1 can (5 ounces) light water-packed tuna, drained and flaked
1 celery rib, finely chopped
1/4 cup fat-free mayonnaise
1/4 teaspoon pepper
2 whole wheat tortillas (8 inches), room temperature
1/2 cup shredded lettuce
1 small carrot, shredded
4 slices tomato
2 slices red onion, separated into rings
1 hard-boiled large egg, sliced

Steps:

  • In a small bowl, combine the tuna, celery, mayonnaise and pepper. Spoon tuna mixture down the center of each tortilla. Top with lettuce, carrot, tomato, onion and egg. Roll up tightly.

This is a mainstay in my house, something you can always throw together for an easy light meal. The authentic version would call for tuna packed in olive oil, but I actually prefer water-packed tuna. The salad packs a lot of protein, not just from the beans, but also from the tuna, which is also an excellent source of Omega-3 fatty acids.

Yield Serves 2 as a main dish, 4 as a starter

Number Of Ingredients 12

1 small or 1/2 medium red onion, peeled and very thinly sliced
1 tablespoon plus 1 teaspoon red wine vinegar or sherry vinegar
1 (6 1/2-ounce) can water-packed tuna, drained
1 (15-ounce) can cannellini beans or borlotti beans, drained through a strainer and rinsed
3 fresh sage leaves, slivered
2 tablespoons finely chopped flat-leaf parsley
Salt and freshly ground pepper
1 small or medium garlic clove, finely minced
1/2 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil
1 tablespoon plain low-fat or nonfat yogurt (or omit and use 4 tablespoons olive oil)
1/2 Japanese cucumber, cut in half lengthwise and sliced, for garnish

Steps:

  • Place the onion in a bowl and add 1 teaspoon of the vinegar and cold water to cover. Let sit for 5 minutes. Drain and rinse with cold water, then dry on paper towels.
  • In a medium bowl or salad bowl, combine the tuna, beans, onions, sage, and parsley.
  • In a small bowl or measuring cup, mix together the remaining vinegar, salt to taste, freshly ground pepper, garlic, and Dijon mustard. Whisk in the olive oil and the yogurt. Toss with the tuna and beans and serve, garnishing each plate with cucumber slices.

1 garlic clove, crushed

3 tablespoons lime juice
1 medium tomato, chopped (3/4 cup)
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
2 cans (5 oz each) white tuna in water, rinsed, drained

Steps:

  • Heat oil in 10-inch skillet over medium heat. Cook onion, chili and garlic in oil about 2 minutes, stirring constantly, until onion is softened.

½ cup extra-virgin olive oil
2 tablespoons fresh lime juice
¼ cup chopped parsley
¼ cup chopped cilantro
1 pinch Salt and pepper, to taste

1 (2 1/2 ounce) envelope tuna in water
1 (15 ounce) can black beans, drained
1/2 cup prepared salsa
1/2 cup shredded cheddar cheese (or a Combination of both) or 1/2 cup mozzarella cheese (or a Combination of both)
1/8 cup diced green onion
1 tablespoon fresh cilantro
3/4 cup diced green cabbage or 3/4 cup red cabbage
1/4 teaspoon seasoning salt
4 low-carb whole wheat tortillas

Steps:

  • In a medium sized bowl add the tuna, drained black beans, salsa, cheese, Green onions, Cabbage, Cilantro and Salt. Combine until well mixed.
  • Separate the tuna mixture into four equal parts. Place a serving in each whole wheat tortilla. Roll the mixture up into each tortilla, allowing the ends to remain open; there's no need to tuck them.

Other seasonings and amounts can be added to your taste, I'm sure. Tuna salads tend to be flexible. Not sure of the yield so I guessed, since I didn't measure.

1 (14 1/2 ounce) can Italian-style diced tomatoes, drained
1 (15 ounce) can black beans, rinsed and drained
1/2 cup shredded colby (a good handful) or 1/2 cup monterey jack cheese (a good handful)
1/4 cup mayonnaise
2 hard-boiled eggs, diced
1 tablespoon parmesan cheese (optional)

Steps:

  • Combine all ingredients in a medium sized mixing bowl, stirring well to combine.
