Steps:

  • Mix turkey, brown sugar, salt, black pepper, sage, thyme, marjoram, and red pepper flakes in a bowl. Shape turkey mixture into patties.
  • Fry patties in a large skillet over medium-high heat until golden brown and no longer pink in the center, 6 to 8 minutes.

1 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon fennel seed
1/2 teaspoon dried thyme

Dash each white pepper, cayenne pepper, ground allspice, ground cloves and ground nutmeg

Steps:

  • In a large bowl, combine all ingredients. Shape into eight 2-1/2-in. patties. Cover and refrigerate for at least 1 hour. , In a large skillet coated with cooking spray, cook patties over medium heat for 4-6 minutes on each side or until no longer pink. , Freeze option: To freeze, wrap each patty in plastic wrap; transfer to a resealable plastic freezer bag. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

1 lb turkey sausage
1 can cannellini bean, rinsed and drained
1 can diced tomato, drained
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
4 eggs, beaten
4 cups spinach
greek yogurt
2 ripe avocados
6 whole wheat flour tortillas

Steps:

  • Heat the oil in a large nonstick skillet over medium-high heat.
  • Toss in the sausage and break up with a wooden spoon until brown.
  • Pour in the beans, tomatoes, salt, pepper, and thyme, and mix until everything has warmed through.
  • Move the contents of the pan out of the way to form an open well in the center of the pan. Pour the eggs into the well, and as the bottom of the eggs start to cook and solidify, use a spatula to gently scrape the cooked bits off the bottom and slowly mix with the other contents of the pan.
  • Add the spinach to the pan and mix.
  • Spoon a portion of the mixture onto a warmed tortilla, top with avocado slices and Greek yogurt, and roll the tortilla into a burrito.
  • Enjoy!

After viewing some recipes that advise to cover and refrigerate before cooking, I will prepare again, using that method. My daughter and I enjoyed them. Hope you will too. And as with all of my recipes, there is no salt added. Unfortunately, the site does not recognikze Mrs. Dash, so the sodium levels are alway incorrect.

1 lb 93% lean ground turkey
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 teaspoon Mrs. Dash table blend seasoning
1/2 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1 garlic clove, minced
1 tablespoon pure maple syrup
1 pinch nutmeg
cooking spray
1 teaspoon olive oil

Steps:

  • Combine ground meat with all ingredients, up to and including the nutmeg. Cover the bowl and refrigerate for at least 1 hour or overnight. Form the mixture into 8 patties or links if you prepfer. Two ounc each. When ready to cook. Spray a skillet with cooking spray and heat over med-high heat. Add the oil. When the pot is hot, add the patties and cook for about 4 minutes. Spray the top of the patties and flip, to cook the other side. Cook for an additional 4 minutes or until done. Transfer the patties to a plate lined with paper towel to drain. Serve and Enjoy. 1 serving equals to patties.

3 slices whole wheat bread, crusts removed
1/2 onion, cut in large chunks

  • Tear bread into large pieces and place in food processor. Add onions and all seasonings. Pulse until everything is in uniform crumbs. Add chicken broth and pulse until combined. The amount of broth will depend on the dryness of your bread - it should have the consistency of oatmeal. (And yes, it looks pretty disgusting).
  • Add bread mixture to the turkey in the bowl and combine thoroughly (I use my hands for this). Cover and refrigerate overnight to let flavors blend.

I think this is the most excellent and healthy way to eat breakfast sausage. Low fat and better for you heart! I usually double or triple my recipe and freeze the patties for future meals or snacks! Very inexpensive to make. Did I mention they are so yummy!

1 teaspoon sage (ground or rubbed)
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes

  • Heat up skillet and spray with cooking spray.
  • Cook patties until no longer pink inside.

Arugula Pesto, Egg and Turkey Sausage Breakfast Sandwiches image

Peppery arugula is the standout ingredient in these satisfying breakfast sandwiches. Warmed and then wrapped in foil, they're a great to-go breakfast option.

3 cups arugula
1/2 cup sliced almonds
1 small clove garlic, peeled
1/2 cup grated Parmesan cheese
1/2 cup olive oil
1 tablespoon vegetable oil
2 patties turkey breakfast sausage
3 eggs
Salt and pepper
1 tablespoon Arugula Pesto
2 slices provolone cheese
2 whole wheat English muffins, split, toasted

Steps:

  • In food processor, place arugula, almonds, garlic and Parmesan cheese. Cover; process with on-and-off pulses until coarsely chopped. With processor running, slowly pour in olive oil, processing until blended. Scrape pesto into container with lid. Store in refrigerator until ready to use.
  • In 8-inch nonstick skillet, heat vegetable oil. Add sausage patties; cook until browned and meat thermometer inserted in center of patties reads 165°F. Remove sausage patties from skillet; drain on paper towels.
  • In small bowl, beat eggs well with whisk. In same skillet over medium-low heat, add eggs; sprinkle with salt and pepper to taste. Cook and stir egg to scramble, cooking until just about set. Stir in pesto; cook until set.
  • Place 1 slice of provolone cheese on bottom halves of English muffins. Top each with sausage patty and eggs. Cover with top halves of muffins. Serve warm.

This is really quick and easy to make. I usually make a double batch and freeze individual patties to keep in my freezer for breakfast. I have another turkey sausage recipe, but I've since found this one and like it much better. These can be cooked in a skillet or on a George Foreman grill.

1/8 cup warm water
1 teaspoon sea salt
1 pinch nutmeg
1 pinch allspice
1 teaspoon garlic powder
1 teaspoon sage
1/4 teaspoon thyme
1 pinch mustard powder
1 pinch lemon peel

Steps:

  • Place meat in a medium sized bowl.
  • Add spices to water and blend well.
  • Pour spice blend over meat and mix well.
  • Make into patties of desired shape.
  • Cook until center is no longer pink.
