2 tablespoons extra virgin olive oil
1/2 medium red onion, minced
4 garlic cloves, minced
2 pounds ground turkey meat (preferably dark meat, not breast meat)
1/2 teaspoon salt
1 teaspoon black pepper
1/2 cup loosely packed chopped parsley
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh sage
2 teaspoons chopped fresh thyme
To serve:
Burger buns
Toppings like sliced onions, lettuce, sliced tomatoes, bacon , mayonnaise , mustard, relish, and/or ketchup

Steps:

  • Sauté the onions and garlic: Sauté the chopped onion in olive oil for 3 minutes over medium heat. Add the garlic and sauté for another 2 minutes, or until the garlic begins to brown. Remove from heat. Transfer the onions, garlic, and oil to a large bowl to cool down.
  • Make the burger mix: Once the onions are cool to the touch, add the ground turkey, salt, pepper, and herbs into the bowl. Using your hands, gently mix everything until well combined. You want the herbs mixed in without overworking the meat (which would make the burgers tough).
  • Form the meat into patties: Use your fingers to form a slight indentation in the middle of the patties. When burgers cook, the meat contracts from the edges. If the middle part is slightly thinner than the edges it will help the patties finish with a more even shape and less of a bulge in the middle.
  • Cook the burgers: Cook on a hot grill or in a hot cast iron frying pan for 5 to 6 minutes per side, until cooked through (165°F if using a meat thermometer). If using a grill , first pre-heat the grill on high for 10 minutes and coat the grates with a little vegetable oil. If using a frying pan , put a little oil in the pan first to help keep the burgers from sticking. A trick my mother uses when making burgers in a cast iron frying pan is to sprinkle the bottom of the pan with a little salt. The salt acts sort of like ball bearings, keeping the patties from sticking when you go to flip them.
  • Serve the burgers: Toast the buns and serve the burgers with the accompaniments of your choice-sliced onions, lettuce, sliced tomatoes, bacon, mayonnaise (especially good with mayo), mustard, relish, and/or ketchup.

1/3 cup finely chopped onion
3 tablespoons minced fresh parsley
2 tablespoons lemon juice
1 tablespoon grated lemon zest

1 teaspoon caraway seeds, crushed

1/2 teaspoon pepper
1 pound lean ground turkey
1 tablespoon olive oil
6 whole wheat sandwich rolls, split

One 12- to 14-pound fresh turkey
Kosher salt and freshly ground black pepper
2 tablespoons finely minced fresh oregano
2 tablespoons finely minced fresh parsley
2 tablespoons finely minced fresh tarragon
1 tablespoon ground sumac
1 tablespoon finely minced fresh thyme
1 teaspoon finely minced shallots
Grated zest of 6 lemons (use 3 of the zested lemons below)
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
10 sprigs fresh parsley
10 sprigs fresh thyme
3 lemons, halved
1 shallot, halved
3 carrots, roughly chopped
3 stalks celery, roughly chopped
1 onion, roughly chopped
Water or stock, for the roasting pan
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • For the turkey: Twenty-four hours before cooking your turkey, liberally season the inside and outside of the bird with salt and pepper. Using a mini chopper or mortar and pestle, grind the oregano, parsley, tarragon, sumac, thyme, shallots and lemon zest together with some salt and pepper; the salt will help draw the moisture and flavor from the mixture. Add the olive oil to form a paste. Spread the herb mixture all around the inside and outside of the turkey. Refrigerate the turkey, uncovered to dry the skin, for 24 hours.
  • For the roasting: Remove the turkey from the fridge 90 minutes before roasting and allow it to come to room temperature.
  • Preheat the oven to 450 degrees F.
  • Season the turkey again with salt and pepper. Put the parsley and thyme sprigs in the cavity with the lemon and shallot halves.
  • Put the carrots, celery and onions in the bottom of a roasting pan fitted with a roasting rack. Add a cup of water or stock to the bottom of the pan. Add the turkey to the rack and roast, adding a little more water or stock to the pan if necessary to prevent the drippings from burning, for 30 minutes. Reduce the temperature to 350 degrees F and continue to roast, basting the turkey with the pan drippings every 30 minutes, until the thickest part of the leg registers an internal temperature of 155 degrees F, another 2 1/2 to 3 hours. Allow the bird to rest, tented with foil, for at least 1 hour before carving. The temperature will rise to about 165 degrees F during resting.
  • Pour the pan drippings into a saucepan, set the pan over medium-high heat and cook until reduced by one-half, about 10 minutes. Stir in the butter until melted. Pour the reduced turkey drippings over the carved turkey just before serving.

1 pound pasture-raised, skinless, boneless chicken breast, cut into large chunks (or you can use ground pasture-raised chicken or turkey)
1 medium onion, diced
1 garlic clove, minced
1/4 cup chopped fresh parsley
2 teaspoons chopped fresh thyme
Zest and juice of 1 lemon
Sea salt to taste
2 tablespoons coconut oil
4 gluten-free buns, such as Sami's Bakery buns
1 handful mâche lettuce, baby spinach, or arugula
For the Thousand Island Dressing:
1 1/2 cups (about 4) quartered plum tomatoes
1/2 cup raw macadamia nuts or cashews
2 garlic cloves
1/8 cup lemon juice
1/8 cup extra-virgin olive oil
1 teaspoon sea salt
2 dill pickles, minced
For the Garnish:
2 tablespoons coconut oil
1 large red onion, sliced into thin rounds

Steps:

  • First, make the dressing. In a blender, purée the tomatoes, nuts, garlic, lemon juice, olive oil, and salt for 45 seconds, until the mixture is thick and creamy. Transfer the contents to a small bowl and stir in the minced pickles. Set it aside. (Any extra dressing can be stored in the fridge for up to three days.)
  • To prepare to garnish, heat the coconut oil in a skillet set over medium-high heat. Sauté the onions until they are slightly caramelized, then set them aside.
  • For the burgers, in a food processor purée the chicken, onion, and garlic until everything is well combined. Transfer it to a large bowl and add the parsley, thyme, lemon zest, lemon juice, and salt. Blend the mixture well with your hands, then form it into four equal-size burgers.
  • In a large skillet set over medium-high heat, melt the coconut oil, then add the burgers. Allow them to brown on one side for several minutes before flipping them and browning the other side. If you are not serving these right away, you can transfer them to a heated oven at this point to keep them warm.
  • When the burgers are ready, serve them on buns topped with the fresh greens and sautéed red onion, and with a side of Thousand Island Dressing.

1/2 cup finely diced onion
1/2 cup finely diced red bell pepper

1 large garlic clove, green shoot removed, minced
2/3 cup finely grated carrot (1 large carrot)
1 1/4 pounds lean ground turkey breast, preferably organic, from humanely raised turkeys
1 tablespoon prepared barbecue sauce
1 tablespoon ketchup
Freshly ground pepper to taste
Canola oil for the skillet
Whole grain hamburger buns

Steps:

  • Heat the olive oil over medium heat in a medium skillet and add the onion. Cook, stirring, until it begins to soften, about 3 minutes, and add the diced red pepper and a generous pinch of salt. Cook, stirring often, until the vegetables are tender, about 5 minutes. Stir in the garlic and the grated carrot and cook, stirring, for another minute or two, until the carrots have softened slightly and the mixture is fragrant. Remove from the heat.
  • In a large bowl, mash the ground turkey with a fork. Add about ¾ teaspoon kosher salt if desired, and mix in the barbecue sauce, ketchup, and freshly ground pepper to taste. Add the sautéed vegetables and mix together well. Shape into 6 patties, about ¾-inch thick. Chill for 1 hour if possible to facilitate handling.
  • Heat a nonstick griddle or a large nonstick frying pan over medium-high heat and brush with a small amount of canola oil, or prepare a medium-hot grill. When you can feel the heat when you hold your hand above it, cook the patties for 4 minutes on each side. Serve on whole grain buns, with the condiments of your choice.

1 egg

2 long crusty breadsticks
lettuce leaf
2 tomatoes, sliced

Steps:

  • Prepare and heat the barbecue.
  • Place ground beef in mixing bowl and combine with the herbs, lemon juice, breadcrumbs, egg, and salt and pepper.
  • Mix with your hands until well combined.
  • Divide in to 8 portions.
  • Shape the portions in to rectangular shaped patties about 6 inches long.
  • Place on a hot barbecue plate and cook for 8-10 minutes each side, until well browned and cooked through.
  • Cut each bread stick in to 4 sections, then each piece in half horizontally.

2 shallots, minced
1 pound ground turkey

Steps:

  • Heat 1 tablespoon oil in a medium saute pan over medium heat. Add shallots; cook, stirring, until they are soft and translucent, about 2 minutes. Remove from heat, and set aside.
  • In a large bowl, mix together turkey, mint, parsley, 2 teaspoons of mustard, and shallots. Season with salt and pepper. Divide into four equal parts, and form into patties.

My usual "beef" with turkey burgers (haha) is that they often end up kind of dry and bland. Not these. They are juicy and so flavorful. The secret? A good amount of harissa and lots of aromatics mixed into the burger patties, then topping them with a quick yogurt sauce made with lemon, mint and more harissa.

1 pound ground turkey
2 heaping tablespoons harissa (or less, if desired)
1 small onion, grated
2 cloves garlic, minced
2 tablespoons chopped fresh herbs of your choice (I use basil)
3/4 cup panko
1 large egg (or 2 large egg whites if you prefer)
Kosher salt and freshly ground black pepper
3 or 4 burger buns
Baby spinach and sliced red onions, for serving
One 6-ounce container Greek yogurt or sheep's milk yogurt
2 teaspoons harissa
1 tablespoon grated onion
1 clove garlic, minced
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh mint
Kosher salt and freshly ground black pepper

Steps:

  • Prepare the burgers: Line a baking sheet with aluminum foil or coat with cooking spray.
  • Combine the turkey, harissa, onion, garlic, herbs, panko, egg in a medium bowl. Season with salt and pepper and mix with your hands (avoid over mixing!) Form into 3 or 4 patties and place on the prepared baking sheet. Refrigerate for at least 20 minutes.
  • Preheat the oven to 375 degrees F.
  • Bake the burgers, flipping once halfway through, until the internal temperature of a burger reaches 165 degrees F, 30 to 35 minutes.
  • Meanwhile, make the harissa yogurt sauce: Combine all the ingredients in a small bowl and stir. Refrigerate until ready to use.
  • Spread some of the sauce on the buns, then fill with the turkey patties, baby spinach and red onions.
