CINNAMON PEAR JELLY image

Number Of Ingredients 7

3 lbs (about 6) firm-ripe pears, stemmed but not cored, and cut into 1 1/2-inch pieces
1 3 1/2-inch cinnamon stick, broken into small pieces
1/4 cup strained lemon juice
1 1 3/8-ounce box powdered pectin
1 tsp unsalted butter
7 cusps sugar
9 3 1/2-inch cinnamon sticks

Steps:

  • Mince pears. Combine with broken cinnamon and 3 1/2 cusps cold water. Simmer 15 minutes. Ladle into jelly bag and drip for 2 hours, scrapping occasionally with spatula. Ad hot water to make 5 cups juice. Combine juice and lemon juice. Add pectin gradually, stirring vigorously and bring to full rolling boil that froths. Stir in butter and sugar and bring to full rolling boil for 1 minute. Remove from heat. Ladle into jars. Insert 1 cinnamon stick into each jar and seal.
