1 tablespoon olive oil
2 (1 1/2 pound) turkey tenderloins
Salt and ground black pepper
2 pounds new red potatoes or baby red potatoes, quartered (if bigger, cut into 2-inch pieces)
2 shallots, chopped
1 cup dry white wine
1 cup reduced-sodium chicken broth
2 tablespoons apple cider vinegar
2 tablespoons chopped fresh tarragon leaves
4 tablespoons store bought peach, cranberry or mango chutney

Steps:

  • Preheat oven to 400 degrees F.
  • Place oil in a large baking dish. Season turkey tenderloins all over with salt and black pepper and place in baking dish. Arrange potatoes all around turkey and turn to coat with oil. Season potatoes with salt and black pepper. Arrange shallots over potatoes in pan.
  • In a small bowl, combine wine, broth, vinegar, and tarragon. Pour mixture over turkey.
  • Roast turkey and potatoes 40 minutes, until an instant-read thermometer registers at least 160 degrees F. Let turkey rest 10 minutes before slicing crosswise into 1/2-inch thick slices. Serve half of the turkey and potatoes with this meal, with all of the broth from the pan over top. Serve spinach on the side. Reserve remaining turkey and potatoes for additional meals.

2 onions, cut into chunks
2 carrots, cut into chunks
3 stalks celery, cut into chunks
1 bunch fresh parsley
4 cloves garlic, smashed (unpeeled)
1 teaspoon black peppercorns
2 bay leaves

Steps:

  • Insert kitchen shears into the carcass and make a few cuts to get you started. Then, use your hands to carefully pull the carcass into 4 or 5 pieces.
  • Combine the carcass, onions, carrots, celery, parsley, garlic, peppercorns and bay leaves in a stockpot. Cover with cold water (about 7 quarts).
  • Bring to a boil, then reduce the heat to medium low. Simmer about 2 hours, occasionally skimming any foam or fat from the surface with a large spoon or ladle.
  • Pour through a large mesh strainer into a pot; discard the solids. Cool slightly, then refrigerate in covered containers for up to 3 days or freeze for up to 2 months.

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil and spray with cooking oil. Break up the carcass and place on the baking sheet.
  • Roast in the preheated oven for 20 minutes.
  • Combine celery, carrot, onion, and vinegar in a multi-functional pressure cooker (such as Instant Pot®). Add the roasted turkey bones and any liquid. Add enough water to cover the bones but not beyond the maximum level mark. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 60 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, in short bursts, about 5 minutes. Unlock and remove the lid. Remove solids and discard.
  • Strain stock through a fine-mesh strainer lined with a double layer of cheese cloth. Refrigerate; skim off the fat before using or freezing.

Steps:

  • Preheat oven to 425°F. Line a rimmed baking sheet or 13x9" glass or metal baking dish with parchment.
  • Beat egg in a large bowl with a fork. Add turkey, panko, scallion, garlic, soy sauce, ginger, and 1/2 tsp. salt and stir well to combine. Using your hands, roll mixture into 1" balls, packing firmly (you should have about 30). Transfer to prepared baking sheet.
  • Roast meatballs, turning once halfway through, until firm and cooked through and an instant-read thermometer inserted into center of meatball registers 165°F, 15-20 minutes.

  • To make plain noodles with no broth, divide noodles among bowls and top with meatballs, snap peas, and bell pepper, or separate into different sections on a plate.
  • Option 2: For a mild coconut broth noodle bowl:
  • Heat oil in a medium pot over medium. Add garlic and ginger and cook, stirring constantly, until fragrant, 30-60 seconds. Add coconut milk, broth, lime juice, soy sauce, and salt. Increase heat to medium-high and bring to a simmer. Cook, stirring occasionally, 5 minutes, then remove from heat.
  • Divide noodles among bowls. Ladle broth over and top with meatballs, snap peas, and bell pepper.
  • Option 3: For a spicy red curry noodle bowl (optional):
  • Whisk curry paste into coconut broth mixture (or keep half of broth "plain" to make 2 mild bowls, and whisk 2 Tbsp. curry paste into remaining half to make 2 spicy bowls).
  • Divide noodles among bowls. Ladle broth over and top with meatballs, snap peas, and bell peppers. Garnish with lime wedges, basil, scallions, chiles, peanuts, if using.

1 whole turkey, trimmed, innards reserved
Sea salt, as needed
20 cups water, or as needed to cover ingredients
2 onions, peeled and chopped
1 carrot, chopped
1 celery stalk, chopped
2 bay leaves
1 teaspoon black peppercorns
4 sprigs fresh thyme
4 sprigs fresh rosemary
2 tablespoons apple cider, white, or white wine vinegar

Steps:

  • Preheat the oven to 375°F.
  • Remove the breasts, thighs, and wings from the turkey carcass. Spread the turkey parts out in an even layer on a large baking sheet, along with the neck and any innards that came with the turkey. Dust everything with sea salt and place in the preheated oven. Roast until golden brown, about 40 minutes.
  • Transfer everything from the baking sheet to a large stockpot or slow cooker. Cover with the water and bring to a boil over medium-high heat, then reduce the heat to medium. Skim off the fat and scum that rises to the top and discard; this process takes about 1 hour. Add vinegar, peppercorns, thyme, and rosemary.
  • Continue to simmer for 8 hours, adding water as necessary just to keep the bones covered. Add vegetables in the last 5 hours of cooking.
  • Gently strain or ladle the liquid through a fine-mesh strainer into a container. Fill your sink with ice water. Place the container of broth in the ice bath to cool for 1 hour. Use the broth right away, or cover and refrigerate for up to 1 week, or freeze for up to 1 year.

Roasting/browning the turkey bones and vegetables firstly in the oven will create a more intense deep rich stock I would not even think of making stock without using this method and you will see the difference for yourself after you try this stock --- I use this stock in so many recipes I even make gravy with it and you will use this for so many things also, it is wonderful to have handy in the freezer, to thaw just microwave for a couple of minutes or refrigerate overnight -- serving amounts are listed for a 12-13 pound turkey and about 4 quarts of water, you may use a larger turkey with more water just make certain to use enough water to cover the carcass and veggies --- if possible don't discard all the extra bones from the legs, thighs and wings and add into the pot along with the carcass the more bones the better!

  • Pour the water over; bring to a boil over medium-high heat.
  • Reduce heat to low then cover and simmer for about 3-1/2 hours.
  • Carefully strain through a sieve over a large bowl and discard the solids.
  • Cool to room temperature then refrigerate overnight.
  • The following day skim any excess fat from the top of the broth.
  • Refrigerate for up to 3 days or separate into plastic containers and freeze for up to 6 months.

10 pounds turkey necks and wings, cut into 3- to 4-inch pieces
2 large carrots, cut into 2-inch pieces
2 large onions, cut into 2-inch pieces
2 celery stalks, cut into 2-inch pieces
20 cups water, divided
2 bay leaves
1 teaspoon whole black peppercorns
1/2 teaspoon salt

Steps:

  • Position rack in center of oven and preheat to 450°F. Divide turkey necks and wings between 2 heavy large rimmed baking sheets, spreading in single layer. Roast 30 minutes. Using tongs, turn turkey parts over; scatter carrots, onions, and celery over, dividing equally. Roast until turkey parts are golden brown, about 1 hour longer.
  • Transfer turkey parts, vegetables, and any pan juices to heavy large pot. Place each baking sheet over 2 burners; add 1 cup water to each sheet and bring to boil, scraping up any browned bits. Pour mixture into pot with vegetables. Add bay leaves, peppercorns, salt, and remaining 18 cups water to pot; bring to boil. Reduce heat to medium-low, cover partially, and simmer gently for 2 1/2 hours. Strain broth and cool slightly. Do ahead: Can be made 2 days ahead. Refrigerate uncovered until cold, then cover and chill. Before using, scrape any fat from surface of broth; reserve fat for gravy.

GARLIC BROTH WITH BASMATI RICE, TURKEY AND SQUASH

This is the kind of soup you can whip up on a whim if you have garlic on hand and either summer or winter squash. You can make a vegetarian version of the soup just by eliminating the turkey. Otherwise it is one more healthy option for your Thanksgiving leftovers. When I made the soup the first time I used a lingering half-zucchini that I found in my sister's refrigerator. At this time of year you might be more likely to have winter squash on hand. Either will work. Winter squash will take 10 to 15 minutes longer to cook.

Steps:

  • Combine water, garlic, salt, bay leaf and thyme in a soup pot or saucepan and bring to a boil. Reduce heat to low, cover and simmer 30 minutes. Taste and adjust salt. If you want a stronger flavor, simmer for another 5 to 10 minutes.
  • Using a skimmer or a slotted spoon, remove garlic, bay leaf and thyme sprigs from broth. Bring back to a simmer and add rice and winter squash if using (but not the zucchini). Cover and simmer 10 minutes, or until rice and squash are tender.
  • If using zucchini, add when rice is tender and simmer another 5 to 10 minutes, until soft but still bright. Stir in parsley and turkey and heat through. Taste, salt and pepper if desired, and serve.

2 smoked turkey legs
1 large red onion, cut in half
1 large Spanish onion, cut in half
1 large carrot, cut in thirds
1 large red bell pepper, seeded
1 tablespoon olive oil
7 quarts cold water
5 cloves garlic, lightly smashed
10 whole black peppercorns
salt to taste
1 cup water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Brush the turkey legs, red onion, Spanish onion, carrot, and red bell pepper with olive oil; place into a roasting pan.
  • Roast in the preheated oven until the turkey and vegetables turn brown, about 15 minutes.
  • Pour 7 quarts water into a large stockpot over medium heat. Add the roasted turkey and vegetables, the garlic, and black peppercorns to the water and bring to a boil. Reduce heat to a simmer.
  • Place the roasting pan over a stove burner (two burners, if it will fit) and heat until the drippings sizzle. Pour in 1 cup of water and scrape up and dissolve all the browned flavor bits from the roasting pan into the water. Pour the drippings mixture into the stock.
  • Simmer for 6 hours, periodically skimming and discarding the foamy scum that forms on the top of the broth. Pour the stock through a strainer, discarding the turkey and vegetables (they have given up all their flavor). Cool and store in airtight containers. Can be frozen.

  • Broth:
  • Heat oil in a large stockpot over medium. Cook onion, garlic, lemongrass, ginger, jalapeño, and cilantro stems, stirring occasionally, until lightly browned, about 5 minutes. Add wings and 10 cups water. Bring to a boil, reduce heat, and simmer until turkey meat is tender, 45-60 minutes. Strain into a large saucepan; reserve wings. Add hon-dashi and soy sauce to broth, adding more to taste if needed. Cover and keep warm. Pick meat from wings and set aside.
  • Do Ahead
  • Broth can be made 3 days ahead; cover and chill broth and meat separately.
  • Soup and assembly:
  • Cook bok choy in a large pot of boiling salted water until crisp-tender, about 1 minute. Transfer to a colander with a slotted spoon.
  • Return water to a gentle boil and carefully lower eggs into water; cook 6 minutes. Transfer to a bowl of ice water to cool. Peel and halve lengthwise. Return water to a boil and cook spaghetti, stirring occasionally, until al dente. Drain, then toss with sesame oil in a large bowl. Divide spaghetti among bowls. Ladle in broth and add kimchi, bok choy, eggs, and reserved turkey meat. Top with mushrooms, sprouts, and cilantro. Serve with lime wedges.

1 cooked turkey carcass (cooked turkey bones)
1 c carrots, cut into chunks
a handful celery sticks
1 large onion, cut into chunks
a few sprigs of fresh parsley

Steps:

  • 1. Place all ingredients into Instant pot.
  • 2. Add water to max level.
  • 3. Cover and lock the lid. Make sure the steam releasing handle is pointing to sealing.
  • 4. Set the Instant Pot to Program Soup/Broth. Adjust the time to 120 minutes.
  • 5. When cook time has finished, press CANCEL; Let pressure release naturally and let broth cool a while.
  • 6. When pressure is completely down and broth has cooled to a manageable temperature, with a slotted spoon, cast away the large pieces of bone and vegetables.
  • 7. In a large container (I use Party Time Ice Cream containers, they are great for this) Place a mesh strainer over the top and pour the broth through. (There should be no vegetables, bone or meat in the broth.)
  • 8. This recipe will make about 2 quarts or so of broth.
  • 9. To freeze, divide broth into plastic containers and freeze for up to 3 months.
  • 10. At this point you can either freeze the broth or can it.
  • 11. To Can this recipe. Sterilize 9 pint size jars, rings and lids.
  • 12. Pour broth into jars leaving 1 inch of headspace. Add 1/2 teaspoon of canning salt if you'd like. I prefer to keep mine unsalted until I cook with it.
  • 13. Wipe rims jars with a clean wet cloth. Place sterilized lids onto jars and screw on rings to fingertip tight.
  • 14. Place jars into a pressure canner on rack. Add hot water just enough to produce the steam needed to can.
  • 15. Can at 10 lbs. of pressure for up to 1000 ft. above sea level and 15 pounds of pressure to over that. Can the jars for 25 minutes.
  • 16. NOTE: Use a pressure canner for this step, NOT the instant pot!
  • 17. When canning is done, allow pressure to come down naturally. Remove jars with canning tongs and allow to cool completely.
  • 18. When cooled, label jars and put on a dark shelf in the pantry and store up to 1 year.
  • 19. Your soups will taste amazing!

1 cup farfalle pasta (bowtie)
1 fennel bulb, halved, cored and thinly sliced

Steps:

  • In a medium bowl, combine turkey, garlic, egg, bread crumbs, 1/2 cup parsley, salt and pepper, and mix well with your hands. Using a teaspoon, form 1-inch meatballs, and refrigerate until ready to use.
  • In a large saucepan, heat 3 tablespoons of stock over medium heat. Add onion and saute until translucent, about 3 minutes.
  • Raise heat to medium high, add carrots and remaining stock, and bring to a gentle boil. Add pasta; cook for 5 minutes.
  • Lower heat to medium, add meatballs, and simmer gently until meatballs are cooked through, about 10 minutes.
  • Remove from heat, and stir in fennel and remaining parsley.
  • Adjust seasoning with salt and pepper to taste.

3 lbs turkey wings, and necks
turkey giblets (excluding liver)
1 carrot, coarsley chopped
2 celery ribs, coarsley chopped
1/2 teaspoon dried thyme leaves
4 parsley sprigs
1/4 teaspoon black peppercorns
1 bay leaf
4 quarts water

Steps:

  • Using a heavy cleaver, chop 3 pounds turkey wings into 2-inch pieces (or ask the butcher to do them for you).
  • In a large stockpot heat 2 tablespoons vegetable oil.
  • Add the giblets reserved from the turkey.
  • Cook, stirring, over medium-high heat until browned, 5 to 7 minutes.
  • Remove them with a slotted spoon and set aside.
  • In batches, add the chopped turkey wings to the pot, adding more oil if needed, and cook, turning occasionally, until browned, 8 to 10 minutes per batch.
  • Return the giblets and wings to the pan.
  • Add vegetables and cook until softened, about 5 minutes.
  • Add 4 quarts water, or enough to cover the ingredients by at least 2 inches.
  • Bring to a boil, skimming off all the foam that rises to the top.
  • Reduce heat to low, and add spices.
  • Simmer uncovered 2 to 3 hours.
  • Strain the broth and let cool; skim all the fat from the top before using.

Old Thyme Turkey Scotch Broth With Barley, Beans and Lentils image

A fabulous and hearty way to serve the leftovers from your celebration turkey! A light Scotch broth style soup with added pearl barley, swede (rutabaga), potatoes and assorted beans and lentils. You can add any vegetables that you have available; leeks and celery are also great in this broth. I use a special dried pulses mixture that I buy in the UK called Soup and Broth Mix - this is made up of mixed dried peas, mixed dried beans, mixed lentils, mixed dried vegetables and pearl barley. This broth can be frozen, but ONLY if the turkey was fresh and not frozen before roasting - and once defrosted, it can only be reheated once. I have used a high proportion of pulses to broth ratio in this recipe, as we like it very thick and chunky - please adjust the pulses to your own requirements and preferences.

leftover whole cold roast turkey
4 pints water
1 bunch fresh thyme
2 onions, peeled and diced
2 large carrots, peeled and diced
1 small swede or 1 small rutabaga, peeled and diced
2 large potatoes, peeled and diced
6 ounces mixed dried pulses, such as split peas, dried beans, red lentils, green lentils, and brown lentils
2 ounces pearl barley
thyme
salt and pepper
1 large leek, cleaned and cut into small pieces (optional)
1 stalk celery, cleaned and diced (optional)

Steps:

  • THE NIGHT BEFORE:.
  • Soak ALL of your dried pulses, beans, lentils and pearl barley overnight. The next morning/day or just before making the broth - discard the water and rinse the pulses well; set to one side until needed.
  • TO MAKE THE TURKEY STOCK.
  • Cut up the turkey in small pieces, place in a large stockpot or saucepan with the thyme and add to the water.
  • Simmer slowly until the bones are quite clean.
  • Take the bones out, discard the skin, and put all the turkey meat to one side; then work the stock through a sieve, making sure there are no small bones left in the stock.
  • When cool, skim the fat of the top.
  • You will be left with turkey stock and chunks of turkey meat.
  • TO MAKE THE BROTH.
  • Place the turkey stock back into a large stockpot or saucepan, then add the turkey meat, and any other cold cuts of turkey you may have.
  • Add the diced onion, diced carrots, diced swede (rutabaga), diced potatoes and all the soaked pulses and the pearl barley. Mix well.
  • Simmer for about 45 minutes to 1 hour, or until the vegetables are soft and the pulses are cooked and do not have a "bite" to them.
  • Add the fresh thyme, then the salt and pepper to taste; simmer for a further 10 to 15 minutes or until piping hot, but NOT boiling.
  • Serve with dumplings, fresh crusty bread, crackers or assorted bread rolls.

I've made a variation of this recipe, using turkey thighs or drumsticks for the wings. I love it. You can make it in advance and then just make your gravy when needed.

1 t. canola oil
3 lbs. turkey wings, cut into 2 inch pieces
turkey giblets and neck from 1 twelve pound turkey
1 cup chopped onion
1/4 cup chopped celery
8 cups water

Steps:

  • 1. Heat oil in large Dutch oven over medium high heat. Add turkey wings, giblets and neck; sauté 15 minutes or until well browned. Cover and reduce heat to low; cook 5 minutes. Stir in onion and celery. Cover and cook 10 minutes, stirring occasionally. Add 8 cups water, bring to a boil. Cover and reduce heat. Simmer 30 minutes. Strain broth through a fine sieve into a large bowl; discard solids. Cool to room temperature. Cover and chill 8 hours or overnight. Skim solidified fat from surface of broth. Discard. 1 tablespoon olive oil
2 (1 1/2 pound) turkey tenderloins
Salt and ground black pepper
2 pounds new red potatoes or baby red potatoes, quartered (if bigger, cut into 2-inch pieces)
2 shallots, chopped
1 cup dry white wine
1 cup reduced-sodium chicken broth
2 tablespoons apple cider vinegar
2 tablespoons chopped fresh tarragon leaves
4 tablespoons store bought peach, cranberry or mango chutn

Steps:

  • Preheat oven to 400 degrees F. Place oil in a large baking dish. Season turkey tenderloins all over with salt and black pepper and place in baking dish. Arrange potatoes all around turkey and turn to coat with oil. Season potatoes with salt and black pepper. Arrange shallots over potatoes in pan. In a small bowl, combine wine, broth, vinegar, and tarragon. Pour mixture over turkey. Roast turkey and potatoes 40 minutes, until an instant-read thermometer registers at least 160 degrees F. Let turkey rest 10 minutes before slicing crosswise into 1/2-inch thick slices. Serve half of the turkey and potatoes with this meal, with all of the broth from the pan over top. Serve spinach on the side. Reserve remaining turkey and potatoes for additional meals.
