PENNE WITH A PUNCHY TUNA SAUCE

This quick, zesty supper is packed with Mediterranean flavours. Leftovers will keep well for lunch the next day

350g penne
1 tbsp olive oil
5 tbsp caper , drained, rinsed and patted dry with kitchen paper
185g jar pitted black olives , drained and roughly chopped
zest and juice 1 lime
2 x 200g tins tuna in spring water, drained
4 tbsp grated parmesan
½ small pack basil , leaves picked

Steps:

  • Bring a large pan of salted water to the boil and cook the penne for 1 min less than pack instructions. Drain, reserving a cup of the cooking water, and leave the pasta in the colander.
  • Heat the oil in the same pan you cooked the pasta in over a medium-high heat. When hot, add the capers and stir to coat in the oil. When the capers start to pop, reduce the heat and add the olives, lime zest and juice and tuna. Stir together, then return the pasta to the pan with the reserved cooking water. Stir through the Parmesan and basil and season with black pepper.

1/2 pound penne
1 garlic clove
1 lemon
1/4 cup packed fresh basil leaves
a 6-ounce can tuna in olive oil (not drained)

Steps:

  • Bring a 4-quart pasta pot three fourths full with salted water to a boil for penne. Mince garlic. Finely grate enough lemon zest to measure 1 tablespoon and squeeze 1 teaspoon juice. Cut basil into thin strips. In a large bowl toss together garlic, zest, juice, basil, and tuna with oil from can.
  • Boil penne until al dente and drain in a colander. Add penne to bowl and toss with salt and pepper to taste.

Coarse salt and ground pepper
1 pound penne or other short tubular pasta
2 teaspoons olive oil
1 large red onion, chopped
3 garlic cloves, thinly sliced
1 cup half-and-half
3 anchovy fillets, mashed (optional)
2 cans (6 ounces each) tuna packed in oil, drained
3/4 cup chopped fresh parsley
2 tablespoons capers, drained

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions; drain, reserving 1/2 cup pasta water. Return pasta to pot.
  • Meanwhile, in a large nonstick skillet, heat oil over medium-low heat. Add onion and garlic; season with salt and pepper. Cook, stirring often, until onion is very tender and starting to brown, about 8 minutes. Add half-and-half and if using, anchovies; raise heat to high, and boil 2 minutes.
  • Pour mixture over pasta. Add tuna, parsley, capers, and reserved pasta water; toss to combine. Season with salt and pepper, as desired.

PEPPERONCINI PASTA

A quick and inexpensive pasta dish. I have never made it for anyone else so it could just be my taste but I think it has a good flavor to it. If you dont have the pepperchinis (they come in a jar)then you can always sub with the pepper rings; hot or mild. (they also come in a jar) The amount of heat/flavor you want will determine the amount of peppers you use. I used 1/2cup. I never salt this dish as the peppers give it enough.

2 cups linguine or 2 cups pasta, of choice
1/4 cup olive oil
1 large ripe tomatoes, chopped
1 garlic clove, chopped fine
2 tablespoons fresh basil leaves, chopped fine
1/2 cup chopped pepperoncini peppers or 1/2 cup pepper rings
1/2 teaspoon pepperoncini pepper juice, from pepper jar that peppers were in. (optional)

Steps:

  • cook pasta according to directions on box.
  • in a separate saute pan; heat all other ingredients until very warm; not wilted.
  • drain pasta and toss with sauteed mixture.
  • if pressed for time/space you can just toss pasta with other ingredients without warming the pepper mixture; the heat from the noodles will warm them up.
  • serve with good bread.

CHICKEN MEATBALL PENNE

A creamy pasta dish with tasty chicken meatballs. Full instructions have been included for freezing this dish. This recipe has been substantially adapted from a recipe in a recent issue of the Australian magazine 'New Idea'. In particular, I have made use of another one of my recipes: Chicken Meatballs Recipe #123018. To reduce the fat content of this recipe, use low fat evaporated milk and low fat feta.

250 g penne pasta
1 1/2 teaspoons olive oil
1 onion, finely chopped
4 garlic cloves, crushed
1 carrot, finely chopped
1 (185 ml) cans evaporated milk
1 cup frozen peas
salt, to taste
fresh ground black pepper, to taste
100 g feta, crumbled
fresh sage leaf, to garnish
500 g ground chicken (Americans) or 500 g ground chicken (Australians)
2 garlic cloves, finely chopped
50 g fresh white breadcrumbs
1 tablespoon fresh chives, finely chopped
1 tablespoon fresh basil, finely chopped
2 tablespoons parmesan cheese, grated
1 egg, lightly beaten
salt, to taste
fresh ground black pepper, to taste
1/2 tablespoon unsalted butter

Steps:

  • Cook pasta in a large pan of boiling, salted water until tender; drain; cover to keep warm.
  • To make the meatballs, combine the chicken, garlic, fresh breadcrumbs, chives, basil, parmesan and egg in a bowl, season to taste with salt and pepper, mix well and with floured hands, and shape the mixture into 12-16 meatballs, depending on the size of meatball you fancy.
  • Place the meatballs on a tray, cover loosely and chill for 30 minutes.
  • Heat the butter in a non-stick pan, over a medium heat, and sauté the meatballs, turning occasionally, for 6-8 minutes, or until they are lightly golden-brown all over and fully cooked; remove from the pan and cover to keep the meatballs to keep them warm.
  • Heat the oil in the pan, add the onion, garlic and carrot, and sauté until they have softened; add the milk and peas and bring to the boil; add the pasta; season to taste with salt and freshly ground black pepper; and cook until the pasta is hot.
  • Serve the pasta topped with the meatballs; sprinkle with the crumbled feta and garnish with sage.
  • To freeze: Make the recipe to the end of step 5. Divide the mixture among four ovenproof, freezer-proof (2-cup capacity) dishes; top with the meatballs and sprinkle with feta; cover tightly with plastic wrap; label and date and freeze for up to 2 months.
  • To serve: Thaw pasta in dishes in the refrigerator; remove the plastic wrap; place on an oven tray; cook in a hot oven (200°C) for about 45 minutes, or until hot, and garnish with sage.
