6 flat bread
3 cups fresh asiago cheese or 3 cups grana padano
2 sprigs fresh rosemary, roughly chopped
2 teaspoons white truffle oil
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Add small amount of Rosemary to each Flat bread and lightly coat with Olive Oil.
  • Cover with cheese leaving about a half inch from the edge of the Flat bread.
  • Lightly drizzle with Truffle Oil and place in the oven for 10-15 minutes or until all cheese has melted.
  • For a little twist add some prosciutto or your other favorite before cooking.

FLATBREAD WITH SAUSAGE, BELL PEPPERS, AND ASIAGO

Yield Makes 2 or 3 flatbreads, depending on thickness

Number Of Ingredients 7

All-purpose flour, for dusting a work surface
Pizza and flatbread dough
Cornmeal
2 to 3 tablespoons extra-virgin olive oil
1 pound Asiago or Parmigiano-Reggiano, shaved
1/2 pound Italian sausage, casings removed, meat crumbled into nut-size nuggets
1 red bell pepper, stemmed, seeded, and cut into thin strips

Steps:

  • 1. Set a pizza stone on the center rack. Preheat oven to 450°F, or higher if possible.
  • 2. Sprinkle some flour on the work surface.
  • 3. Divide the dough into halves or thirds, depending on how thin or thick you like your flatbread. Work the dough, rolling it into a ball, then flattening it into a circle with the palm of your hand. Press with your fingertips from the center outward, widening the circle. Start pushing this small circle into an oblong or rectangular shape, always leveling the thickness of the dough, so that the dough is about 14 by 6 inches.
  • 4. Sprinkle some cornmeal on a pizza peel or the underside of a cookie sheet. Pick up the dough and, in one deft movement, transfer it to the peel.
  • 5. Drizzle 1 tablespoon of the olive oil over the surface of the flatbread. Sprinkle half (or one third if making three flatbreads) of the Asiago evenly over the dough and then scatter one half or one third (if making three flatbreads) of the sausage and pepper over the surface.
  • 6. Pick up the peel and open the oven door. Gently slide the flatbread onto the stone; a few shakes of the peel and the dough should slide right off, thanks to the cornmeal.
  • 7. Bake the flatbread until the surface is bubbling and the bottom of the crust is turning a dark, golden color and crisping nicely, 15 minutes or less. Use the peel to remove the flatbread from the oven, cut into slices, and serve. While the first flatbread is baking, ready the next one. Bake it as you enjoy the first one. Repeat until you've used all the dough and other ingredients.

HAMBURGER-MUSHROOM BREAD PIZZA

Do not pre-cook the ground beef as it will cook in the oven, just make certain to crumble the ground beef very small --- all amounts may be adjusted to taste, Italian sausages meat may be used in place of the ground beef :)

1 loaf unsliced Italian bread (16-ounce)
2/3 cup pizza sauce, divided (I use Kittencal's No-Cook Pizza Sauce or Marinara Dipping Sauce or Kittencal's Pizza Sauce)
12 slices onions
1 1/2 cups canned sliced mushrooms, well drained (hand-squeeze out any excess moisture, can use fresh sliced mushrooms)
6 -8 ounces uncooked lean ground beef (divided in half)
1 teaspoon dried Italian seasoning, divided (or to taste)
1 teaspoon garlic powder, divided (or to taste)
1 teaspoon seasoning salt, divided (or to taste)
fresh coarse ground black pepper (to taste)
1/2 cup grated parmesan cheese, divided
2 cups mozzarella cheese

Steps:

  • Set oven to 500 degrees F.
  • Slice the loaf of Italian bread in half horizontally.
  • Place both halves of bread cut-side up on a baking sheet.
  • Spread about 1/3 cup pizza sauce over the top of each slice of bread then place mushrooms over the sauce (about 3/4 cup sliced mushrooms over each slice).
  • Place about 6 large onion slices/rings over the top of the mushrooms.
  • Divide the ground beef in half, then crumble onto top of each half of bread over the mushrooms (the pieces must be VERY small).
  • Sprinkle about 1/2 teaspoon each of Italian seasoning, garlic powder and seasoned salt over the ground beef (can use more seasonings to taste if desired).
  • Sprinkle black pepper to taste over both slices, then sprinkle about 1/4 cup Parmesan cheese.
  • Top with about 1 cup (or more) of mozzarella cheese.
  • Bake for about 10 minutes (500 degrees F) or until the beef is cooked and the cheese has melted.
  • Cut each half into 3 pieces.
