Time 35m

Yield 4 serving(s)

Number Of Ingredients 13

1 1/2 lbs tuna steaks, cut into 1 1/4 inch cubes
2 tablespoons olive oil
1/2 teaspoon ground cumin
2 teaspoons lemon zest, finely grated
1/2 teaspoon ground coriander
3 teaspoons ground cumin
2 teaspoons paprika
1 pinch cayenne pepper
4 garlic cloves, crushed and minced
1/2 cup flat leaf parsley, minced
1/2 cup cilantro, minced
1/3 cup lemon juice
1/2 cup olive oil

Steps:

  • If using wooden skewers, soak in water for 30 minutes so they don't burn.
  • Place the tuna in a shallow non-metallic dish. In a small bowl, combine the oil, cumin and lemon rind and pour over the tuna. Toss to coat, then cover and marinate in the refrigerator for 10 minutes.
  • Meanwhile, for the chermoula, place the coriander, cumin, paprika and cayenne pepper in a small frying pan and toast over medium heat for 30 seconds, or until fragrant. DO NOT BURN! Combine with the remaining chermoula ingredients and set aside.
  • Thread the tuna onto the skewers. Lightly oil your indoor grill or your barbeque and cook the skewers for 1 minute on each side for rare, or 2 minutes for medium.
  • Serve the skewers on a bed of couscous and drizzle with the chermoula.

TUNA SKEWERS

We had these with recipe#243171--topped the salad with the skewers - delicious together. If using wooden skewers remember to soak them for at least one hour. Recipe source: Bon Appetit (August 2007)

Time 1h10m

Yield 4 serving(s)

Number Of Ingredients 13

3 tablespoons rice vinegar
2 tablespoons gingerroot, grated (I used a bit less)
2 tablespoons peanut oil
2 tablespoons sesame oil
2 tablespoons honey
1 tablespoon cilantro, chopped (I used a bit more)
1 serrano chili, seeded and minced
white pepper
1 1/2 lbs tuna, 1 1/4-inch thick and cut into 1 inch cubes
cooking spray (Pam)
1 red bell pepper, cut into 1-inch squares
1 onion, cut into 1 inch squares
4 -6 skewers, 12-inch long (I used wooden but the original recipe recommends metal)

Steps:

  • In a bowl, whisk together first 8 ingredients (vingear - chile) and then season with the pepper. Transfer 3 tablespoons to a cup and reserve.
  • Add tuna to remaining marinade, tossing to coat and refrigerate for up to 45 minutes.
  • Prepare grill and spray grill reack with Pam.
  • Prepare skewers by alternating fish, pepper and onion squares on skewers.
  • Grill skewers to desired doneness - mine took about 10 mintes-- turning often.
  • Transfer to platter, drizzling reserved marinade over skewers and sprinkle with additional cilantro, if desired.

CHERMOULA

Chermoula image

Chermoula is a North African marinade, used especially for fish. It also makes a great dipping sauce or salad dressing. This recipe has plenty of tang and has been adapted from one by Julie Le Clerc. I use coriander (cilantro) rather than parsley and Lee Kum Kee's Chili Garlic Sauce rather than a small red chili. I like the end product so much that I can eat it with a spoon. Yummo!

Categories     Dinner, Lunch, Main course

Time 10m

Number Of Ingredients 6

20g pack coriander (leaves and stalks)
3 garlic cloves
½ tsp each paprika , ground cumin and chilli powder
1 tbsp lemon juice
150ml extra-virgin olive oil
4 x 8oz/200g fresh tuna steaks, each about 2.5cm/1in thick

Steps:

  • Put the coriander, garlic, spices and lemon juice into a blender and blitz to a purée. With the motor running, slowly add the olive oil until you get a smooth, thick sauce. Set aside.
  • Sit the tuna steaks in a non-metallic dish and cover with two-thirds of the sauce. Cover with cling film, then leave to marinate in the fridge for about 20 mins (or for up to 4hrs).
  • Heat a griddle pan or grill. Shake off any excess marinade, season the tuna steaks, then cook for 2-4 mins, depending on thickness for medium rare, turning once (cook 2 mins more for well done). Drizzle over the remaining sauce paste to finish. Try serving with new potatoes; for a Moroccan twist, toss melted butter, harissa spice mix and chopped coriander leaves through the potatoes.

CHERMOULA (MOROCCAN MARINADE)

Chermoula (Moroccan Marinade) image

Chermoula is a highly flavoured Moroccan marinade, that is the life saver of boring fish. There are hundreds of chermoula recipes, all different: every Moroccan cook book you pick up will contain at least three versions. It is worth trying several and ending up with a hybrid of your own. This is my favourite version. Chermoula marinated fish can be grilled, barbequed, baked or pan fried, which ever suits the fish of your choice. Pan fried salmon steaks are good, cod fillets cut into chunks and marinated are great barbequed. Makes enough marinade for fish for 4.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

2 -3 garlic cloves, chopped
1 -2 teaspoon ground cumin
1 pinch saffron thread
4 tablespoons olive oil
1 lemon, juice of
1 small red chili pepper, seeded and chopped
1 teaspoon salt
1 bunch fresh cilantro, finely chopped

Steps:

  • Place the garlic, cumin, saffron, olive oil, lemon juice, chili and salt in a mortar and pound with a pestle. Or alternatively put all the above in a food processor and whiz until finely chopped, I have little baby processor which makes this a doddle.
  • Add the fresh cilantro and mix in or give an additional quick whiz to combine.
  • Spread the mixture over the fish of your choice and leave to marinade for at least 15 minutes.
