutes. Transfer to a bowl of ice water to cool.
  • Meanwhile, preheat the broiler. Combine 1 teaspoon paprika, 1/4 teaspoon salt, and pepper to taste in a small bowl. Arrange the turkey cutlets on a baking sheet and sprinkle both sides with the paprika mixture. Broil until just cooked through, about 3 minutes per side. Transfer to a plate and set aside while you make the dressing.
  • Combine the vinegar, the remaining 1/8 teaspoon paprika, 1/2 teaspoon salt, and pepper to taste in a large bowl. Whisk in the olive oil along with any collected juices from the turkey. Finely chop 1/4 cup of the tomatoes and add to the dressing.
  • Peel and halve the hard-boiled eggs. Discard the yolks or save for another use. Chop the egg whites and add to the bowl with the dressing, along with the lettuce, avocado and the remaining 1 3/4 cups tomatoes. Chop the turkey, add to the bowl and toss. Divide the salad among bowls and sprinkle with the blue cheese.

4 slices (4 ounces) bacon
3 tablespoons red-wine vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
Coarse salt and freshly ground pepper
1 large head romaine lettuce, shredded
8 ounces (2 cups) roasted turkey breast, cut into 3/4-inch dice
1 ripe avocado, pitted, peeled, and thinly sliced
3 ounces (3/4 cup) blue cheese, crumbled
2 hard-cooked eggs, cut into wedges
2 plum tomatoes, cut into 1/2-inch dice

Steps:

  • In a medium skillet, cook bacon over medium heat until crisp, 3 to 5 minutes. The bacon may also be cooked in a 425-degree oven on a rack over a rimmed baking sheet until crisp, about 15 minutes. Transfer to a paper towel-lined plate to drain. Let cool, then cut into 1/2-inch pieces, and set aside.
  • In a large bowl, whisk together vinegar, mustard, salt, and pepper. While continuing to whisk, drizzle in olive oil until thickened. Add lettuce, and toss to coat. Place on a large serving platter. Arrange remaining ingredients on lettuce as desired, and season with salt and pepper. Serve immediately.

1/2 teaspoon Dijon mustard
1 garlic clove, minced
1 small avocado, finely chopped
2 cups diced cooked turkey
1/2 cup seeded chopped tomato
2 ounces crumbled blue cheese
4 hardboiled egg, sliced
8 slices bacon, cooked until crisp
8 slices french sourdough bread, thick slices
2 cups shredded romaine lettuce

Steps:

  • In a medium bowl whisk together mayonnaise, mustard and garlic, season with salt and pepper to taste.
  • Add avocado, turkey, tomatoes and toss.
  • Toast bread slices and butter lightly.
