BAKED FRESH RAINBOW TROUT

Very easy and tasty recipe I invented one day with ingredients on hand, for fresh rainbow trout (farmed or wild) that my family loves. It takes very little time and is much lighter than ocean fish. I use whole fish you can buy already gutted from the supermarket, with heads and tails still on. Make sure you pick trout that are really, really fresh. I find the dish doesn't even need lemon slices but you can use them if you like. The key is to remember to add the water to the dish as instructed in directions, which keeps fish from drying out. Serve with rice and veggies. Light and delicious. Be careful of bones! Make sure to add hot water to the dish; cold water can crack the baking dish.

2 teaspoons olive oil, or to taste
2 whole rainbow trout, gutted and cleaned, heads and tails still on
¼ teaspoon dried dill weed
¼ teaspoon dried thyme
salt and freshly ground black pepper to taste
½ large onion, sliced
2 thin slices lemon
2 tablespoons hot water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking dish with about 1 teaspoon olive oil.
  • Place trout in the prepared baking dish and coat with remaining olive oil. Season the inside and outside of fish with dill, thyme, and salt. Stuff each fish with onion slices; grind pepper over the top. Place 1 lemon slice on each fish.
  • Bake in the preheated oven for 10 minutes; add water to dish. Continue baking until fish flake easily with a fork, about 10 minutes more.

2 tablespoons butter, plus more for dish
1 small onion, minced
Pinch cayenne pepper
1 package frozen spinach, thawed, drained and chopped
1 cup milk
2 eggs
2 cups shredded sharp Cheddar, plus extra for top
4 cups cooked rice
1 teaspoon freshly chopped parsley leaves
1 teaspoon freshly chopped thyme leaves
1 teaspoon chopped basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a large casserole dish.
  • In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
  • In a large bowl, whisk together milk and eggs.
  • Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
  • Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.

SIMPLE HERB-BAKED TROUT & HORSERADISH



Simple herb-baked trout & horseradish image

A super-simple whole baked fish with hot horseradish, zesty lemon and herbs - parsley, dill and thyme all work well

2 whole rainbow trout , gutted and cleaned
1 tbsp olive oil
1 lemon , thinly sliced
sprigs of various herbs (parsley, thyme and dill would all work well)
fresh horseradish , grated, to serve (optional)

Steps:

  • Heat oven to 220C/200C fan/gas 7. Lay the trout over a lightly oiled baking tray and stuff the fish cavity with slices of lemon and herbs. Season generously all over and drizzle with the remaining oil.
  • Bake in the oven for 20 mins until the fish is cooked through - the eyes will have turned white and the flesh will be soft to touch. The trout can be served as they are with your favourite seasonal vegetables, but for an added extra touch, peel away the top layer of skin and grate over fresh horseradish before serving.

Created this recipe when I had my mom visiting. She is diabetic and also has gallstones which they can't operate on so I had to keep it very plain & simple. See my suggestions for adding a little extra zip at the end.

3 trout fillets
5 -6 large potatoes
2 cups mushrooms
2 cups fresh green beans
flour
butter
milk
breadcrumbs

Steps:

  • Peel and slice potatoes into thin to medium slices.
  • Parboil potatoes for approximately 10min.
  • While potatoes are cooking slice mushrooms into thick chunks. Clean beans and cut off ends.
  • Prepare a roux by melting butter in a saucepan and adding flour. Cook for 2 min and then add milk(enough to cover potatoes).
  • Mix white sauce with potatoes and place into bottom of 13x9inch pan.
  • Place mushrooms and green beans over potatoes.
  • Wash and dry the filets then lay over top of vegetables. Sprinkle bread crumbs over filets.
  • Bake in 350° oven for 1 hour.
  • This recipe can be varied by adding cooked onion to the potatoes, changing the vegetables used and also some spices could be added to the fish before sprinkling with bread crumbs.
