1 package (12 ounces) fresh or frozen cranberries
1 cup thawed cranberry juice concentrate
1/2 cup dried cranberries
1/3 cup sugar
3 tablespoons orange juice
3 tablespoons orange marmalade
2 teaspoons grated orange zest
1/4 teaspoon ground allspice

Steps:

  • In a small saucepan, combine the cranberries, cranberry juice concentrate, dried cranberries and sugar. Cook over medium heat until the berries pop, about 15 minutes., Remove from the heat; stir in the orange juice, marmalade, orange zest and allspice. Transfer to a small bowl; refrigerate until chilled.

Steps:

  • Combine one 12-ounce bag cranberries, 1 diced peeled Granny Smith apple, 1 cup sugar, 1/2 cup Cointreau or Grand Marnier, 1/2 cup water and 1/4 teaspoon each ground cinnamon and cloves in a saucepan over medium heat. Bring to a boil, then reduce the heat and simmer until the berries start to pop, about 10 minutes. Off the heat, stir in the grated zest of 1 each lemon and orange; chill.

A blend made by trial and error and that my husband won't let me play with anymore! This can easily be made a day or two ahead of serving to allow the flavors to meld. This is a great complement to roast poultry or pork and also makes a great topper on buttered biscuits or rolls.

1 navel orange, ends trimmed
⅓ cup chopped walnuts
¾ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons triple sec (orange-flavored liqueur)

Steps:

  • Place cranberries in food processor; pulse until evenly chopped. Transfer to a mixing bowl.
  • Quarter the orange and place in the food processor with walnuts; pulse until finely chopped. Add to bowl with cranberries.
  • Mix sugar, cinnamon, nutmeg, and triple sec into cranberry-orange mixture until coated. Cover and refrigerate at least 1 hour before serving.

CRANBERRY MARTINIS

1 cup sugar
1 cup fresh cranberries
6 (1-by-3-inch) strips of orange zest, plus extra for serving (see Cook's Note)
1 (750 milliliter) bottle good vodka, such as Grey Goose
1 cup cranberry juice cocktail, preferably tart
1/4 cup Triple Sec
Ice

Steps:

  • Several days ahead, place the sugar, cranberries, 6 strips of orange zest, and 1 cup of water in a small saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes, until the cranberries start to pop open. Pour the vodka into a large pitcher, add the cranberry mixture, and store covered in the refrigerator for at least 2 days and up to 5 days.
  • When ready to serve, strain the vodka mixture, reserving the cranberries and discarding the orange zest. Stir in the cranberry juice cocktail and Triple Sec. Fill a cocktail shaker with ice, add the drink mixture, shake for a full 30 seconds (it's longer than you think!), and strain into martini glasses. Rub the rim of each glass with fresh orange zest, spoon a few cranberries into each glass, and serve ice cold.

CRANBERRIES IN TRIPLE SEC

Whole cranberries pickled in an orange liquor. This is a very simple and easy. The hard part is not eating it until it is ready. The cranberries will lose their very tart taste after sitting for a few days.

16 ounces cranberries
24 ounces triple sec

Steps:

  • Empty the cranberries in a large bowl and wash the cranberries in cold water.
  • Drain and pick out the mushy cranberries. Some cranberries are springy but are still good depending on taste. Taste one or two to see if you want them.
  • Pour the cranberries into the jar.
  • Fill the jar to the top with Triple Sec. Hiram & Walker is good.
  • Put lid on the jar and let it sit for at least 2 or 3 days.
  • To serve, scoop cranberries out of liquor and put in serving dish. Or you can leave them in the liquor.
  • Enjoy!

1 cup frozen cranberry juice cocktail concentrate, thawed
1/3 cup sugar
1 12-ounce package fresh or frozen cranberries, rinsed, drained
1/2 cup dried cranberries (about 2 ounces)
3 tablespoons orange marmalade
2 tablespoons fresh orange juice
2 teaspoons minced orange peel
1/4 teaspoon ground allspice

Steps:

  • Combine cranberry juice concentrate and sugar in heavy medium saucepan. Bring to boil over high heat, stirring until sugar dissolves. Add fresh and dried cranberries and cook until dried berries begin to soften and fresh berries begin to pop, stirring often, about 7 minutes. Remove from heat and stir in orange marmalade, orange juice, orange peel and allspice. Cool completely. Cover; chill until cold, about 2 hours. (Can be made 3 days ahead. Keep refrigerated.)
