CROCK POT TURKEY CHILI WITH BACON



Crock Pot Turkey Chili with Bacon image

Beware... this is a pretty hot chili. Ground beef can be substituted for ground turkey. Freezes very well.

1/2 lb turkey bacon (or regular bacon)
1 1/2 lbs ground turkey
2 (15 ounce) cans kidney beans (drained)
1 (15 ounce) can pinto beans (drained)
1 (10 ounce) can Rotel chili fixins tomatoes (or other diced tomatoes)
8 ounces tomato paste
1 onion, finely chopped
1 tablespoon chili powder
1 (15 ounce) can chicken broth
1 tomatoes
2 ounces sliced jalapeno peppers
1 garlic clove
1/2 tablespoon ground cumin

Steps:

  • Fry bacon until it starts to brown, cut into bite size pieces and put into crock pot.
  • Brown the ground turkey with onions.
  • Combine ground turkey, kidney and pinto beans, canned tomatoes, tomato paste, chili powder, cumin, and chicken broth and add to crock pot.
  • Use food processor or mini-prep to puree garlic, tomato, and jalapeno peppers and add to crock pot.
  • Mix all ingredients in crock pot and let it cook for 6-8 hours on low.

6 slices crumbled cooked bacon
2 lbs ground turkey
1 teaspoon oregano
1 1/4 ounces taco seasoning mix
1/2 teaspoon garlic powder
2 (10 ounce) cans Rotel tomatoes & chilies
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 medium onion
1 green pepper
1 bay leaf
1 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon garlic powder
2 (15 ounce) cans kidney beans
1/4 cup celery
1 (10 1/2 ounce) can beef broth
green onion
sour cream
cheddar cheese

Steps:

  • Cook bacon in skillet, drain on paper towel, allow to cool and break in pieces. Crumble and brown turkey in the skillet and stir to break apart. Place cooked turkey and bacon in slow cooker. Season with taco seasoning mix, oregano, garlic powder and salt,and pepper. Mix until meat is evenly coated. Pour in beef broth, Rotel salsa, kidney beans, tomatoes, tomato paste. Add onion, green pepper, bay leaf, celery, salt, and pepper. Mix well. You may need to adjust for the thickness by adding water.
  • Simmer on low, stirring occasionally. Cook for approximately 6 to 7 hours.
  • Garnish with green onions, sour cream and/or cheddar cheese.

You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

1 tablespoon olive oil
2 pounds ground turkey, white and dark combined
2 cups coarsely chopped onions
2 tablespoons chopped garlic
1 large sweet red pepper, cored, deveined and coarsely chopped
1 cup chopped celery
1 jalapeno pepper, cored, deveined and finely chopped
1 tablespoon fresh oregano, chopped, or 1 tablespoon, dried
2 bay leaves
3 tablespoons chili powder
2 teaspoons ground cumin
3 cups canned diced tomatoes
2 cups chicken broth, fresh or canned
Salt and freshly ground pepper to taste
2 15-ounce cans of red kidney beans, drained
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Sliced lime for garnish (optional)

Steps:

  • Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
  • Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.
  • Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
  • Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream and lime wedges, if desired.

1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
  • Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
