Puffs that you put tuna, ham, chicken, shrimp, or egg salads. This is a wonderful basic recipe that you can build on and create sweet or savory dishes. Stuff them with vanilla ice cream and top with chocolate sauce. Voila, a fabulous dessert that looks like you spent hours on, but you didn't!

¼ cup butter
½ cup water
½ cup all-purpose flour
2 eggs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet. Set aside.
  • In a medium saucepan heat butter and water over medium heat until butter melts. Fold in flour all at once, and stir vigorously until a ball forms in the center of the pan. Remove from heat and let stand for 5 minutes.
  • Add eggs, one at a time, and beat until fully blended. Mix should be very stiff. Drop by 1/2 to 3/4 teaspoon onto prepared cookie sheet.
  • Bake for 30 to 40 minutes, or until the moisture disappears. Cool and slit a small opening on one side and stuff with desired filling.

My husband and I can't get enough of this great supper sandwich. The cheese-covered tomato slices top off the mild tuna salad deliciously. Sometimes, I replace the tuna with canned salmon, ham, chicken or turkey. How could something so good be so easy?

3/4 cup mayonnaise, divided
2 tablespoons chopped green pepper
1-1/2 teaspoons grated onion
1-1/2 teaspoons prepared mustard
1/4 teaspoon Worcestershire sauce
1 can (6.4 ounces) albacore white tuna in water, drained and flaked
2 hamburger buns, split
4 slices tomato
3/4 cup shredded cheddar cheese

Steps:

  • In a small bowl, combine 1/4 cup mayonnaise, green pepper, onion, mustard and Worcestershire sauce; stir in tuna. Spread over each bun half; top each with a tomato slice. Arrange sandwiches on a baking sheet., In another bowl, combine the cheese and remaining mayonnaise; spoon cheese mixture over tomato. Bake at 400° for 11-13 minutes or until topping is puffy and golden brown.

Number Of Ingredients 10

1 cup milk
1/4-pound (1 stick) unsalted butter
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Pinch nutmeg
1 cup all-purpose flour
4 extra-large eggs
1/2 cup grated Gruyere, plus extra for sprinkling
1/4 cup freshly grated Parmesan
1 egg beaten with 1 teaspoon water, for egg wash

Steps:

  • Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
  • In a saucepan, heat the milk, butter, salt, pepper, and nutmeg over medium heat, until scalded. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Gruyere, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
  • Spoon the mixture into a pastry bag fitted with a large plain round tip. Pipe in mounds 1 1/4 inches wide and 3/4-inch high onto the baking sheets. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Brush the top of each puff lightly with egg wash and sprinkle with a pinch of Gruyere. Bake for 15 minutes, or until golden brown outside but still soft inside.

Crispy puff pastry easily shaped into cases and filled with tuna, spring onions, garlic, capers, dill and sour cream. Quantities are so easily varied in a recipe such as this one, so do add more or less sour cream, depending on how creamy you'd like your Tuna Puff Pies to be, and the appropriate amount of cayenne pepper if you want them to have some bite! 1 1/3 sheets frozen reduced-fat puff pastry, thawed
425 g tuna in brine
2 spring onions, finely chopped
2 garlic cloves, finely minced
1/4 cup capers
1 teaspoon dill
salt, to taste
fresh ground black pepper or cayenne pepper, to taste
1/2-1 cup low-fat sour cream
2 tablespoons parsley, finely chopped
1 teaspoon lemon zest, finely grated

Steps:

  • Drain the tuna and flake with a fork into chunky pieces.
  • Cut the whole pastry sheet into 9 squares of 8cm x 8cm, and the 1/3 of a sheet into 3 squares. Arrange each pastry square into a greased muffin pan.
  • Divide the tuna evenly between the 12 pastry cases, sprinkle evenly with spring onions, garlic, capers and dill; and add salt and fresh ground black pepper or cayenne pepper, to taste. Top each Tuna Puff Pie with a dollop of sour cream (YOU decide on the size of the dollop!) and sprinkle with parsley and lemon zest.
  • Bake in a preheated oven at 200°C for 18 minutes.

This easy budget supper uses ready-rolled pastry to make an open pie - experiment with your own toppings

320g pack ready-rolled puff pastry
185g can tuna in spring water, drained and flaked
325g can sweetcorn , drained
3 tbsp crème fraîche
50g cheddar , grated
a few chives , snipped to 1cm lengths

Steps:

  • Heat oven to 220C/200C fan/ gas 7. Lay the pastry out on a baking sheet. Pinch up the edges to form a border, pressing firmly into the corners. Prick the centre all over with a fork and pop in the oven for 10-15 mins.
  • Meanwhile, mix the tuna and sweetcorn in a bowl and season.
  • Remove the pastry from the oven, pressing the centre down with the back of a fork, as it will have puffed up a bit. Spread the crème fraîche across centre, spoon the tuna mix on top, then sprinkle over the cheese. Bake for 10-15 mins more, until golden, puffed up and cooked though. Sprinkle with chives and cut into quarters.
