Gooey Butter Pecan Bars image

This recipe is popular with our entire family. It originated (in our family) with my husband's Aunt Ruby. She was a wonderful cook and a great hostess. These are very rich and gooey, which makes them great with coffee. I only make them around Christmas and we share them with our neighbors.

1 box butter cake mix
4 large eggs
2 stick butter or margarine
1 c chopped pecans
8 oz cream cheese
1 tsp vanilla
4 c confectioners' sugar
1 pinch salt

Steps:

  • 1. Mix together cake mix, one egg, one stick margarine (or butter) and one cup chopped pecans.
  • 2. Pat the above mixture into a 9" x 12" pan, forming crust.
  • 3. Mix together cream cheese, vanilla, one stick margarine (or butter), three eggs, powdered sugar and a pinch of salt.
  • 4. Pour this mixture over crust mixture. Bake at 325 for about 45 minutes.
  • 5. Let cool completely. These are very rich, cut into small, bite size pieces to serve. Store in refrigerator. Really good with coffee. Keeps well for weeks.
