1 c original slaw dressing (Marzetti 15 oz. "refrigerated" brand)
4 c coleslaw mix (or fresh cabbage grated-6 cups)
2 c angel hair cole slaw (finely shredded green cabbage)
1/2 c matchstick carrots (store brand)
1 can(s) crushed pineapple, drained; 8 oz.
1-1/2 c granny smith apples, chopped
1/2 c grapes, seedless, chopped
1/2 c nuts (walnuts), chopped
1/2 c raisins
1/4 c coconut, flaked

Steps:

  • 1. In large mixing bowl, combine all ingredients. Mix well. Chill until ready to serve (at least one hour). Done.
  • 2. Tip - VARIATIONS: Just pour 1/2 to 1 cup of Marzetti original 15 oz. "Refrigerated" Slaw Dressing over 4-6 cups shredded cabbage. Chill until ready to serve. HOW EASY IS THAT!

A sweet & sour version of coleslaw that has been a big hit with my family & friends. I found this recipe in my local newspaper and adjusted it a bit to meet our needs. Prepared recipe makes about 12 servings. **Update 2/10** Once I read the review I realized I should have stated that due to the fruits within this coleslaw - it truly does not store well after 2 days. Adjust servings as needed to meet your needs.

1 (16 ounce) bag of shredded coleslaw mix (with red cabbage & carrots, not just plain cabbage)
1 (8 ounce) can pineapple chunks in juice, not syrup (reserve the juice)
1 large granny smith apple (or other tart apple)
1 cup chopped celery
3/4 cup dried cranberries
1 cup light mayonnaise
2 tablespoons cider vinegar
3 tablespoons reserved pineapple juice

Steps:

  • Drain pineapple, reserving the juice in a bowl.
  • Cut the apple into small cubes.
  • Combine the coleslaw mix, pineapple tidbits, cubed apple, chopped celery and dried cranberries in a large bowl - mixing well.
  • In a small bowl or 2 cup measure, blend together the mayonnaise, vinegar and the 3 tablespoons of reserved pineapple juice.
  • Pour mayonnaise mixture over the coleslaw mixture and toss gently to mix it well.
  • Cover and chill for 2-4 hours.
  • Before serving, toss the coleslaw gently.

A recipe I did a few years ago and that was very good. When I made it I used raisins instead of walnuts.

3 cups cabbage, grated, packed
2 red apples, unpeeled, seeded and finely diced
1/2 cup walnuts, chopped
1/2 cup salad dressing or 1/2 cup mayonnaise
1 tablespoon milk
1/4 teaspoon onion powder
1/4 teaspoon paprika
1 teaspoon sugar

Steps:

  • In a large bowl, put cabbage, apples and walnuts.
  • Combine remaining ingredients in a small bowl. Add this dressing to the cabbage mix. Stir to coat well.

KIELBASA WITH WARM COLE SLAW



Kielbasa with Warm Cole Slaw image

1 to 1 1/2 pounds kielbasa
3 cups green cabbage, cut into thin strips as if for cole slaw (not grated)
1 cup grated or julienned carrot
1 cup plain yogurt
Salt and pepper
Chopped green bell pepper or parsley for garnish

Steps:

  • Cut kielbasa into diagonal rounds and fry in an ungreased nonstick skillet until golden on both sides; remove to a plate. Add cole slaw and carrots and stir fry in rendered fat for a minute just to barely wilt; remove from heat, stir in enough yogurt to make creamy and season to taste with salt and pepper.
  • Transfer warm "cole slaw" to a platter and center slices of kielbasa in middle; garish with parsley and/or green bell pepper.

4 ounces red cabbage, shredded
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg

Steps:

  • In a large bowl, mix all ingredients, tossing to combine. Chill for 2 hours before serving.
