This is a recipe that I have been making for years. It's always a favorite. You can tweak the ingredients to your own tastes if you so choose. My brother likes to add minced onions to the saute. It's quick, it's easy & tastes great!

8 ounces angel hair pasta
1/2 lb bacon
1 (6 1/2 ounce) packet tuna in water, may use canned tuna drained
1 tablespoon garlic, minced
black pepper
parmesan cheese

Steps:

  • Fry the bacon in a pan. When bacon is done, drain on papertowels.
  • Keep the bacon grease in the pan. (Note: You can reduce the amount of bacon grease you use if you so choose, just keep enough so it doesn't get dry).
  • Put the tuna and garlic in the pan with the bacon grease and heat over medium heat - stirring occasionally. Do this for approximately 5 minutes.
  • Season with black pepper (optional).
  • Crumble the bacon strips and place back in the pan with the tuna & garlic.
  • Heat for another minute or two.
  • Boil your angel hair pasta.
  • When pasta is done put into a large bowl.
  • Transfer your bacon & tuna mixture from the pan into the bowl of pasta.
  • Toss all ingredients to incorporate all the flavors.
  • Sprinkle with parmesan cheese and serve.

400g spaghetti
1 tbsp olive oil
120g smoked streaky bacon, sliced into matchsticks
1 onion, finely chopped
1 garlic clove, finely chopped
2 tsp sweet smoked paprika
2 x 400g cans chopped tomatoes
grated parmesan, to serve (optional)

Steps:

  • Bring a large pan of water to the boil and cook the spaghetti following pack instructions. Meanwhile, heat the oil in a large non-stick frying pan and cook the bacon for 3-4 mins until just starting to crisp. Stir in the onion and cook for another 3-4 mins, then add the garlic and smoked paprika, and cook for 1 min more.
  • Pour in the chopped tomatoes, bring to the boil and bubble for about 5 mins until thickened, stirring every so often to stop it catching on the bottom. Drain the pasta and toss with the sauce. Serve with Parmesan, if you like.

This elegant riff on a childhood favorite came to The Times in 2009 by way of Jamie Oliver, the British chef and cookbook author. It was featured in his cookbook "Jamie's Food Revolution: Rediscover How to Cook Simple, Delicious, Affordable Meals," and it's a favorite of his daughters, Poppy and Daisy. It's wholesome (no powdered cheese!), and it can be ready in about 15 minutes.

Sea salt
10 slices smoked bacon or pancetta
1 pound dried mini-shell or other small pasta
2 tablespoons olive oil
1 tablespoon butter
Freshly ground black pepper
2 cups frozen peas
2 tablespoons crème fraîche or heavy cream
2 tablespoons finely chopped fresh mint leaves
Juice of 1 lemon
6 ounces finely grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted to a boil. Meanwhile, cut sliced bacon crosswise into thin slivers, or slice pancetta into julienne. Add pasta to boiling water and cook to taste.
  • While pasta is cooking, place a large skillet over medium heat, and add 2 tablespoons olive oil and the butter. Add bacon or pancetta and a sprinkling of pepper, and fry until golden and crisp. Immediately add frozen peas and stir for a minute or two. Add crème fraîche or heavy cream and chopped mint.
  • Reserve 1 cup of the pasta cooking water, and drain the pasta. Add pasta to the skillet and stir. Add lemon juice, and adjust salt and pepper to taste. Bring to a simmer, then remove from heat. The mixture should be thick; if desired, a splash of the pasta water may be added to the sauce to thin it slightly. Add Parmesan and stir to mix. If desired, serve with a green salad.

3 cups wide egg noodles
8 ounces cream cheese, softened
2 (6 ounce) cans tuna, drained
1 small vidalia onion, finely chopped
1/2 cup celery, finely chopped
1 (8 1/2 ounce) can sweet peas, drained
2 cups frozen broccoli florets, steamed and chopped
10 3/4 ounces cream of mushroom soup or 10 3/4 ounces cream of chicken soup
1/2 cup milk
1/2 teaspoon black pepper
1/2 teaspoon rosemary, crushed spice
1 dash paprika (optional)
3 ounces bacon bits
1 cup sharp cheddar cheese, shredded
1 cup French-fried onions

Steps:

  • 1. Cook pasta (I prefer egg noodles or spiral pasta) to Al Dente and drain.
  • 2. Saute Celery & onion in butter or olive oil 3-4 minutes.
  • 3. Place pasta in greased casserole dish. Pour mixture over top and.
  • very gently stir into pasta until mixed well.
  • 4. Cover loosely with foil and bake at 350 for 25 minutes.
  • 5. Spread bacon bits, shredded cheese, and french fried onions on top. Cook an additional 5 minutes, uncovered.
  • ** I usually cook this in a deep 9 x 9 casserole dish. If using something larger, you probably want to change the initial bake time to 20 minutes (or less - until it's bubbly).

This is a pasta salad I created as I have an intolerance to preservatives and cannot use jars of pasta sauce etc. My family enjoys it - hope you do too!

250 g penne pasta, cooked via packet directions (I use San Remo Wholewheat)
1 diced onion
2 large crushed garlic cloves
1 small zucchini, peeled & grated
1 stalk chopped celery
250 g diced bacon, fat removed
1 cup stock (I use veggie)
1 (400 g) can diced tomatoes
1 tablespoon tomato paste
1 (425 g) can tuna in brine, drained
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh thyme

Steps:

  • Cook pasta to packet directions.
  • Sauté onion, garlic, celery, and zucchini.
  • Grill bacon and dice.
  • Add to onion mixture.
  • Add tin of tomatoes and tomato paste.
  • Add tuna.
  • Add enough stock to make consistency to your liking.
  • Add herbs (and another clove of fresh garlic if you like it like that!).
  • Mix in pasta or pour over prepared pasta.
  • Serve with fresh breadstick and or nice side salad!
