2-1/4 cups sweetened shredded coconut, divided
2 tablespoons butter, melted
1 can (20 ounces) crushed pineapple, undrained
32 large marshmallows
2 teaspoons rum or vanilla extract
1/4 teaspoon salt
1 cup heavy whipping cream, whipped

Steps:

  • In a bowl, combine 2 cups coconut and butter. Press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 325° for 8-10 minutes or until golden brown. Cool on a wire rack. Toast the remaining coconut; set aside., Drain pineapple, reserving 1/2 cup juice (discard remaining juice or refrigerate for another use); set pineapple aside. In a saucepan, combine marshmallows and reserved juice. Cook and stir over medium heat until marshmallows are melted. Remove from the heat. Add pineapple, extract and salt; mix well. Refrigerate for 2 hours or until cool., Fold in the whipped cream; spoon into prepared crust. Sprinkle with toasted coconut. Refrigerate for 2 hours or until set. Refrigerate leftovers.

1-2/3 cups BAKER'S ANGEL FLAKE Coconut, divided
1/3 cup butter or margarine, melted
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1-1/2 cups cold milk
1 large banana, sliced
1 can (8 oz.) crushed pineapple in juice, well drained
1-1/2 cups thawed COOL WHIP Whipped Topping
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted

Steps:

  • Heat oven to 325°F.
  • Mix cookie crumbs, 2/3 cup untoasted coconut and butter in medium bowl until blended; press onto bottom and up side of 9-inch pie plate. Bake 10 min. or until golden brown. Cool.
  • Beat pudding mix and milk in large bowl with whisk 2 min. Stir in remaining untoasted coconut. Arrange banana slices on bottom of crust; cover with pudding mixture. Gently stir pineapple into COOL WHIP; spread over pudding layer. Sprinkle with toasted coconut.
  • Refrigerate 4 hours or until firm.

4 ounces fat-free cream cheese, softened
Sugar substitute equivalent to 4 teaspoons sugar
2 medium firm bananas, cut into 1/4-inch slices
2 cups reduced-fat whipped topping, divided
1 reduced-fat graham cracker crust (9 inches)
4 maraschino cherries, halved
2 tablespoons chopped walnuts, toasted

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small bowl, beat the cream cheese, sugar substitute and 1 tablespoon reserved juice until smooth. Add bananas to remaining reserved juice. Fold 1/4 cup whipped topping into cream cheese mixture. , Drain bananas; arrange half of the slices in the crust. Carefully spread with cream cheese mixture. 1 1/2 c shortbread cookie crumbs (about 20 cookies)
1 2/3 c flake coconut, divided
1/3 c butter or margarine, melted
1 large banana, sliced (if adding a garnish on top, use 1 extra banana)
1 1/2 c cold milk
1 pkg (4 serving size) vanilla instant pudding
1 can(s) (8 oz.) can crushed pineapple, well drained
2 c whipped topping, thawed ( or whipped cream, stabilized*)
1 c flaked coconut, toasted (optional) (or more as desired)

Steps:

  • 1. Heat oven to 325ºF.
  • 2. Mix cookie crumbs, 2/3 cup of the coconut and butter in medium bowl until well blended. Press mixture evenly onto bottom and up sides of 9-inch pie plate. Bake 10 minutes or until golden. Cool. Arrange banana slices on crust.
  • 3. Pour cold milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Stir in remaining 1 cup coconut. Spoon over banana slices in crust. Gently stir pineapple into whipped topping. Spread over pudding mixture. Sprinkle with toasted coconut, if desired. Chill for about 4 hours or until set.
  • 4. **Note: I often use real whipping cream, whipped with a couple of tablespoons of fine baking sugar, 1 tsp. flavoring, vanilla, or whatever suits your mood. I add a package of 'Whip it" or any of the stabilizers you can purchase in baking aisle to hold whipped cream together longer. You can use low fat products, sugar free, etc. or whatever dietary needs you have as well as making it as written. It will still be creamy and delicious!
  • 5. For toasting coconut, place a skillet, dry, over medium heat. Add desired amount of coconut. Allow to slowly toast to a golden color, stirring often, until coconut is evenly toasted. Remove from heat and allow to cool before using to top pie. Put any left over into a sealed container and refrigerate to use as desired later.

Last week I had a small get-together for a few friends to celebrate one of our friends on his birthday. The celebrant is Diabetic and has high Cholesterol -but he wanted a pie for his birthday. Here is what I came up with -I used three different fresh, tropical fruits. You can even use one or two. Everyone enjoyed it...

Number Of Ingredients 12

1 prepared, baked pie crust
1 1/2 c apricot nectar (you can use any canned nectar)
4 Tbsp cornstarch
4 Tbsp lemon juice, fresh
8 Tbsp splenda (reserve 4 tablespoons for whipped cream.) -can use sugar or honey for glaze.
1/2 tsp salt
1 c fresh pineapple, cubed
2/3 c fresh mango, cubed
1/3 c papaya, cubed
1 c heavy whipping cream, whipped
1/2 c moist coconut
1/2 c chopped nuts

Steps:

  • 1. Prepare one cooked 9-inch pie shell using packaged pie crust, or your favorite recipe for crust.
  • 2. In a 2-quart saucepan, bring 1 1/2 cups Apricot Nectar to the boiling point (You could use Guava or any Nectar). Cool to room temperature.
  • 3. Dissolve: 4 tablespoons Cornstarch in 4 tablespoons fresh lemon juice; add 4 tablespoons Splenda (can use Sugar or Honey) and 1/2 teaspoon salt. Add to saucepan with the nectar, and cook until thick and clear (Don't walk away -it thickens fast.); cool slightly.
  • 4. Add 2 cups chopped or diced fresh fruit. I used a combination of fresh pineapple, mango and papaya. You could use any combination that you like or just one fruit.
  • 5. Spoon into baked pie shell. Chill.
  • 6. Spread 1 cup heavy whipping cream whipped with 4 tablespoons Splenda(Can use Sugar)on top of chilled pie.
  • 7. Lightly distribute 1/2 cup moist coconut mixed with 1/2 cup chopped nuts over the top (I used peanuts, but I figure depending on the fruit you use, you can use different nuts and with or without the coconut.).
  • 8. Enjoy. Please let me know if you make this pie -and also if you use different fruits. I think it would be nice to try different fresh fruits -peaches, oranges, strawberries??? Here is a picture of the pie along with a pound cake he probably shouldn't have had but wanted. Hey, it was his birthday, comes only once a year and I am not his Mama. It was good too. Smile!!

2 cups milk
4 medium eggs
1/2 cup sugar
1/4 teaspoon salt

Steps:

  • Make sure the pie shell has been chilled for 30 minutes before baking. Preheat the oven to 350 degrees.
  • Heat the milk in a double boiler until bubbles form around the outer edge of the pan.
  • In a bowl beat the eggs and sugar add salt, vanilla, butter and grated coconut. stir in the heated milk
  • Pour the custard mixture into the pie shell.
  • Bake for 30 minutes or until the custard sets.
  • Take the pie out of the overn and let cool and then place in the fridge for at least 2 hours
  • Before serving garnish the pie with fresh fruit slices.

1 ready-to-use graham cracker crumb crust (6 oz.)

Steps:

  • Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved.
  • Beat cream cheese in large bowl with mixer until creamy. Gradually add gelatin, mixing well after each addition. Stir in pineapple, rum extract and 1 cup COOL WHIP.
  • Sprinkle 2 Tbsp. each coconut and nuts onto bottom of crust; cover with pineapple mixture.

1 (16 ounce) carton nonfat yogurt, no gelatin added
1 (20 ounce) can crushed pineapple, packed in own juice
1 tablespoon unflavored gelatin
1 medium banana, diced
1 tablespoon lemon juice
2 tablespoons powdered sugar
2 tablespoons flaked coconut, toasted
1 (9 inch) prepared graham cracker crusts (I use Graham-Cracker Crust (Microwave).)

Steps:

  • The day before, place in yogurt in a strainer lined with cheesecloth or a yogurt strainer and place in the refrigerator; allowing to drain for 24 hours.
  • Making sure to reserve the liquid, drain the pineapple in a stainer, pressing against sides to remove liquid.
  • Soften the gelatin in 1/4 cup of the pineapple juice for 5 minutes; heat 1/2 cup of the remaining juice; add softened gelatin and stir to dissolve, cool slightly.
  • Sprinkle the banana with lemon juice and toss to coat; place the coconut in a dry skillet and over medium heat toast lightly.
  • Place the yogurt cheese in a medium-sized bowl, gently stir in sugar with a fork or wire whisk; gradually add the gelatin mixture and continue stirring until well blended.
  • Fold in the drained pineapple, bananas and toasted coconut.

2 cups strawberries
1/2 cup sugar
4 teaspoons cornstarch
1/4 cup water
398 ml pineapple tidbits, drained
1 (9 inch) pie crusts, baked

coconut flakes, roasted
1/3 cup sugar
1/4 cup cornstarch
1 dash salt
1 1/4 cups milk
1 cup coconut milk
2 egg yolks
2 teaspoons vanilla

Steps:

  • Coconut Cream : In a saucepan, mix sugar, cornstarch and salt. In a bowl, mix milk, coconut milk and egg yolks. Pour this mixture in the saucepan. Cook at medium heat, always stirring, 12 to 15 minutes. Keep cooking at medium-high heat, stirring, 2 to 3 minutes or until the mixture has thicken enough to coat the back of a spoon. Remove the saucepan from the heat.
  • In a fine strainer on a large bowl, strain the cream. Add vanilla. Cover directly the surface of the cream with a plastic wrap. Let cool for 15 minutes at room temperature.
  • In a food processor or blender, chop finely 1 cup of strawberries. In a small saucepan, mix sugar and cornstarch. Add chopped strawberries and water and stir. Cook at medium heat, stirring from time to time, for about 5 minutes or until it's bubbling. Let cool.
  • Meanwhile, in a bowl, mix coconut cream and pineapple. Spread uniformly this mixture on the pie crust. Cut the remaining strawberries in half. Beginning by the outside, put the strawberries in 2 or 3 rows on the pineapple mixture. Cover the pie with the cold strawberry mixture. Cover with plastic wrap, without stretching, and put in the fridge for about 3 hours or until the garnish is firm. When ready to serve, garnish each serving with whipped cream and coconut flakes.

2 tablespoons granulated sugar
1/2 teaspoon salt

Filling:
1/4 cup pineapple juice
1/4 cup orange juice
1/4 cup guava juice
2 teaspoons Triple Sec or orange-flavored liqueur
1/2 cup granulated sugar
3 tablespoons honey
6 large egg yolks
½ cup unsalted butter, cut into ½ inch pieces
Meringue:
6 large egg whites
1/2 teaspoon cream of tartar
1/2 teaspoon almond extract
1/4 cup granulated sugar
1/3 cup flaked coconut, lightly toasted

Steps:

  • 1. In food processor with metal blade, process cookies, sugar and salt until finely crumbled. Empty into small bowl; add sugar and melted butter, combine until firm enough to handle. Press into 9-inch pie pan. Bake at 350 for 10 to 15 minutes or until lightly brown. Cool completely and set aside. 2. For pie filling, combine juices, liqueur, sugar, honey, egg yolks and butter in a heavy non-reactive sauce pan and whisk to mix. 3. Place the pan over low heat and whisk constantly; cook 8 to 10 minutes or until mixture is thick and smooth. Do not boil or mixture will curdle. Strain mixture to remove any lumps. Transfer to a bowl, place plastic wrap directly to surface and let cool completely. 4. For meringue, add egg whites to large bowl and beat on medium speed until mixture is frothy. Add in cream of tartar, vanilla and sugar gradually. Beat on high until firm peaks form. 5. Fill cooled pie crust with filling. Top with meringue mixture; cover edges of crust with mixture to avoid shrinkage. Bake at 400 degrees for 5-7 minutes or until peaks are lightly browned. Turn pie after 3 minutes to ensure even browning. 6. Let pie cool on rack for 1 hour; refrigerate 8 hours or overnight. Before serving sprinkle pie with toasted coconut. Keep refrigerated.

1/3 cup sugar
1/2 teaspoon rum extract
1 can (8 ounces) crushed pineapple, undrained
2-1/3 cups sweetened shredded coconut, divided
1 carton (8 ounces) frozen whipped topping, thawed, divided

Steps:

  • In a large bowl, beat the cream cheese, sugar and extract until smooth. Fold in the pineapple, 2 cups coconut and 2 cups whipped topping. Pour into an ungreased 9-in. pie plate. Top with remaining whipped topping. , Toast remaining coconut and sprinkle over the top. Cover and freeze for at least 3 hours before cutting. May be frozen up to 3 months.
