CITRUS OVERNIGHT OATMEAL
Packed with protein and vitamin C, this easy make-ahead breakfast recipe was inspired by a childhood favorite, the Orange Julius. My "grown-up" but kid-friendly version is equally delicious, albeit a bit healthier, I imagine, with pure orange juice, egg white protein powder, fresh oranges and a sprinkle of sliced almonds.

Steps:
- Combine the oats, orange juice, egg white powder and 1/8 teaspoon salt in a glass Mason jar or bowl, and cover. Refrigerate overnight.
- The next morning, peel and chop the orange. Stir the oatmeal mixture, then top with chopped fresh orange and sliced almonds.

Steps:
- In 1 1/2-quart saucepan, heat water to boiling. Stir in oats, gingerroot and salt. Reduce heat; simmer gently uncovered 25 to 30 minutes, without stirring, until oats are tender yet slightly chewy; stir in banana. Divide oatmeal evenly among 4 bowls.
- Top each serving with yogurt, mango, strawberries, coconut and walnuts. Serve immediately.
