BAKED SPINACH, FETA, AND TURKEY MEATBALLS

Baked Spinach, Feta, and Turkey Meatballs image

These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets." Did you know that a combine is a giant tractor that harvests crops from the field? Well, I most certainly didn't until my 3-year-old told me! Therefore, thanks to the hardworking combines we can put the green things in our nuggets.

Provided by Stephen Simons

Categories     Main Dish Recipes     Pasta

Time 1h

Yield 6

Number Of Ingredients 10

1 (16 ounce) package orecchiette pasta
1 (10 ounce) package fresh spinach
12 ounces sweet Italian turkey sausage, casings removed
5 tablespoons extra-virgin olive oil, divided
4 cloves garlic, thinly sliced
½ teaspoon salt
1 pinch red pepper flakes
1 large egg
salt and ground black pepper to taste
½ cup grated ricotta salata cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in orecchiette and return to a boil. Cook uncovered, stirring occasionally, until tender still firm to the bite, about 12 minutes.
  • Place spinach in a large colander. Scoop out 1 cup pasta cooking water and reserve. Drain pasta in the colander, wilting the spinach.
  • Roll turkey sausage meat into 20 to 30 balls.
  • Heat 1 tablespoon olive oil in a large, deep skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned and no longer pink in the center, 5 to 6 minutes. Drain on paper towels.
  • Pour off any drippings left in the skillet. Heat 3 tablespoons olive oil over medium heat. Stir in garlic, salt, and red pepper flakes until fragrant, about 1 minute. Add cooked pasta, spinach, and meatballs to the skillet.
  • Whisk reserved pasta water and egg together in a small bowl. Stir into the skillet until sauce thickens slightly, 3 to 4 minutes. Season with salt and pepper.
  • Divide pasta among bowls. Sprinkle with ricotta salata cheese and drizzle with remaining 1 tablespoon olive oil.

Steps:

  • Directions Preheat oven to 375 degrees. Season cut sides of squash with 1/4 teaspoon salt. Bake, cut sides down, on a baking sheet until tender, about 45 minutes. Let stand until cool enough to handle. Scrape flesh into strands using a fork. Let drain, covered to keep warm, in a colander set over a bowl. Meanwhile, heat 1 teaspoon oil in a medium skillet over medium heat. Cook onion and garlic, stirring, until soft but not brown, 8 to 10 minutes. Add oregano; cook until fragrant, about 30 seconds. Divide mixture between 2 bowls. Stir 1 tablespoon plus 1 1/2 teaspoons cheese into 1 bowl of onion-garlic mixture. Mix in breadcrumbs, turkey, 1/2 teaspoon salt, and 1/4 teaspoon pepper using your hands. Form mixture into 12 balls. Heat 2 teaspoons oil in a large skillet over medium heat. Brown meatballs, turning, 4 to 6 minutes; transfer to a plate. Add remaining teaspoon oil to skillet. Cook mushrooms, 1/4 teaspoon salt, and 1/8 teaspoon pepper, adding a few tablespoons water if skillet browns too quickly, until soft and beginning to brown, 6 to 8 minutes. Add remaining bowl of onion-garlic mixture, meatballs, and stock; bring to gentle simmer. Cook, partially covered, until meatballs are cooked through, 4 to 5 minutes. Add spinach; cook until just wilted, about 1 minute. Divide squash and meatball mixture into 4 servings. Sprinkle with remaining cheese. Time 1h5m

Number Of Ingredients 14

1/2 c old fashion or instant oatmeal (uncooked)
1/4 c plain greek yogurt
1/4 c water
1 c fresh chopped spinach
1/4 c fresh chopped basil or 1 tsp dried basil leaves
1/4 c grated romano cheese ( or similar)
1 egg
1 lb ground turkey
3 clove garlic - minced (divided in half)
1 tsp salt and pepper
1 tsp olive oil or olive oil spray
1 - 28 oz can(s) diced tomatoes (w/ italian seasonings)
1/2 c dry red wine
8 oz pasta of choice

Steps:

  • 1. Heat oven to 400˚. Mix oats and yogurt with 1/4 cup water in a bowl until oats begin to absorb liquid. Add spinach, basil, grated cheese, egg , "half" the garlic, salt and pepper, and stir. Add turkey and mix until well combined.
  • 2. Form into 2-inch meatballs (about 28). Coat a large, oven-safe, 12" sauté pan, casserole dish, or stockpot with olive oil/spray. Add meatballs -- bake uncovered on bottom rack, until they begin to brown, about 15 minutes. Turn and bake 10 minutes more.
  • 3. Add remaining garlic, undrained tomatoes, and wine. Cover and cook until meatballs are cooked through and sauce begins to thicken, 25 minutes. (The sauce is not very thick, but its a nice sauce - add a tsp. tomato paste if you want thicker sauce.) Serve immediately with pasta and extra grated cheese. YUM!
