SOURDOUGH TURKEY MELTS

- Spread mayonnaise over two slices of bread. Layer with green chiles, turkey and cheese. Top with remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 1-2 minutes on each side.

FRENCH-TOASTED HAM, TURKEY AND CHEESE SANDWICH
These are delicious! the following ingredients are for 6 sandwiches. Make certain to use a firm bread like Italian, pumpernickle or rye, the regular soft sliced sandwich bread will not hold up well to this.

- Spread the inside of each slice of bread with prepared mustard.
- In a shallow dish combine the milk eggs, salt and pepper; whisk to combine thoroughly.
- Make 6 sandwiches layering 1 slice ham, 1 slice turkey and 1 slice cheese (can use more more).
- Lightly brush the outside of the sandwiches with melted butter.
- Melt butter in a skillet over low heat.
- Dip the sandwich/s in the milk/egg mixture, turning to coat each side.
- Brown in the skillet.

This is one delicious sandwich that I concocted when managing the restaurant. It was one of our biggest sellers. I don't make it often enough to suit my family. It's quite filling and could be shared. Enjoy!

Steps:
- 1. First, let me say that I used my cast iron griddle to make this sandwich and weight it down with a cast iron skillet and my cast iron dutch oven. The heavier the better. Just be careful that you keep sandwich in tact when going to flip it as the butter will stick from top bread to whatever you're weighing it down with. This can also be made on a grill or Panini press.
- 2. First, Get your skillet or griddle warming. I coat with oil as well. Butter the 2 slices of bread on one side each.
- 3. On one un buttered side. Start by laying 2 slices of American cheese side by side. Top with folded slices of turkey - evenly across the bread.
- 4. Next, spread out the tomato slices, salt & pepper.
- 5. Add the onion.
- 6. Next the provolone cheese, then folded ham slices.
- 7. Top with Swiss cheese ( I used shredded ) and other slice of bread, buttered side up. ( When I use bacon I place it on top of the Swiss cheese.)
- 8. Carefully place into hot griddle. Weight down with whatever you have heavy, being careful to balance the weight equally, so not to fall off. Continue cooking until golden on the bottom.
- 9. With a wide spatula, carefully flip the sandwich to the other side and weight it as well. Continue for roughly another 5 minutes. When is golden and cheese is melted, remove from pan to a cutting board. Slice in half and serve with your favorite spread.
- 10. It's so oooey gooey good!
