1 tablespoon vegetable oil
1 small onion, chopped (1/4 cup)
1 Anaheim chili, chopped, or 1/4 cup canned chopped green chilies
1 garlic clove, crushed
1 tablespoon grated lime peel
3 tablespoons lime juice
1 medium tomato, chopped (3/4 cup)
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
2 cans (5 oz each) white tuna in water, rinsed, drained

Steps:

  • Heat oil in 10-inch skillet over medium heat. Cook onion, chili and garlic in oil about 2 minutes, stirring constantly, until onion is softened.
  • Stir in remaining ingredients. Cook about 5 minutes, stirring occasionally, until hot.

A quick and simple alternative to chicken fajitas, this recipe is packed full of beans and tuna for a healthy lunch time treat. For a casual evening, pile the tuna filling onto a plate and surround with tortilla chips (in place of the flour tortillas) and use the mix as a dip and scoop.

4 ounces tuna in brine, drained
2 tablespoons olive oil
4 scallions, thinly sliced
1 red chili pepper, deseeded and chopped
1 garlic clove, crushed
1 (14 ounce) can mixed beans, drained and rinsed
4 tablespoons cream cheese
2 flour tortillas

Steps:

  • Heat the oil in a large frying pan, add the scallions, chili and garlic.
  • Cook over a low to medium heat for 3 - 4 minutes.
  • Add the mixed beans and cook over the heat for 2 - 3 minutes or until piping hot.
  • Stir in the tuna and cream cheese and stir gently until piping not.
  • Season to taste with salt and freshly ground black pepper.
  • Warm the tortillas in a frying pan, then fill and roll with the tuna and bean mixture.
  • Serve with salad leaf garnish.

1 large cucumber, seeded and finely chopped
1/4 cup finely chopped red onion
1 tablespoon minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon seasoned salt
1/4 cup reduced-fat Italian salad dressing
1 can (12 ounces) light water-packed tuna, drained and flaked
1/4 cup reduced-fat mayonnaise
1/4 cup chopped celery
1/4 cup chopped green onions
6 flour tortillas (8 inches), room temperature

Steps:

  • In a small bowl, combine the first six ingredients. In another bowl, combine the tuna, mayonnaise, celery and green onions., Spread 1/4 cup tuna mixture over each tortilla; top with 1/3 cup cucumber mixture. Fold in sides of tortillas and roll up.

1 (11 ounce) can white albacore tuna
¾ cup fresh tomatoes, peeled, seeded and chopped
⅓ cup finely chopped red onion
1 tablespoon minced serrano pepper
½ cup extra-virgin olive oil
2 tablespoons fresh lime juice
¼ cup chopped parsley
¼ cup chopped cilantro
1 pinch Salt and pepper, to taste
6 large leaf (blank)s large butter lettuce leaves
