- Heat broiler. On a baking sheet, toss turkey cutlets with olive oil, salt, and pepper. Broil until cooked through, 6 to 8 minutes. Transfer to a plate; wipe sheet with paper towels.
- In a bowl, combine chutney and mustard. Place bread slices on sheet. Layer 4 slices with chutney mixture, turkey, Havarti cheese, and apple.
- Broil until cheese melts and bread is toasted, 5 minutes. Top with lettuce and remaining toast.

- Spread each of 4 slices of bread with 1/2 tablespoon of butter. Now spread each with 1 tablespoon of the apple butter. Top each slice of bread with a couple of slices of turkey, cover that with 2 to 3 slices of brie (enough to cover the turkey), and finally, arrange 2 to 3 arugula leaves on top. Spread the remaining 4 bread slices with 1/2 tablespoon of butter and lay them, buttered sides down, over the cheese; press gently.
- Heat a large cast-iron or other heavy skillet over medium-low heat. Add the remaining 1 tablespoon butter and let it melt to evenly coat the bottom of the pan. Add as many sandwiches as will comfortably fit and cook 2 to 3 minutes until the bread is golden brown and the cheese begins to melt.
- Flip and cook 2 to 3 more minutes to brown the bread. (Add another tablespoon of butter and cook the remaining sandwiches, if you need to.) Cut the sandwiches in half and serve hot.

- - Begin by preheating your panini press, grill pan, skillet or oven. If using a grill pan or skillet heat over medium heat; if using an oven set to broil (low if that's an option). - Start building the sandwich by laying out your sandwich bread and lightly brushing the insides with olive oil. On one piece of bread, spread apple butter; on the other mayonaise. You don't need much of either. - Cut the brie into thin slices. To make the brie easier to slice (and to remove the rind, if you're like me and want your cheese to be free), put the brie in the freezer for 20-30 minutes. Use a serrated knife with long, smooth, strokes for happy brie slicing. Place one layer of brie slices on one piece of the bread. - Next, thinly slice your apple of choice. I used a Granny Smith but you can use what you'd like, just make sure it's nice and crispy. Top the layer of brie with a layer of apple slices. - Add the turkey* on top of the apple. (I used turkey breast from my local deli, which was fine but I can't wait to try it with that leftover turkey from Thanksgiving!) (*As I mentioned, I also made a version without the turkey, adding a second layer of brie in place of the turkey for a fancy pants grilled cheese.) - Salt and pepper to your liking. I like lots of pepper. - If you're using a panini press, grill pan or skillet, lightly brush the heated surface with olive oil before placing the sandwich on.

- Combine mustard and honey in a small bowl. Spread one side of each of 4 bread slices with 1 1/2 teaspoons mustard mixture.
