Zucchini Corn Fritters image

A delicious use of zucchini that often comes in abundance this time of year. This recipe uses a large zucchini and these will disappear so fast you won't believe it.

Number Of Ingredients 11

1 large zucchini, peeled, seeded, shredded and squeezed to remove moisture. approx 2 1/2 to 3 cups
2 ears of corn, removed from cob
1/2 medium onion, grated
1 box(es) corn muffin mix (jiffy)
1/2 cup(s) flour
1 egg
1/3 cup(s) heavy cream
1/2 teaspoon(s) thyme, dried
1/2 teaspoon(s) ground rosemary
1/2 teaspoon(s) garlic powder
1/4 teaspoon(s) seasoned salt

Steps:

  • Mix all ingredients until well blended. Let batter sit for a few minutes.
  • Heat a small amount of vegetable oil in skillet. Drop by tablespoons into skillet 3-4 at a time. Fry 4-5 minutes on each side.
  • Remove from skillet and drain on paper towels. Salt and pepper to taste and serve with your favorite sauce or jam.
