3 cups crushed pretzels
3/4 cup butter, melted
3 tablespoons sugar
1 package fudge brownie mix (13x9-inch pan size)
3/4 cup semisweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • Preheat oven to 400°. In a small bowl, combine pretzels, butter and sugar. Press into an ungreased 13x9-in. baking dish. Bake 8 minutes. Cool on a wire rack., Reduce heat to 350°. Prepare brownie mix batter according to package directions. Pour over prepared crust. Bake 35-40 minutes or until a toothpick inserted in the center comes out with moist crumbs (do not overbake). Cool completely on a wire rack., In a microwave, melt chocolate chips and peanut butter; stir until smooth. Spread over top. Refrigerate 30 minutes or until firm. Cut into bars. Store in an airtight container.

1 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons butter, melted
MIDDLE LAYER:
3/4 cup sugar
1/4 cup butter, melted
1 ounce unsweetened chocolate, melted
1 egg
1/2 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup milk
1/2 cup chopped pecans
FROSTING:
1 ounce unsweetened chocolate
2 tablespoons butter
1-1/2 cups confectioners' sugar
1 teaspoon vanilla extract
Boiling water
16 pecan halves

Steps:

  • In a large bowl, combine the first five ingredients; stir in butter. Pat into a greased 11x7-in. baking pan. Bake at 350° for 5 minutes. , In another bowl, beat the sugar, butter and chocolate. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add to the chocolate mixture alternately with milk, mixing well after each addition. Stir in pecans; spread over bottom layer. , Bake at 350° for 25 minutes. Cool. , For frosting, in a large microwave-safe bowl, melt chocolate and butter; stir until smooth. Stir in confectioners' sugar and vanilla (mixture will be very crumbly). Beat in enough water (about 2 tablespoons) to achieve desired spreading consistency. Immediately frost brownies and top with pecans halves.

1 (20 ounce) box Betty Crocker fudge brownie mix, Dark Chocolate, prepared
1/4 cup water
1/2 cup vegetable oil
2 eggs
1 cup milk, cold
1 (3 1/2 ounce) package instant vanilla flavor pudding and pie filling
1 cup creamy peanut butter
1/2 cup powdered sugar
1 1/2 cups whipped topping, Cool Whip, DO NOT THAW
3 semi-sweet chocolate baking squares, Baker's
1/2 cup peanuts, Planters Dry Roasted, coarsely chopped

Steps:

  • Prepare the brownies as directed on the package (brownie mix, water, oil and eggs) using a 13 x 9-inch pan.
  • Whisk milk and pudding mix 2 minutes while brownies are cooling. Add peanut butter and sugar; mix well. Cover and refrigerate pudding mixture until brownies are completely cooled.
  • Spread pudding mixture over brownies.
  • Microwave whipped topping and chocolate on high for 1 minute, stirring every 30 seconds. Spread over pudding; sprinkle with nuts. Refrigerate 1 hour. Refrigerate leftovers -- yeah right, leftovers!

BROWNIES
6 oz semi-sweet baking chocolate or dark chocolate (depending on taste)
3/4 c butter
1 1/2 c sugar
1/2 c light brown sugar, packed
3 eggs
1 1/2 tsp vanilla extract
2 Tbsp espresso or brewed coffee (optional)
1 c all purpose flour
1/2 - 2/3 c nutella
12 oreo
MINTY LAYERS
7 oz marshmallow fluff
1/8 tsp peppermint extract (flavor to taste i usually use almost 3/4 tsp)
4-8 drops of green food coloring (depending on color wanted)
1 can(s) vanilla frosting
3/4 c white chocolate chips (melted)
12 mint oreo

Steps:

  • 1. Brownies - Preheat oven to 350F. Line 9×13 inch pan with foil, spray with cooking spray; set aside. Alternately, use a 9-by-9-inch pan for thicker brownies, which is my preference. I don't usually use the foil I like my glass baking dishes.
  • 2. Microwave chocolate and butter in large microwaveable bowl for 90 seconds or until butter is melted. Stir until chocolate is completely melted and smooth. Stir in sugars. Stir in eggs and vanilla. If adding espresso or coffee, add it now; batter will be a bit granular and that's okay. Stir in flour until just combined, do not over mix. Pour into prepared pan.
  • 3. Add the Nutella to the top of the brownie mixture and either just leave it sit on top or marble it with a knife in a zig-zag pattern.
  • 4. Bake for 25 to 28 minutes, or until edges pull away from the side of the pan and top and center have just set. Keep these gooey and don't over bake; brownies will continue to firm up as they cool.
  • 5. Minty Layers - In medium bowl, stir together marshmallow fluff, mint extract* (be very careful and do not use more than this unless you love mint; a little bit of mint goes a very long way), 4 drops of food coloring, or until your green is achieved.
  • 6. Mix in vanilla frosting and melted white chocolate chips. Spread across the cooled brownies.
  • 7. Top with crumbled mint Oreo Cookies.
