This recipe was popular in the 60's. It was one of the first tuna casserole's and is still a great comfort food today. Easy to make and has all the things that are usually on hand. This can also be made with the same size can of chicken. Sometimes I add mushrooms and english peas.

1 1/2 cups noodles
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup milk
1 (5 ounce) canned tuna, drained
1/2 cup potato chips
1/2 cup chopped onion
1 cup shredded cheese

Steps:

  • Cook noodles in unsalted water.
  • Drain noodles. Mix soup, milk and tuna with noodles.
  • Add shredded cheese and onion.
  • Pour into casserole dish.
  • Crush potato chips and sprinkle on top. Bake 15 minutes at 425 degrees.

My Mom's Tuna Casserole With Potato Chips and Eggs image

An old family favorite--- comfort food at it's finest! This one includes potato chips as well as hard-boiled eggs. Just like mom used to make. Mom used to reheat leftovers in a frypan with butter the next day--- yum!! P.S. Sometimes I sprinkle mine with grated Parmesan cheese, at the table.

Number Of Ingredients 6

3 cups freshly cooked medium egg noodles (drained and warm)
1 (9 ounce) can tuna, drained
2 -3 hard-boiled eggs, peeled and chopped
3 cups crumbled lays vinegar potato chips or 3 cups regular potato chips
1 (10 3/4 ounce) can cream of mushroom soup, undiluted
5 1/2 ounces water

Steps:

  • Butter a 2-quart casserole dish.
  • In sauce pan, bring water and soup to a boil, stirring occasionally.
  • Remove from heat.
  • Layer cooked noodles, tuna, chopped eggs, mushroom soup and crumbled potato chips.
  • Top with chips.
  • Bake uncovered at 350 F for 30 minutes.
  • Serve with vegetable of your choice.
  • Note: Mom served vanilla pudding topped with sweetened strawberries, for dessert.

1 (12 ounce) package egg noodles
¼ cup chopped onion
2 cups shredded Cheddar cheese
1 cup frozen green peas
2 (5 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
½ (4.5 ounce) can sliced mushrooms
1 cup crushed potato chips

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.

3/4 pound tubetti or elbow macaroni
1 cup panko (Japanese breadcrumbs)
1/2 ounce Parmesan, grated (2 tablespoons)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 yellow onion, diced small
3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
1 1/2 cups whole milk
2 cans (6 ounces each) solid light tuna packed in water, drained and flaked
1 cup frozen peas, thawed

Steps:

  • Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
  • In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
  • Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
  • Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

1 package (7 ounces) plain potato chips, divided
1 can (5 ounces) light tuna in water, drained and flaked
1 package (10-1/2 ounces) frozen asparagus tips, thawed and patted dry or 1 can (15 ounces) asparagus spears, drained and sliced
SAUCE:
2/3 cup evaporated milk
1 tablespoon lemon juice
1/4 teaspoon ground mustard
1/8 teaspoon white pepper
TOPPING:
1/4 cup shredded cheddar cheese
1/2 cup sliced almonds

Steps:

  • Crush chips and place half in greased 2-qt. baking dish. Arrange tuna over chips. Top with asparagus and the remaining chips. Combine sauce ingredients and pour over top. 4 tablespoons unsalted butter, plus more for the baking dish
1 medium onion, finely chopped
8 ounces cremini mushrooms, sliced
1/4 cup all-purpose flour
2 cups whole milk
1 cup chicken broth
8 ounces medium pasta shells (about 3 cups)
One 6-ounce jar Italian tuna in olive oil, drained and flaked
2 tablespoons chopped fresh flat-leaf parsley
2 cups grated sharp white Cheddar
1 1/2 cups crumbled flavored potato chips, such as salt-and-vinegar, onion or jalapeno

Steps:

  • Preheat the oven to 375 degrees F. Bring a large pot of salted water to a boil. Butter a 2-quart casserole or baking dish.
  • Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Increase the heat to medium high and add the mushrooms and 1/4 teaspoon salt. Cook, stirring, until the mushrooms release their liquid and turn golden brown, 8 to 10 minutes. Sprinkle the flour over the mushrooms and cook, whisking, about 1 minute. Gradually add the milk while whisking constantly, then whisk in the chicken broth. Bring the mixture to a simmer, stirring often. Simmer until thickened, about 5 minutes.

½ cup evaporated milk

3 cups shredded American cheese
⅓ cup chopped onion
½ cup crushed potato chips
1 pinch paprika

Steps:

  • In a large pot with boiling salted water cook egg noodles until al dente. Drain.
  • In a large bowl combine the cooked egg noodles, cream of mushroom soup, evaporated milk, tuna, grated American cheese, and chopped onion. Pour into a greased 1.5 quart casserole dish. Sprinkle the top with the crumbled potato chips and the paprika.
  • Bake in a preheated 425 degree F (220 degree C) oven for 15 to 20 minutes.
