TAPIOCA PUDDING PARFAITS



Tapioca Pudding Parfaits image

Creamy pudding is layered with fruit preserves, caramel sauce or chocolate sauce and topped with nuts, chocolate pieces or spices. It is a great kid-friendly dessert that can even be presented elegantly for an adult dinner. From the December 2004 issue of Country Living. Cook time does not include chill time.

1/3 cup sugar
3 egg yolks
4 tablespoons dry tapioca
3 1/2 cups milk
3/4 cup caramel sauce or 3/4 cup fruit preserves
1/4 cup decorative candies or 1/4 cup chocolate piece

Steps:

  • Fill a large bowl with ice water and set aside.
  • Mix the sugar, tapioca, milk and egg yolks together in a medium saucepan.
  • Cook on medium-high heat, stirring constantly, until mixture comes to a full boil.
  • Remove from heat, transfer the pudding to a medium bowl, and set in the ice bath.
  • Chill for at least 1 hour or until pudding cools completely.
  • To prepare the parfaits: place 3 tablespoons tapioca in a small parfait glass.
  • Spread one tablespoon of sauce or preserves over the tapioca.
  • Top with 3 more tablespoons tapioca and 1 more tablespoon sauce or preserves.
  • Finish with a final layer of 2 tablespoons tapioca.
  • Repeat with 5 more parfait dishes and garnish with nuts, candies, chocolate pieces, or a sprinkle of cinnamon, if desired.

Choose your favorite fruit to make this a delicious and cool dessert. Cooking time does not include 20 minute cooling time.

1 (3 1/2 ounce) can coconut milk
2 1/2 cups whole milk (approximately)
3 tablespoons quick-cooking tapioca
1/3 cup granulated sugar
1 egg, lightly beaten
sliced strawberry
pineapple bits
banana, sliced
shredded coconut
raisins

Steps:

  • Shake can of coconut milk well. Pour coconut milk into a 1-quart measure. Add whole milk to make 3 cups. Pour milk into a saucepan and add tapioca, sugar and egg. Stir gently just to combine, then let set 5 minutes.
  • Over medium heat, bring tapioca mixture slowly to a full boil, stirring constantly with a rubber or wooden spatula. At the boil, remove from heat. Fold in fruit of choice. Pour into ramekins, dessert bowls, or lidded containers. Cool 20 minutes.
  • Stir tapioca well in each container, then chill. Tapioca will thicken as it cools.

2 cups nonfat vanilla yogurt (recommended: Dannon Lite and Fit)
2 teaspoons lime juice
1 pinch cayenne pepper
1 (15.25-ounce) can tropical fruit salad, drained (recommended: Dole)
1 banana, sliced
1 cup cinnamon granola cereal
Fresh mint sprigs, for garnish

Steps:

  • In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
  • Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
  • Serve immediately garnished with a sprig of fresh mint.
