ITALIAN TUNA BALLS



Italian tuna balls image

A superhealthy twist on a family favourite that can be served with spaghetti or squashed flat and cooked as burgers

2 160g cans of tuna in sunflower or olive oil, drained (reserve a little oil)
small handful of pine nuts
freshly grated zest 1 lemon
small handful parsley leaves, roughly chopped
50g fresh breadcrumb
1 egg , beaten
400g spaghetti
500g jar pasta sauce

Steps:

  • Flake the tuna into a bowl, then tip in the pine nuts, lemon zest, parsley, breadcrumbs and egg. Season and mix together with your hands until completely combined. Roll the mix into 12 walnut-size balls. Put a large pan of salted water on to boil, then cook the spaghetti according to pack instructions.
  • Heat a little of the tuna oil in a large non-stick frying pan, then fry the tuna balls for 5 mins, turning every minute or so until completely golden. Drain on kitchen paper. Heat the tomato sauce, then toss together with the pasta and tuna balls.

These tuna balls are very tasty, they can be made into 10-12 larger balls, or 30-40 smaller cocktail size balls (served with a cocktail picks). If you are one of those people (like myself) that just have to add garlic to everything, no matter what it is, then fresh minced garlic in any amount may be added to these if desired. This recipe can easily be doubled, I usually do if I am making, them into larger balls, for a snack or a main meal.

1 (6 1/2 ounce) can tuna, drained
1 egg
1/4 cup fine dry breadcrumbs (enough to hold the balls together) or 1/4 cup soft breadcrumbs (enough to hold the balls together)
3 tablespoons mayonnaise (Hellman's is best)
2 -3 tablespoons chopped onions or 2 -3 tablespoons green onions, if desired
2 -3 tablespoons chopped fresh parsley or 1 -2 teaspoon dried parsley
2 -3 tablespoons chopped almonds
1 teaspoon prepared mustard
1/2 teaspoon poultry seasoning, to taste
1/2 cup crushed corn flakes (for coating)
3 tablespoons melted butter
seasoning salt (I use seasoning salt for this) or regular white salt, to taste (I use seasoning salt for this)
black pepper, to taste (optional)

Steps:

  • Set oven to 375 degrees.
  • Prepare a greased 13 x 9-inch baking pan, or any size to fit the tuna balls.
  • In a bowl, combine the tuna, egg, breadcrumbs, mayo, onion, parsley, almonds, mustard, poultry seasoning, salt, pepper and fresh garlic, or garlic powder (if using), do NOT add the crushed Corn Flakes cereal; combine well.
  • Shape into 40 balls (for cocktail size) or larger balls, any size you desire.
  • Roll completely and evenly in the crushed Corn Flakes cereal to coat well.
  • Dip the coated balls completely in melted butter.
  • Place on a baking sheet/pan.
  • Bake for 10 minutes (for the cocktail size), and 20-25 minutes (depending on how large you make the balls) for the larger size, DON'T OVERBAKE, these do not take long to to get done.

2 Tbsp minced onion
2 Tbsp chopped parsley

3 Tbsp butter, melted
1 c crushed potato chips or crushed corn flakes

Steps:

  • 1. Pre-heat oven to 350 degrees.
  • 2. In bowl, thoroughly mix together the tuna, bread crumbs, onion, parsley, almonds, mayonnaise, lemon juice, mustard, and egg. Shape into 1-inch balls.
  • 3. Dip each ball in the melted butter. then roll to coat in the chips or corn flakes. Place in shallow baking pan. Bake about 10 minutes, or until light brown.

1/3 cup milk
1 tablespoon flour
1 beaten egg
1 teaspoon onion, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne

Steps:

  • Drain tuna; SAVE the oil!
  • Heat 1 TB of tuna oil in saucepan, mix in the flour, blend until smooth.
  • Remove from burner and add milk.
  • Continue stirring.
  • Add in onion, salt, pepper, and cayenne.
  • Place back on burner.
  • Stir constantly.
  • Cook mixture until smooth but thick.
  • Remove from heat add in egg and tuna fish.
  • Refrigerate until firm,then roll into 3/4 inch balls.
  • Roll tuna balls in flour.
  • Fry in deep fat (375°F),until nice and golden.
  • Drain on paper towels, insert toothpicks and serve!

I used potatoes that after boiling, peeling and mashing they hold together. If you don't have this kind of potatoes, please add 1 egg and some 2 or tablespoon of flour.

200 g tuna fish, canned well drained and crushed
2 tablespoons parsley, chopped

salt & pepper
1 egg (only if necessary)
2 -4 tablespoons flour (only if necessary)

1 red pepper, cut into small cubes
1 yellow pepper, cut into small cubes
1 small cucumber, cut into small cubes

Steps:

  • First of all make all the ingredients ready.
  • In a big bowl combine potatoes, tuna fish, parsley, spices and salt. Work with a fork. If it doesn't stick together add 1 egg and about 2 tablespoon of flour.
  • Form walnuts sized balls, coat first with egg and then with the breadcrumbs. Flat them slightly and place them on a dish.
  • Preheat a non sticky pan with about 2 tablespoon oil to medium temperature.
  • Fry the meatball on the first size when golden brown, turn, add 2 tablespoon oil and brown the second size.
  • For the serving suggestion combine all the vegetable in a bowls toss, eventually add some salt (I didn't). Serve with lemon and olive oil.
  • If you prefer serve this with a fresh salsa.
  • Enjoy!
  • Note: this looks wonderful with some fresh green salad.

1 1/2 cups cooked rice, warm
1 (6 ounce) can tuna in water, drained & flaked
1/2 cup finely grated cheddar cheese
2 eggs, beaten
2 tablespoons minced chives
1/4 cup chopped dill pickle
1 teaspoon lemon juice
3 -4 drops hot pepper sauce
salt, to taste
1 -1 1/2 cup finely ground dry breadcrumbs
1 tablespoon paprika (optional)

Steps:

  • Preheat oven to 375°F.
  • Combine rice, tuna, cheese, eggs, chives, pickles, juice, pepper sauce and salt.
  • Form into 1" balls for appies or 2" for entree.
  • Roll in breadcrumbs mixed with paprika. Place on lightly sprayed foil-lined baking sheets.
  • Bake for 20 minutes.
  • Note: Can freeze after baking.

200g can tuna in oil
85g fresh breadcrumbs
50g cheddar , finely grated
1 large egg , lightly beaten
1 tbsp chopped fresh chives
2 tbsp sunflower or olive oil , for frying
tomato ketchup , to serve
100g small pasta shapes
a handful of frozen peas
half a can creamed-style corn

Steps:

  • To make the tuna balls, tip the tuna and its oil into a large bowl and stir in the breadcrumbs and grated cheese. Add the beaten egg and chives, then season with a pinch of salt and stir again until everything is well mixed.
  • Form into 12 balls the size of ping-pong balls, then chill until you're ready to cook.
  • Cook the pasta according to packet instructions, dropping in the peas for the last couple of minutes. Meanwhile, heat the oil in a non-stick frying pan over a medium heat and fry the balls for 8-10 minutes, turning often, until they're golden brown. Drain them on kitchen paper and keep warm.
  • Drain the pasta, return to the pan and add the corn. Heat gently for a minute, stirring occasionally, until heated through. Serve with ketchup.

400 g sweet potatoes, peeled and chopped
425 g tuna in brine, drained
1 cup fresh breadcrumb
1/4 cup coriander, chopped
2 tablespoons sweet chili sauce
2 spring onions, finely chopped
1 egg
1 teaspoon ground cumin
1 teaspoon ground ginger
1/2 cup corn flake crumbs, crushed
light sour cream, to serve

Steps:

  • Pre-heat oven to 180ºC. Cook the sweet potato in a saucepan of boiling water for 8-10 minutes or until tender. Drain and mash.
  • Combine potato with the tuna, breadcrumbs, coriander, sweet chilli sauce, spring onions, egg, cumin and ginger and mix ingredients toghether well.
  • Form mixture into small balls and coat in cornflake crumbs.
  • Place onto a lined oven tray and bake for 15 minutes, or until golden and just crisp.
  • Thread 2 or 3 hot balls onto skewers and serve with the sour cream as a dipping sauce.

4 x 150g cans tuna in brine, drained
140g breadcrumbs
2 eggs
2 tbsp mixed seeds
1 small pack tarragon , leaves only, chopped
1 tbsp sunflower oil
300g spaghetti
2 x 400g cans cherry tomatoes
1 garlic clove , crushed

Steps:

  • In a large bowl, mix together the tuna, breadcrumbs, eggs, seeds and half of the chopped tarragon. Season, then scrunch the mixture together with your hands and form into golf ball-sized balls.
  • Take a large, deep, non-stick frying pan and add 2 tsp oil. Fry 5-6 balls in the oil over a high heat for 5 mins or until they are a deep golden brown all over, adding more oil if the pan gets dry. Transfer to a plate covered in kitchen paper. Repeat with the rest of the balls.
  • Cook the spaghetti following pack instructions. Meanwhile, tip the cherry tomatoes into the pan you fried the balls in and add the garlic. Bring to a simmer, then season. When the spaghetti has been cooking for a few minutes, spoon a ladleful of pasta water into the cherry tomatoes to make a sauce. Just before serving, put the tuna balls back in the pan with the sauce to warm through for 5 mins.
  • Drain the pasta and scatter the remaining tarragon over the tuna balls before serving.

1 1/4 cups corn flake crumbs, divided
1/3 cup mayonnaise
1 egg

1 teaspoon prepared mustard
1 (1 7/8 ounce) package white sauce mix, I use Knorr
2 cups milk
1 cup frozen peas
1/4 teaspoon dried dill weed

Steps:

  • Combine tuna, 1-cup cornflake crumbs, the mayonnaise, egg onion and mustard in a medium mixing bowl.
  • Shape into 12 balls, 1-½ inches in diameter.
  • Place remaining ¼ cup cornflakes crumbs in shallow dish. Roll each ball in crumbs to coat evenly.
  • Arrange tuna balls in 9-inch pie plate. Bake in a 350-degree oven until golden brown, for.
  • About 20 minutes.
  • Meanwhile on a small saucepan blend milk with white sauce mix. Cook until sauce thickens (or follow package directions or...make your own white sauce. Recipe #62371).
  • Add peas and dill weed. Mix well.

  • Drain and put chickpeas and lemon juice in blender, blended until they have become like mash.
  • In a bowl and add tuna, chickpeas mash, breadcrumbs, dill, garlic and egg. Mix until all ingredients are well combined, then roll into small balls and set aside.
  • Add Oil to a frying pan and cook balls evenly over medium heat until they turn brown, then add tomato passata and basil and cook for about 5 minutes.
  • Cook spaghetti according to packet instructions.
