2 (7 ounce) cans albacore tuna in water, drained and flaked
1 cup crumbled feta cheese
¼ cup chopped red onion
¼ cup chopped fresh dill, or to taste
2 tablespoons red pepper flakes
1 lemon, zested and juiced

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes; drain.
  • Transfer spaghetti to a large bowl; add flaked tuna, feta cheese, red onion, dill, red pepper flakes, lemon zest, and lemon juice to the bowl and toss.

8 quarts water
3 tablespoons salt
1 pound small pasta shells
Salsa Cruda:
1 (6-ounce) jar artichoke hearts, drained
1/4 cup drained and rinsed capers
1/2 cup pitted and chopped Kalamata olives
juice and zest of 1 lemon
2 (6 1/2 ounce) cans imported Italian tuna in olive oil, drained
1/2 cup extra-virgin olive oil
freshly ground black pepper to taste
1/2 cup chopped fresh flat-leaf parsley leaves

Steps:

  • In a 10-quart pot, bring the water to a brisk boil. Add salt and stir in the pasta shells. When the water returns to a boil, begin timing and cook al dente according to the package directions. Reserve 1/2 cup of the pasta cooking water. Drain the pasta, but do not rinse. Transfer the shells to a large serving bowl. Stir in the reserved pasta water to keep the pasta from sticking to itself. Pasta continues to cook and absorb water even when it has been drained. Add in the salsa cruda ingredients and toss. Garnish with chopped parsley leaves.
  • Preparation time: 10 minutes; cooking time: 15 minutes

Bold flavors in a very light sauce: substantial and satisfying, good warm-weather alternative to spaghetti bolognese. You might think the sauce too thin the first time you make it (almost a thick broth), but it will be full of flavor. Quantities of tuna, sun-dried tomato, and artichoke are variable to preference, just be sure to provide an overall robust combination, always mindful of potential saltiness (esp. regarding the sun-dried tomatoes). Also, fresh oregano or lemon thyme could be substituted for thyme. This should go without saying: please don't put any cheese on this pasta.

¼ cup olive oil, divided
½ cup diced onion
2 tablespoons chopped fresh thyme
1 ½ pounds fresh tuna steaks, cubed
½ cup dry white wine
2 cups chicken stock
¼ cup fresh lemon juice
1 tablespoon lemon zest
½ cup chopped oil-packed sun-dried tomatoes
¾ cup sliced marinated artichoke hearts
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat 2 tablespoons olive oil in a large saucepan over medium-high heat, and cook the onion 4 minutes, until tender. Mix in the thyme, and continue cooking 2 minutes, until onion is golden brown. Set aside onion and thyme. Place the tuna in the saucepan, and cook 2 to 3 minutes, until browned. Set aside, and keep warm.
  • Heat the remaining oil in the saucepan. Return the onion and thyme to saucepan, and stir in the white wine. Cook until reduced by about 1 tablespoon. Mix in the chicken stock, lemon juice, and lemon zest. Reduce heat to medium, and continue cooking 10 minutes, until reduced to about 3/4 cup.
  • Mix the sun-dried tomatoes and artichoke hearts into the saucepan, and cook just until heated through. Return tuna to the saucepan, and cook to desired doneness. Toss the cooked pasta into the saucepan. Season with salt and pepper.

350g pasta shells
200g pack trimmed fine beans , cut into short lengths
200g can tuna in oil
grated zest of a lemon
1 heaped tbsp small capers
generous pinch of chilli flakes
olive oil for drizzling

Steps:

  • Cook the pasta in boiling salted water for 8 minutes. Add the beans and cook for a further 3 minutes until both the pasta and beans are just tender. Meanwhile, tip the tuna and its oil into a bowl and flake the fish, keeping the pieces quite large. Stir in the lemon zest, capers, chilli and plenty of salt and pepper.
  • Drain the pasta and beans, return them to the pan and toss with the tuna mixture. Add a little olive oil if you need to moisten everything. Serve the tuna and lemon pasta on its own or with a tomato and onion salad.

1 (12-oz) tuna steak (1 1/2inches thick)
3 teaspoons olive oil
3 garlic cloves, minced
12 oz dried farfalle (bow-tie pasta)
1/4 teaspoon dried hot red pepper flakes
1 tablespoon finely grated fresh lemon zest
2 tablespoons fresh lemon juice
10 Kalamata or other brine-cured black olives, pitted and slivered
1/2 cup coarsely chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 400°F.
  • Pat tuna dry. Rub with 1/2 teaspoon oil and 1/2 teaspoon garlic, then chill, covered, 20 minutes.
  • Heat a well-seasoned cast-iron skillet over high heat until hot, then add 1/2 teaspoon oil, tilting skillet to coat evenly. Season tuna well with salt and pepper, then brown, turning once, about 5 minutes total.
  • Transfer skillet to middle of oven and roast tuna until just cooked through, about 10 minutes. Transfer tuna to a cutting board and flake into bite-size pieces. Keep warm in a bowl, covered.
  • Cook pasta in a 6-quart pot of boiling salted water until al dente. Reserve 1 cup cooking water, then drain pasta in a colander.
  • While pasta is boiling, cook remaining garlic and pepper flakes in remaining 2 teaspoons oil in a small heavy skillet over moderately high heat, stirring, until garlic is pale golden, about 1 minute. Remove from heat.
  • Toss pasta in a large bowl with tuna, 2/3 cup reserved cooking water, zest, juice, garlic and oil, olives, parsley, and salt and pepper to taste (add remaining 1/3 cup cooking water as needed if pasta seems dry). Serve warm or at room temperature.

1 can of Tuna in Olive Oil
3 tablespoons of Capers
1 Lemon
3 cloves of Garlic
2 table spoons of Olive Oil
Sea Salt
Coarsely ground pepper
1 cup of chopped Parsley
1 cup of chopped Basil
2 cups of green beans, trimmed and cut in half
1 box Penne Pasta
2 tablespoons of red wine vinegar
1 head of Boston or Butter Lettuce (washed and dried)

Steps:

  • Boil the pasta in big pot of water with the red wine vinegar (gives the pasta a bit of a bite). Cook until al dente. When the pasta has about 2 minutes of boiling time left, toss the green beans in to blanch them. Drain together. To make the dressing- smash the garlic through a garlic press, or use the back of a knife and a bit of coarse salt to mash the garlic into a paste. In a small bowl, mix the garlic with some salt and pepper. Drain the olive oil from the can of tuna to make a garlic puree. Squeeze the whole lemon into the puree, and add the salt and pepper to taste. Add a bit of extra olive oil if dressing is thick. When all is prepaired, stir together the pasta and green beans, the dressing, tuna, capers, parsley, and basil. Toss it all together with the butter lettuce, and enjoy!

1 (300 g) packet pasta, shape is your choice
1 tablespoon olive oil
1 tablespoon all-purpose flour
1 lemon, juice and rind of
1/2 cup cream (I used reduced fat)
1 (425 g) can tuna, drained and flaked
1/2 cup kalamata olive, pitted and roughly chopped
1 tablespoon capers
1/4 cup fresh flat-leaf parsley, roughly chopped

Steps:

  • Cook your pasta according to directions, drain and reserve 2 tablespoons of the cooking water.
  • Return the pasta and cooking water to the saucepan and set aside.
  • Heat the oil in a small saucepan over medium-high heat.
  • Add the flour.
  • Cook, stirring for 30 seconds, then remmove from the heat.
  • Slowly add the lemon juice, stirring and bring to the boil over medium heat.
  • Allow to cool a little, then add the cream.
  • Add the cream mixture, tuna, olives, capers, parsley, 3/4 of the lemon rind, and salt and pepper to the pasta.
  • Toss over a low heat until well combined.
  • Spoon into serving bowls and sprinkle with the remaining lemon rind.

4 ounces 100% duram semolina medium pasta shells
1 -2 ounce broccoli floret, cooked drained, and cooled
1/4 cup caesar salad dressing, creamy Store Bought
2 tablespoons light sour cream
1 tablespoon extra virgin olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
fresh ground black pepper
1 (6 ounce) can prime fillet albacore tuna in water, drained
1 ounce sharp cheddar cheese, shredded
1/2 cup cherry tomatoes, halved (optional)

Steps:

  • Boil Broccoli Florets in small amount of boiling water that has been salted for approximately 10-15 minutes, covered. Rinse cooked broccoli under cold running water in sieve to drain fully, and set aside once florets are completely cooled. Next, cook pasta as directed on package (al dente is 10-12 minutes). Once pasta is cooked al dente style, remove from heat, and drain - cool completely.
  • Meanwhile, mix Caesar dressing, sour cream, olive oil, lemon zest & juice. Add freshly ground black pepper to taste and mix well.
  • Place cooled pasta in medium size mixing bowl, add dressing mixture, tuna (fork flake to smaller chunks), broccoli florets, cheese, and cherry tomatoes; mix lightly to incorporate dressing mixture throughout, but not to brake down tuna chunks, florets further. Serve immediately or, cover and refrigerate until ready to serve.

1/4 cup olive oil

1/4 teaspoon crushed red pepper flakes
1 can water packed tuna, drained
1/2 cup lemon juice
x lemon, zest of

1/4 cup pasta cooking water
1/4 cup freshly grated parmesan cheese

Steps:

  • Boil pasta until just tender (remember to reserve pasta cooking water).
  • Heat oil, garlic and red pepper flakes over medium heat for 3 minutes.
  • Remove from heat.
  • Add tuna, lemon juice, lemon zest, salt, pepper, 2 tbsp parsley and pasta cooking water.
  • Return to low heat for 2- 3 minutes.
  • Remove from heat.

Steps:

  • Bring 4 quarts of water to a rolling boil in a large pot (for pasta).
  • While water comes to a boil, heat the oil, about 1/2 of the garlic, red pepper flakes and capers in a 12-inch skillet, and stir frequently until mixture is fragrant and sizzling, but not browned, about 1 to 2 minutes.
  • Add the wine and simmer for about 1 more minute; add the tuna and 2 teaspoons salt and cook, stirring frequently, until the tuna is heated through - about 1 minute.
  • When water is boiling, add 1 tablespoon salt and the pasta; cook until al dente and drain, reserving 1/4 cup of the cooking water.
  • Return the pasta to the pot and toss with the tuna mixture, the rest of the garlic, parsley, lemon zest, butter and reserved pasta water.
  • Season with ground black pepper and salt to taste; top with freshly grated parmesan cheese.
  • Serve immediately!

olive oil flavored cooking spray
300 g fusilli
1 small onion, finely chopped
3 garlic cloves, finely sliced
1 lemon, juice and zest of
3/4 cup reduced-sodium chicken broth
1 (185 g) can evaporated milk (I use Light n Creamy)
1 (425 g) can tuna in water, drained, flaked
salt and pepper (we skipped the salt)
1/4 cup fresh parsley, chopped
1 tablespoon parmesan cheese (to serve)
1 tablespoon capers (optional)

Steps:

  • Cook pasta as packet directs then drain and set aside.
  • Heat pan over medium heat and spray with olive oil.
  • Cook onion for three minutes or until tender then add garlic and cook for 1 minute or until just starting to color.
  • Increase heat to high and add lemon juice, zest and stock and simmer for 3 minutes. Stir in the evaporated milk and flaked tuna then cook for another 2 minutes. Season well with salt and pepper as desired (lots of pepper no salt for us).
  • Add pasta and parsley to the pan and fold pasta and sauce together gently to combine. Heat just a couple of minutes until heated through.
  • Serve hot in warm bowls topped with either the parmesan as the recipe suggests, or as we did with capers instead as they go wonderfully well with tuna.

1 small onion, peeled and quartered
1 garlic clove, peeled
1 1/2 tablespoons capers (in brine or salt, rinsed well and drained)
3 (85 g) cans tuna in olive oil
1 teaspoon dried oregano
1 tablespoon fresh lemon juice
250 g pasta (spaghetti, bow ties or other shape, whole wheat works well)
2 -3 tablespoons water, reserved from cooking pasta
1 tablespoon flat leaf parsley, minces
salt and pepper
red pepper flakes, to taste

Steps:

  • Mince together the onion, garlic and capers in a food processor or mini-chopper. The mixture should be finely chopped.
  • Pour 1 tablespoon of the olive oil from a can of tuna into a large saute pan. Heat oil, stir in minced onion mixture and cook until onion softens. Add the tuna to the pan, with the oil in the can. Red pepper flakes (1/2 teaspoon) can also be added at this point if desired. Flake the tuna with a fork and continue to cook over medium heat for 2 minutes.
  • Stir in the oregano, lemon juice and salt and pepper to taste. Set aside and keep mixture warm. If making sauce in advance, transfer to a jar and refrigerate. Reheat when ready to use. This also makes a great sandwich filling.
  • Cook pasta in boiling, salted water. Drain, reserve 2-3 tablespoons cooking water. Transfer pasta and water to saute pan. Raise heat to medium high and stir everything together until heated through. Sprinkle with parsley and serve.

•2 small cans of tuna packed in olive oil
•1 small red onion, chopped
•1 clove garlic, minced
•1 peperoncino, chopped
•fresh chopped parsley (save some for garnish)
•splash of white wine
•lemon juice (I used half a lemon)
•salt to taste
1 Pound of Pasta

Steps:

  • In pan, heat olive oil drained from tuna cans over medium heat. If your tuna isn't packed in olive oil, use two tablespoons or so of the good stuff. Add onions and garlic and sauté until translucent without burning. Mix in tuna, parsley, and peperoncino. Let cook for a few minutes, then add the splash of white wine and let it cook off. Add a small ladle-full of pasta water, squeeze the lemon juice into the mixture, and leave pan on the heat just long enough for the flavors to mingle. Add salt to taste. Toss with pasta of your choice.

This is a recipe I got from Pasta...made simple. I buy the "better" tuna in the can or jar in olive oil - it tastes less fishy and comes in more meaty chunks as opposed to flakes. This dish is a hit with my kids and picky tuna eaters and a super easy recipe. I usually don't carry gnocchi on hand and use penne or other short pasta. It looks like a very sophisticated dish and tastes like a sophisticated dish.

12 ounces dried conchiglie or 12 ounces gnocchi
4 tablespoons olive oil
4 tablespoons butter
3 large garlic cloves, thinly sliced
1 -7 oz.can tuna in olive oil, drained (could use 2)
2 tablespoons lemon juice
1 tablespoon capers
10 -12 black olives, pitted and sliced
2 tablespoons chopped flat leaf fresh parsley

Steps:

  • Cook the pasta until tender but still firm to the bine. Drain and return to pan.
  • Heat olive oil and butter in skillet over med-low heat. Add the garlic and cook for a few seconds until just begining to color. Reduce heat to low. Add tuna, lemon juice, capers and olives. Stire gently until all ingredients are heated through.
  • Transfer the pasta to a serving dish. Pour the tuna mixture over the pasta. Add the parsley. Toss well to mix then serve immediately with mixed greens, haricot verts, or snow peas.
