3/4 c. Cheddar
3/4 c. Monterey Jack

3 lb. brisket

4 cloves garlic, minced
1 1/2 c. Coca-Cola®
1 c. beef broth
1 tbsp. soy sauce
1 tbsp. Worcestershire
3 boxes TRISCUIT Crackers
2 c. Cheddar
2 c. Monterey Jack

pickled jalapeños

4 1/2 lb. brisket
kosher salt
Freshly ground black pepper
6 cloves garlic, minced
2 1/4 c. Coca-Cola®
1 1/2 c. beef broth
1 1/2 tbsp. soy sauce
1 1/2 tbsp. Worcestershire
6 boxes TRISCUIT Crackers
4 c. Cheddar
4 c. Monterey Jack

Steps:

  • Place brisket in slow cooker, fat-side up. Season generously with salt and pepper. Sprinkle with garlic. Add Coca-Cola®, beef broth, soy sauce, and Worcestershire. Cook on low for 7 hours, then let brisket rest for 20 minutes on warm setting. Peel off and discard fat, then shred the brisket. Cool in the fridge until ready to use, or set aside to use immediately.
  • For 10: Preheat broiler to low. Assemble nachos: Spread TRISCUIT Crackers out on large baking sheet. Top with about 2 cups brisket, then sprinkle with cheddar and Monterey Jack. Broil until cheese is melted (caution: baking sheet will be hot). Garnish with salsa, guacamole, and pickled jalapeños. Serve with Coca-Cola® and Coors Light. For 25: Preheat broiler to low. Assemble nachos: Spread TRISCUIT Crackers out on 3 large baking sheets. Top with about 4 cups brisket, then sprinkle with cheddar and Monterey Jack. Broil until cheese is melted (caution: baking sheet will be hot). Garnish with salsa, guacamole, and pickled jalapeños. Serve with Coca-Cola® and Coors Light. For 50: Preheat broiler to low. Assemble nachos: Spread TRISCUIT Crackers out on 6 large baking sheets. Top with about 8 cups brisket, then sprinkle with cheddar and Monterey Jack. Broil until cheese is melted (caution: baking sheet will be hot). Garnish with salsa, guacamole, and pickled jalapeños. Serve with Coca-Cola® and Coors Light.

1 box TRISCUIT Crackers
1 tbsp. extra-virgin olive oil
1/2 c. Chopped red onion
kosher salt
Freshly ground black pepper
2 c. shredded rotisserie chicken
3/4 c. barbecue sauce, plus more for drizzling
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
3 green onions, thinly sliced
1/4 c. pickled jalapeños

Steps:

  • Preheat oven to 350°.
  • Spread crackers in an even layer on a large rimmed baking sheet (preferably 12"-x-17").
  • In a large nonstick skillet over medium heat, heat oil. Add onion and season with salt and pepper. Sauté until soft, about 5 minutes, then stir in chicken and barbecue sauce and cook until heated through. Turn off heat.

20 triscuit crackers
1/2 lb ground beef
1 Tbsp taco seasoning
1/2 c red onion chopped
10 slice cheddar cheese cut into 4ths
1 jar(s) salsa
2 large jalapeno's sliced into 20 slices

Steps:

  • 1. Line a baking sheet with parchment paper or foil. Preheat oven 350 degrees. Place 20 Triscuit crackers on the baking sheet.
  • 2. Brown the ground beef and add the taco seasoning and cook until done. Add a piece cheese to each crackers. Top with a spoon of beef, then the red onion, then another slice of cheese. Bake for 10 minutes.
  • 3. Remove from oven and top each with a tsp. of salsa and a slice of jalapeno

My sister-in-law makes these and we think they are delicious. The crackers stay nice and crisp. I imagine that they are lower in fat and healthier than using nachos chips, so we'll see how Zaar nutrition facts scores this. I have guessed at the quantity amounts as you can put on as little or as much as you like.
