TROPICAL BBQ CHICKEN

I couldn't find any recipes for a tropical bbq chicken that had all the ingredients I wanted to use so I made one myself. If you want a thicker sauce I would reduced the pineapple juice by 1/2 a cup or increase the flour by a tablespoon.

3/4 cup chopped onion
3 tablespoons butter
3 tablespoons flour
3 cups pineapple juice
1/4 cup soy sauce
2 teaspoons prepared mustard (I used spicy brown)
1/2 cup barbecue sauce, sauce (I used hunt's hickory brown sugar)
1 1/2 cups dark brown sugar (more or less depending on taste)
1 teaspoon chili powder (to taste can be more or less)
1 cup chicken broth
2 1/2 lbs chicken (pieces, breasts, bone in our bone out, with skin or without)

Steps:

  • Saute onion in butter for 5-10 minutes over medium heat.
  • Add flour and mix until a paste is formed.
  • Slowly stir in pineapple juice waiting for all juice to be absorbed before adding more.
  • Add soy sauce, mustard and bbq sauce and stir until dissolved.
  • Add brown sugar and chili and stir until dissolved.
  • Pour in chicken broth, stir and then add chicken. Cook on stove until slightly thickened.
  • Preheat over to 325 and cook with lid on for 1- 3 hours depending on how long you want the chicken to soak for.

BAKED COCONUT CHICKEN TENDERS WITH MANGO CHUTNEY DIPPING SAUCE



Baked Coconut Chicken Tenders with Mango Chutney Dipping Sauce image

Olive oil cooking spray, for the rack and tenders
1/2 cup coconut flour
4 large eggs
1/4 cup coconut milk or 2 percent milk
Kosher salt and freshly ground black pepper
1 1/2 cups whole-wheat panko breadcrumbs
1 cup unsweetened shredded coconut
2 pounds chicken tenders
1 cup store-bought mango chutney
1/4 cup Greek yogurt
1 jalapeno, seeded and finely diced

Steps:

  • For the chicken tenders: Preheat the oven to 400 degrees F. Add a wire rack to a baking sheet and spray with cooking spray.
  • In 3 separate shallow bowls, create a 3-step breading process. In the first bowl, add the coconut flour. In the second bowl, whisk the eggs, milk and a pinch of salt to combine. In the last bowl, add the panko, coconut, 1 teaspoon salt and 1/2 teaspoon pepper and stir to combine.
  • Pat the chicken dry and add it to the coconut flour, shaking off any excess. Then dip it in the egg mixture, making sure to coat the chicken entirely. Last, lay the chicken in the panko mixture, turn it over and press into the breading to coat evenly. Place on the prepared rack on the baking sheet and spray with cooking spray. Bake until golden brown, 18 to 20 minutes. If the chicken is light in color, place under the broiler for the last 2 minutes of cooking time.
  • For the dipping sauce: Stir together the chutney, yogurt and jalapeno in a medium bowl.
  • Serve the chicken with the dipping sauce.

DIVINE CHICKEN AND MANGO CURRY

This wonderful dish is made using two of the most popular ingredients used in India and the sub-continent. The chicken is cooked in the rich coconut sauce and at the end of cooking the mango and tomato are added. I have just cooked a batch of this for the local restaurant for their curry night on Saturday.

3 lbs skinless chicken, and cubed
4 tablespoons curry powder
1 tablespoon lemon juice
100 ml plain yogurt
1 ounce butter
1 tablespoon oil
1 medium onion, sliced
4 garlic cloves, chopped
1 teaspoon gingerroot, chopped
400 ml coconut milk
1 teaspoon salt
1 medium mango
1 tomatoes, chopped
2 tablespoons fresh coriander leaves, chopped

Steps:

  • Beat togethet the curry powder, lemon juice and yoghurt.
  • Marinate the chicken in the spice mix for 30 minutes.
  • In a large pot heat the butter and oil together, and fry the onions till light brown in colour.
  • Add the ginger and garlic, cook for 2 miins.
  • Add the chicken and cook in the sauce for 5 minutes.
  • Add the coconut milk and salt, cover the pot and cook on low heat for approx 30 mins till the chicken is tender.
  • Slice the mango and remove the skin, (go on let the yourself go and suck the stone), add the mango flesh to the pot with the tomato. Stir gently and garnish with the coriander leaves.
  • This is super over plain rice or noodles. Enjoy.

TROPICAL BAKED CHICKEN

This is an exotic take on the traditional baked chicken. The fruit juices and delicious spices really make this version outstanding.

3 lbs chicken pieces
4 teaspoons Dijon mustard
2 tablespoons honey
1/2 cup chopped onion
1/4 cup chopped green bell peppers or 1/4 cup red bell pepper
2 tablespoons butter, cut into bits
1 teaspoon dried basil, crumbled
1 teaspoon paprika
1 teaspoon ground cinnamon
1 cup orange juice
1/2 cup pineapple juice
1/4 cup dark brown sugar, firmly packed

Steps:

  • Position rack in the center of the oven.
  • Preheat oven to 350°F.
  • Mix together Dijon mustard, basil and honey.
  • Smear the chicken with this mixture.
  • Arrange chicken, skin side down, in a shallow roasting pan or baking dish just large enough to hold it in a single layer.
  • Sprinkle the pieces with finely chopped onions, bell peppers, butter, salt and freshly-ground pepper to taste and 1/2 tsp each of cinnamon and paprika.
  • Pour orange and pineapple juice around the chicken.
  • Bake, basting once, for 30 minutes.
  • Turn the chicken skin side up, season with salt and pepper, 1/2 tsp each of cinnamon and paprika, and all of brown sugar.
  • Bake until the chicken is tender and golden, about 20 minutes longer.
  • Add more orange juice or pineapple juice if the pan seems dry.
  • Pour the juice into a small saucepan and boil over high heat until it becomes syrupy.
  • Spoon the sauce over the chicken and serve.

TYPICALLY TROPICAL MANGO CHICKEN

A dish I created for the RSC #8. It has it all, and you just need to serve it with rice and fried plantains. I made it several times before posting it and came to the conclusion that if I replaced the scotch bonnet with a green or red chili it is still a very good dish but it loses some of the taste sensation. I realize that it is sometimes difficult to obtain certain ingredients and that the heat of a scotch bonnet might not be to your taste, so please feel free to substitute if availability is a problem. Note that the raisins need to be soaked for several hours and this is not included in the prep time.

1/2 cup raisins
4 tablespoons dark rum
1/2 cup dried coconut
1/2 cup milk
2 tablespoons vegetable oil, divided
1 lb chicken breast, cubed
1 onion, chopped
2 cups butternut squash, small cubes
5 garlic cloves, finely chopped
1 scotch bonnet pepper, seeds removed and very finely chopped (the size is up to you)
salt and pepper
1 teaspoon ground ginger
1 teaspoon curry powder
1 red bell peppers or 1 yellow bell pepper, cut into short strips
1 1/2 cups chicken stock (approx)
1 mango, cut into cubes
1 tablespoon lime juice (or more)

Steps:

  • Soak the raisins in the rum for a minimum of 4 hours or overnight.
  • Mix the coconut with the milk, set aside.
  • In a large skillet, heat 1 tablespoon of the oil and brown the chicken, remove from the pan.
  • Heat the other tablespoon of oil, add to the pan: the onion, butternut squash, garlic, scotch bonnet and some salt and pepper, fry for approx 5 minutes on medium heat.
  • Now add the ginger and the curry powder, fry for another 5 minutes whilst stirring.
  • Add the sweet bell pepper strips, coconut/milk mixture and chicken stock and return the chicken cubes to the skillet.
  • Bring to the boil and simmer for 15 minutes.
  • Then add the soaked raisins and the mango cubes.
  • Heat through, add the lime juice and taste to check if you want to add more.
  • Serve with rice and fried slices of plantain.

Olive oil cooking spray, for the wire rack and chicken
1/2 cup coconut flour
2 large eggs
1/2 cup light coconut milk
1 1/2 cups whole wheat panko crumbs
1 cup shredded unsweetened coconut, preferably Bob's Red Mill
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds chicken tenders
1 cup store-bought mango chutney
1/4 cup Greek yogurt
1 jalapeno, small dice
Serving suggestions: iceberg lettuce, diced carrots, diced tomatoes, shredded red cabbage, 1 to 2 tablespoons apple cider vinegar

Steps:

  • For the chicken tenders: Preheat the oven to 400 degrees F. Place a wire rack on a sheet pan and spray with cooking spray.
  • Create a 3-step breading process in 3 separate shallow bowls. Put the coconut flour in the first bowl, eggs and coconut milk in the second bowl, whisked to combine, and panko, coconut, salt and pepper in the last bowl, stirred to combine.
  • Pat the chicken dry and add it to the coconut flour, shaking off any excess, then dip it in the egg mixture, making sure to coat the chicken entirely. Lastly, lay the chicken in the panko mixture, turning it over and pressing into the breading to coat evenly. Place on the wire rack. Spray the chicken with additional cooking spray. Bake until golden brown, 18 to 20 minutes. (See Cook's Note.)
  • For the dipping sauce: Whisk together the chutney, yogurt and jalapeno in a medium bowl.
  • To serve this as a salad, combine the iceberg, carrots, tomatoes and red cabbage together in a bowl. Whisk the apple cider vinegar into the mango dipping sauce to make a dressing. Lightly dress the salad with the mango dressing. Top with the coconut chicken and serve.

1/2 cup orange juice
1/4 cup brown sugar
2 tablespoons vegetable oil

1 (8 ounce) can sliced water chestnuts, drained
1 1/2 teaspoons ground ginger

Steps:

  • In a large saucepan, combine the first 6 ingredients until smooth. Bring to a boil. Then reduce heat and simmer for 2 minutes stirring occasionally.
  • Add the chicken, pineapple, water chestnuts, and ginger.

1 pound boneless skinless chicken breasts, cut into 1-inch strips
2 cups chopped peeled mangoes
1 medium onion, chopped
1 medium sweet red pepper, sliced
1 garlic clove, minced
1 cup unsweetened pineapple juice
1 cup orange juice
1/4 cup reduced-sodium soy sauce
2 tablespoons Thai chili sauce
1/4 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice and thinly sliced green onions

Steps:

  • Place chicken in a 3-qt. slow cooker. Top with mangoes, onion, red pepper and garlic. In a small bowl, combine the pineapple juice, orange juice, soy sauce, chili sauce and pepper; pour over chicken. Cover and cook on low until chicken is tender, 4-5 hours., Remove chicken mixture to a serving platter; keep warm. Transfer cooking juices to a small saucepan. Bring juices to a boil. We were invited to a BBQ by our neighbour and someone brought along this delicious skewered chicken and mango dipping sauce. Being the foodie that I am and loving the taste of the fruit, chicken and dipping sauce I pleaded for the recipe.

1 large mango, peeled
1/4 cup plain yogurt
1 jalapeno pepper, seeded and coarsely chopped
1 lime, juice of
1 green onion, coarsely chopped
salt, to taste
1/2 fresh ripe pineapple, peeled and cut into chunks. (Tinned will work too)
3 boneless skinless chicken breasts, cut into cubes
2 small green bell peppers, cut into chunks (or 1 red and 1 green)
1 small red onion, cut into chunks
1/2 teaspoon salt
fresh coarse ground black pepper, to taste
nonstick cooking spray (if needed)
6 bamboo skewers, soaked in cold water for at least 30 minutes

Steps:

  • To prepare dipping sauce place mango in a food processor or blender, add yogurt, jalapeno, lime juice, green onion and salt.
  • Pulse until smooth and refrigerate until needed.
  • Thread cubed chicken, pineapple, green peppers and red onion onto the soaked bamboo skewers sprinkling with salt and pepper.
  • Heat BBQ or charcoal grill to medium heat and spray with cooking oil if needed.
  • Place skewers on grill and cook 5 to 7 minutes per side turning as needed until the chicken is thoroughly cooked.
  • Serve with the dipping sauce.
