Number Of Ingredients 8

4 large sweet potatoes (3-1/2 pounds)
1 can (8 ounces) crushed pineapple, undrained
6 tablespoons butter, melted, divided
3/4 teaspoon salt
Pinch pepper
1/2 cup crushed saltines
2 tablespoons brown sugar
Pinch ground cloves

Steps:

  • In a large saucepan, cover sweet potatoes with water; bring to a boil. Reduce heat; cover and simmer for 30 minutes or until tender. Drain and cool. , Peel the potatoes and place in a large bowl; mash. Add the pineapple, 2 tablespoons butter, salt and pepper; mix well. , Transfer to a greased 2-qt. baking dish. Combine saltines, brown sugar, cloves and remaining butter; sprinkle over potatoes. Bake, uncovered, at 375° for 30 minutes.

4 medium-size Yukon gold potatoes, unpeeled and cut into 2-inch pieces
2 teaspoons peanut oil
1/2 Vidalia or red onion, cut in 1/2 and thinly sliced into half-moons
1 (8-ounce) can tropical fruit salad in passion fruit nectar
1 tablespoon brown sugar
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon freshly ground black pepper
1 pound thick-cut deli ham

Steps:

  • Place the potatoes in a large saucepan and add enough water to cover. Set over high heat, bring to a boil, and boil until the potatoes are fork-tender, about 8 minutes. Drain and set aside.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook, stirring, until softened, about 3 minutes. Add the fruit along with the juice from the can, the brown sugar, soy sauce, and pepper, bring to a simmer, and simmer until the liquid thickens and reduces slightly, about 5 minutes. Add the ham slices and potatoes and simmer for 2 minutes to heat through. Serve.

4 large sweet potatoes, 3-1/2 pounds)
1 can(s) 8 oz. can crushed pineapple (undrained)
6 Tbsp melted butter or margarine
3/4 tsp salt
1 pinch pepper
1/2 c saltienes (crushed)
2 Tbsp brown sugar
1 pinch cloves

Steps:

  • 1. In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.
  • 2. Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.
  • 3. Transfer to a greased 2-qt. baking dish.
  • 4. Combine saltines, brown sugar, cloves and remaining butter,; sprinkle over potatoes. Bake uncovered, at 375 degrees for 30 min.

4 large sweet potatoes
1 (8 ounces) can pineapple tidbits
1 (8 1/2 ounces) can apricots, pureed
1/2 c firmly packed light brown sugar
1 1/2 Tbsp cornstarch
2 tsp grated orange zest
1/2 tsp salt
1/8 tsp ground cinnamon
1/2 c chopped pecans
2 Tbsp butter, softened

Steps:

  • 1. Combine sweet potatoes and enough water to cover in a large saucepan. Cook over medium-high heat until tender, about 20 minutes; drain. Let stand to cool. Preheat oven to 375ºF. Grease a 2-quart baking dish. Peel sweet potatoes and cut into 1/2-inch slices. Place in the prepared baking dish. Drain pineapple, reserving 1/3 cup juice and the pineapple. Combine reserved pineapple juice, pureed apricots, brown sugar, cornstarch, orange zest, salt and cinnamon in a medium saucepan and mix well. Cook over medium-low heat, stirring continually, until thickened, about 3 minutes. Add reserved pineapple, pecans and butter and mix well. Pour over sweet potatoes. Bake until hot and bubbly, about 20 to 25 minutes.

6 tablespoons lime juice
3 tablespoons ginger root
6 tablespoons apricot preserves
6 tablespoons soy sauce
1 pounds chicken breasts
2 units sweet potatoes

Steps:

  • 1. Preheat grill.
  • 2. In a large bowl, whisk together lime juice, ginger, preserves and soy sauce. Set aside 1/2 of the marinade. Add chicken to the remaining marinade, cover and refrigerate for at least 1 hour and up to 24 hours, turning chicken occasionally.
  • 3. Grill sweet potato slices until tender, about 8 minutes, brushing with reserved marinade as they cook. At the same time, grill chicken until firm and cooked through, about 4 to 5 minutes per side.

3 can(s) cut sweet potatoes, 29 oz
1 can(s) mixed tropical fruit, 15 oz
1 can(s) mandarin oranges, 15 oz
1 can(s) crushed pineapple, 8 oz
1 pkg pecans, chopped, sm pkg
brown sugar, to taste
1 tsp cinnamon (optional)
1 tsp nutmeg (optional)
1 dash(es) tabasco sauce (optional)

Steps:

  • 1. Drain sweet potatoes and put in 5-6 qt crock pot (save juice).
  • 2. Drain mixed tropical fruit and mandarin oranges and put in crock pot (save juice).
  • 3. In sauce pan add sweet potato OR fruit juices, add pecans, brown sugar, spices, and tabasco.
  • 4. Heat mixture until brown sugar dissolves and add to crock pot.
  • 5. Cook on High setting for 2 hours.
  • 6. Cover top with miniature marshmallows.
  • 7. Remove stoneware crock from appliance, remove lid, place in 350 degree oven until marshmallows are lightly browned.

1/4 c raisins
1/4 c flaked coconut
1/4 c pecan pieces

Steps:

  • 1. Heat oven to 350 degrees. Spray a 2-quart casserole with non-stick cooking spray. Mix all ingredients in a large bowl. Combine well. Pour into the casserole dish and bake for 30 minutes.
