Pan-Roasted Trout Bruschetta with Chili Vinaigrette image

1 large loaf country-style bread
Extra-virgin olive oil, for brushing the bread
Salt and freshly ground black pepper
1/4 cup salt
8 trout fillets, skin on
1/4 cup olive oil
3/4 cup instant flour (recommended: Wondra)
1 (12-ounce) jar roasted red peppers, sliced into bite-size pieces
16 oil-cured black olives, halved and pitted
1/4 cup finely chopped fresh Italian flat-leaf parsley
3 tablespoons garlic, minced
2 cups chili oil
1 cup extra-virgin olive oil
1/2 cup sherry vinegar
1/3 cup chili powder
1 teaspoon salt
Freshly ground black pepper
2/3 cup finely chopped fresh Italian flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice the bread into 1/4-inch thick slices. Cut those slices in half on a diagonal. Lay the slices on baking sheets in a single layer and brush the bread with extra-virgin olive oil. Season with salt and pepper. Place on a baking sheet and bake until crisp outside but still soft within, about 5 to 6 minutes.
  • On a baking sheet covered with foil, sprinkle salt over the foil. Lay the trout fillets skin side down and sprinkle the tops of the fillets liberally with more salt. Set aside in refrigerator for 10 minutes.
  • Blend the Chili Vinaigrette: In a small bowl, whisk together the garlic, chili oil, olive oil, sherry vinegar, chili powder, salt, pepper and parsley.
  • Rinse the trout fillets and pat dry. Sprinkle some pepper on the fillets. In a shallow dish filled with the flour, dredge the fillets with the flour, shaking off the excess.
  • Heat the 1/4 cup extra-virgin olive oil in a large skillet over moderately
  • high heat. When hot, add the fish, skinned side up, and cook until crisp, about 1 minute. Turn with an offset spatula and cook on the skinned side until done, about 1 minute. Transfer to paper towels to drain.
  • To serve, cut the trout into bite size pieces. Top each toast with a slice of roasted pepper and a piece of trout. Spoon some of the vinaigrette over the trout. Scatter a few olives around each portion, and dust the fish with the remaining parsley. Serve immediately.

1 ½ pounds plum tomatoes, seeded and cut into small dice
¼ cup chopped fresh basil
6 tablespoons extra-virgin olive oil, divided
2 tablespoons finely chopped red onion
2 large cloves garlic, minced
2 teaspoons red wine vinegar
freshly ground black pepper to taste
1 French baguette, cut into 1/2-inch thick slices
1 tablespoon high-quality balsamic vinegar, or to taste

Steps:

  • Stir tomatoes, basil, 3 tablespoons olive oil, red onion, garlic, red wine vinegar, and pepper together in a bowl; let tomato mixture stand at room temperature for 15 minutes, then place in the refrigerator to marinate for 45 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Brush one side of each slice of bread with remaining olive oil. Place bread slices, oiled-side-up, onto a baking sheet.
  • Broil until golden brown, about 2 minutes; remove from oven. Spoon tomato mixture evenly over the top of toasted bread slices; drizzle balsamic vinegar evenly over tomato mixture. Serve immediately.

BRUSCHETTA WITH SWISS CHARD AND SMOKED TROUT



Bruschetta With Swiss Chard and Smoked Trout image

You can serve these bruschetta for lunch or dinner, or cut them into smaller pieces and serve them as appetizers. I use drained, canned smoked trout packed in oil (although it doesn't have to be packed in oil). Don't forget to squeeze on a little lemon juice when you serve these; it's a perfect touch. The trout is an excellent source of omega-3 fats.

1/2 pound Swiss chard
2 tablespoons extra virgin olive oil
2 garlic cloves, 1 minced, 1 cut in half
Salt
freshly ground pepper
2 thick slices whole-grain country bread (about 2 ounces each)
4 ounces smoked trout
Lemon wedges for serving

Steps:

  • Stem the chard, and wash the leaves and stems in two rinses of water. Cut the stems in small dice. Blanch the chard leaves in salted boiling water (or steam them) for one to two minutes until tender. Transfer to a bowl of ice water, then drain and squeeze out excess water. Chop medium-fine.
  • Heat the olive oil over medium heat in a medium skillet. Add the chard stalks. Cook, stirring often, until tender, five to eight minutes. Stir in the minced garlic, and cook, stirring, just until fragrant, about 30 seconds. Add the chopped chard leaves, and toss together for about a minute. Remove from the heat. Season to taste with salt and pepper.
  • Lightly toast the bread, and rub with the cut garlic. Brush with the remaining olive oil. Top with the chard, and press down with the back of a spoon. Use a fork to flake the trout, and place on top. Squeeze on a few drops of lemon juice, and serve.

1 tablespoon chopped green onion
1 tablespoon grated ginger
1 tablespoon sliced shallot
1 1/2 teaspoons chopped garlic
1/2 teaspoon black sesame seed
1/2 teaspoon white sesame seeds
1 tablespoon red chili paste (sambal oelek)
2 tablespoons honey
1/4 cup rice vinegar
1/4 cup soy sauce
1/2 cup canola oil
1/4 cup all-purpose flour
1/4 cup cornstarch
salt
ground black pepper
2 butterflied skin-on rainbow trout (easier to handle if cut into 4 fillets)
vegetable oil, for frying
1 1/2 cups cooked basmati rice, cooled
1 teaspoon chopped fresh basil
1/4 teaspoon chopped fresh thyme
1/4 teaspoon chopped fresh oregano
1 tablespoon butter
fresh cilantro stem, for garnish

Steps:

  • To prepare vinaigrette:> Combine cilantro, green onions, ginger, shallots, garlic, sesame seeds, chile paste, honey, vinegar, soy sauce and oil in a medium bowl; whisk to mix well. Set aside. Vinaigrette can be prepared ahead to enhance flavors; whisk before serving. (Makes about 1 1/2 cups.).
  • To prepare trout and rice: Stir together flour, cornstarch, 1 1/2 teaspoons salt and 1 teaspoon pepper. Dip trout in flour mixture, coating lightly but completely.
  • Heat about 1/8 inch oil in a large skillet over medium-high heat; when oil is hot, add trout, skin side down, and fry about 2 minutes. Turn and fry about 2 minutes more, until cooked through.
  • While fish is cooking, in a second skillet, combine rice, basil, thyme, oregano, salt and pepper to taste and butter; cook and stir until hot, about 5 minutes. Mound the rice mixture in the center of 2 serving plates, creating as much height as possible. Arrange trout on top of rice. Ladle vinaigrette around rice; garnish with cilantro sprigs. Serve immediately. Refrigerate any remaining vinaigrette for later use.
